DOSA VARIETIES AND DOSA UPMA

I loveee dosas a lot.. Whenever i go to restaurants, i never fail to order dosa.. My mom makes varieties of dosa @home to make us eat more. I too follow the same technique for my husband to have more dosas...
       Last week, i conducted a mini dosa mela at home:)Yup,I made 4 +1 dosas and dosa upma .I made 2-3 dosas in each variety..
So here are the dosa varieties,

COCONUT DOSA
Ingredients:
  • Idli / Dosa batter – 1 cup
  • Grated Coconut – 1/2 cup
  • Oil – to sprinkle
How to make:
  • Heat dosa tawa by greasing with oil and pour a ladleful of batter.
  • Spread a little.Don’t make it too thin, at the same time not like uthappam.Thickness should be in between.
  • Now sprinkle the grated coconut and pour little oil/ghee around the dosa and cook for a min.
  • Flip the dosa and leave till coconut turns light golden brown.This gives the nice aroma & flavor for this dosa.
Yummy coconut dosa is ready to eat!!No side dish is  needed!!Coconut lovers can surely give this a try:)
COCONUT DOSA


ONION DOSA
Ingredients:
  • Dosa Batter – 1 cup
  • Big onions – 3 nos (Grated )
  • Green chillies - 1 no ( finely chopped , optional)
  • Sesame oil – to sprinkle.
How to make:
  • Repeat the first two steps given above and spread the grated onions around with a tsp of sesame oil.
  • Cover cook for a minute and then flip the dosa.
  • Cover again and leave till onions turn golden brown.Flame should be medium.
Serve hot with ur desired chutney.Usually ,my hubby doesn’t need any side dish for this dosa.
My MIL used to make this dosa in a kadai.Heat the kadai with little oil and pour half-ladle of batter.Top up with grated onions and cover the onions by pouring another half-ladle of batter.Cover cook by pricking in the center.Serve hot!!

ONION DOSA 


MIXED VEGETABLE DOSA
Ingredients:
  • Dosa batter – 1 cup
  • Carrot – 1 no (Finely chopped )
  • Beans – 4-5 nos (Finely chopped)
  • Big onion – 1 no (-do-)
  • Green chilly – 1 no (-Do-)
  • Ginger – 1/2 inch piece (-do-)
  • Oil – to saute & sprinkle
How to make:
  • Heat a kadai with a tbsp of oil and  add all the finely chopped veggies (chop it like how u chop for fried rice!!)
  • Saute the chopped onions ,green chillies,ginger and then veggies.Keep aside.
  • Then heat the dosa tawa and pour the ladleful of batter.
  • Make it thick like uthappam.
  • Sprinkle the sautéed veggies and pour little oil around it.
  • Cook for a minute and flip it over.
  • Cook the other side and serve hot.
My husband liked this dosa the most!!

VEGETABLE DOSA

I took this recipe from srivalli’s blog.It tasted excellent!! We loved it.It was bit spicy..Please find the recipe here.

PAPER ROAST

Grease the tawa with little oil .Take a ladleful of batter and pour it on the hot tawa.Spread it as much as possible and make it thin.Drizzle little oil around it.Keep in flame high and leave it for 1 min.Sides will rise.By this time, u can see the other side of dosa becoming golden brown and the dosa will be cooked completely on both sides(No need to cover it).Now flip the dosa.Keep it for a second and serve it!!

PAPER ROAST


Last but not the least , dosa upma
DOSA UPMA

Ingredients:
  • Dosa – 2-3 nos (dosa shouldn’t be thin,should be slightly thicker)
  • Big onion – 2 nos (slice cut )
  • Red chilly – 2 nos (split into two ) or chilli powder – 1/4 tsp ( i used red chilly )
  • Mustard seeds – 1/4 tsp
  • Urad dal – 1 tsp
  • Channa dal – 1 tsp
  • Curry leaves – a sprig
  • Coriander leaves – to garnish
  • Lemon juice – a few drops.
  • Oil - 1tbsp
Method:
  • Cut the dosa into bite sized pieces. set aside.
  • Heat the kadai with oil and add mustard,urad,channa dal,red chilly and curry leaves and onion slices in the same order.
  • Fry till onion turns transparent.
  • Now add the dosa pieces and toss it well. 
  • Add salt if required.
  • Sprinkle very little water and cover cook for a minute.Stir it in between.
  • Remove from the flame and garnish with coriander leaves.
  • Add 2-3 drops of lemon at the end just before serving.
Yummy dosa upma is ready.Make & give it ur kids.Sure,they’ll love it:) If u want ,add some boiled veggies like carrot,peas,potato etc and temper with ghee if it is for kids:)

  4. I am also a dosa paithiyam dear. U went to a dosa mela. sure this is the advantage of getting married. Me too had a lot of restaurant foods after marriage only:) Ur micro dosa mela seems a mega one for me. Love all those varieties , esp the veg. one and the paper roast. Upuma with dosa is new to me . must try.

    It is apity i don't make dosa that often, i always admire the people who make dosa alsmot everyday as for me drinding the mix for dosa is like a hard job, even with a mixer.

  24. all of us at home love dosai, no wonder there are so many varieties...:)
    all of them look delicious, the erra dosa sounded new (thought it was erra = prawns) after seeing the recipe, came to know that it was something else :)

    the cone / papaer roast (we call it thoppi dosa) wow, has come out perfect like at the restaurants!! bravo!!!

  33. Already posted to see all those yummy dosa. Tempted me that u went to Davangare dosa stall. I know there will be king sized paper dosa. So popular in bangalore. You try ur best to ask the ingredients for paper dosa. Remember that it's recipe not easily found in the net. I am drolling all over ur dosas.
