MATKA KULFI | ICE CREAM RECIPES

I still remember the days  i ran behind the Bombay kulfi walahs to buy mouth watering , 1 rupee , cone shaped kulfis.Drooling.I  really crave for those kulfis now Raised Eyebrow…Last month we had been to my native and there i tasted Matka kulfi ,  my hubby’s favourite..After tasting it, i got an idea to try my ownIdea.So I washed those matkas and took home Wink..I tried and Yes,I got the same tasteThumbs-upWhistling..My husband was very happy when i prepared this for himSmile..Generally, Kulfis are prepared using a combination of condensed, evaporated and whole Milk..But i prepared in a very simple way..Here is the recipe,

Ingredients
  • Milk – 500 ml
  • Sugar – 2 –3 tbsp (adjust )
  • Cardamom powder – 3  - 4 pods (powdered )
  • Saffron threads -  few
  • Almonds and pistachios – Few (finely chopped )
Method
  • Take the milk in a Microwave safe wide bowl  .The bowl should accommodate at least two litres of milk to avoid spill over.Please see to it..
  • Microwave high for 10 minutes..Remove the bowl and stir well.If u want u can remove and collect the skin( paal aadai), blend it at the end to a paste and add to the milk ..But I mixed the skin as it is along with the milk..
  • Microwave again till the milk is reduced to half in volume.. (My MW took nearly 25- 30 mins to complete the process....Adjust the timings according to urs..)
  • Then add sugar, saffron threads and cardamom powder, mix it and MW high for 5 mins..Let the sugar dissolve well and boil…
  • Finally add the chopped almonds and pistachios and mix well.
  • Pour into the moulds and freeze it for a minimum of 6 hours..
I got these cute kulfi moulds from my SIL and i poured some mixture into these moulds to serve my kid and of course for meOpen-mouthed.. Eat immdiately after u take out from the freezer because it gets melted very soon ...

VARIATIONS
  • The above process can be done using stove top method . Take the milk in a wide mouthed kadai and boil the milk till it is reduced to half in volume..
  • Give a constant stir and simmer the flame to avoid the spill over..
  • Then add sugar, cardamom powder and saffron threads..
  • Mix well and boil till sugar dissolves completely..
  • Finally garnish with chopped almonds and pistachios.

Many animals do provide us with this vital health liquid, but cow’s milk is considered the best wholesome supplement to solid food for infants, children as well as adults. Milk is an ideal source of nutrients such as vitamin A & B, calcium, carbohydrate, phosphorous, magnesium, protein, zinc and riboflavin. The Teagas Dairy Products Research Centre at Moore park, Fermoy has reported recent research on the utility of milk in neutralizing cholesterol content in the body.
The health benefits of milk can be achieved from its products including cheese, butter, curds, clarified butter or ghee, condensed milk, diary whitener, ice cream, paneer, tofu, skimmed milk, milk powder, flavored milk, khoya, rabri, milk sweets etc. The US Department of Agriculture (USDA) has clearly mentioned in its Dietary Guidelines to include milk and milk products in the diet.
Deficiency Symptoms: Milk deficiency can cause severe anemia, osteoporosis and other related illnesses. Milk consumption is very essential to maintain good health and doing normal activities. It is the best source of calcium for all age groups.
Benefits: Milk is extremely beneficial drink for mankind. Some of the advantages of drinking this life-giving nectar are as follows:
  • Calcium: Milk is the best source of calcium supply to our body. Calcium protects the body from major chronic ailments such as cancerous chemicals, bone loss, arthritic condition, migraine headaches, pre-menstrual syndrome, and obesity in children and aids in losing unwanted fats.
  • Healthy Bones: As mentioned above, milk is rich in calcium, which is very essential for growth and proper development of strong bone structure. Bone disorders such as osteoporosis can be prevented with daily intake of adequate quantity of milk. Children deprived of cow milk have an increased chance of bone fractures when injured.
  • Healthy Teeth: Encouraging children and youngsters to drink milk would give them excellent dental health, as milk protects the enamel surface against acidic substances. Drinking milk for energy and health would dissuade children from consuming soft drinks, thus reducing the risk of decayed teeth and weak gums.
  • Rehydration: Fluids are an integral part of human body. The body needs to be replenished with liquids at regular intervals. It is very essential for growing children and they must drink at least six to eight glasses of fluid every day. Milk contains a good quantity of water molecules and is considered the best fluid for rehydration.
  • Skin Care: Milk and milk products are used in a number of cosmetic preparations that help in giving you a ‘peach and milk’ complexion.
  • Slim Body: People who are known to consume diary products and milk do not gain excess weight. In fact milk tends to make you slimmer, as whole milk contains only 4 percent of fat and skimmed milk contains even lesser percent of fat. Milk is related with leanness as against sugary fluids that may lead to obesity.
  • Improving Diet and Vitamin Intake: According to medical research, drinking milk considerably improves our intakes of vital minerals and vitamins. A man who consumes a carton of whole milk doubles his chances of fulfilling calcium requirement per day, whereas, another person consuming a can of fizzy or carbonated drink may in reality lower his calcium levels by one third percent.
  • Wholesome Food: It contains a whole lot of vitamins and minerals to keep you fit, healthy and strong. A glassful of milk contains vitamin A & B for good eyesight and increasing RBC count, carbohydrates for vitality and energy, potassium for proper nerve function, magnesium for muscular function, phosphorous for energy release, protein for body repair and growth.

Khulfi is my favourite too....i too make it at home...i will grinad and make a finr paste of almonds and mix with milk.....try that to get more creamy and flakky kulfi......matka looks divine......love that stunning pic dear.....where there chillness is shown....love those cones too...Iam carving for some right now.....Iam happy u like that powder...
