Baby Corn Bajji Recipe - Baby Corn Fingers Recipe

This is our South Indian style bajji recipe with baby corn. Baby corn bajji in Tamil also known as baby corn fingers was in my try list for years. Long back I had posted baby corn golden fritters / baby corn 65 which is a super hit recipe in my blog. After that I din’t post any baby corn snack recipe for long time. 

As summer vacation is started here, Raksha told me to make some bajji or bonda for her evening snacks. So I wanted to post this baby corn bajji and made it. I used besan flour and rice flour in the ratio of 2:1 and made bajji batter in thick flowing consistency.  It came out very well with crispy exterior and soft interior. We loved it very much. Baby corn bajji recipe / Baby corn golden fingers for kids snacks

INGREDIENTS

1 cup = 250ml
  • Besan flour - 1/2 cup
  • Rice flour - 1/4 cup
  • Red chilli powder - 1/2 tsp to 1 tsp
  • Garam masala powder – 1/4 tsp (optional, I used it)
  • Hing / Asafetida - 1/4 tsp
  • Salt - as needed
  • Baking soda / cooking soda – 1/4 tsp
  • Red Food color – a pinch (Optional)
  • Water – As needed( I used around 3/4 cup)
  • Cooking oil - to deep fry

HOW TO MAKE BABY CORN BAJJI

  1. Peel the baby corn and discard the skin. Pressure cook the whole baby corn in high flame for one whistle OR boil in water till it becomes soft.
  2. In a wide bowl, mix all the ingredients except cooking oil to make bajji batter.
  3. Dip the cooked baby corn in the batter.
  4. Deep fry in oil on both the sides. Remove when it turns golden in color.
  5. Serve with coconut chutney or tomato ketchup.

METHOD - STEP BY STEP PICTURES

  • Peel the skin of baby corn and wash it. In a cooker base, add 2 cups of water. In a small bowl, keep the peeled baby corn and add very little water to it. Let it pressure cook in high flame for one whistle or cook till it becomes soft but firm. Remove the bowl from the cooker. Drain the excess water if any. Keep it aside. 
  • Some people use raw baby corn to make bajji. So pressure cooking is an optional step. But I love to have soft baby corn. So I cooked it.
  • In a wide bowl, mix besan flour, rice flour, red chilli powder, garam masala powder, hing, salt, baking soda and mix well.

  • Add water and make thick bajji batter in flowing consistency. Set aside for few minutes till oil gets heated.

  • Heat cooking oil in a kadai. Drop a pinch of bajji batter. If it sizzles and rises to the top immediately, heat of the oil is just right.
  • Take one cooked baby corn. Dip it inside the batter, coat it well and take it out by holding the tail part. Drop in the hot oil. Repeat the same and put 2 to 3 bajji in one batch.

  • Flip and Cook both the sides till it turns golden. Remove the bajji in a tissue paper.

  • Enjoy with coconut chutney or tomato ketchup !

Note

  • If you want to use less rice flour, use besan and rice flour in the ratio of 3:1 instead of 2:1.
  • You can add a pinch of food color to get a bright colored bajji like in teashops.
  • Adding baking soda helps to make puffy and soft bajji.

It was my long time plan to try a biryani recipe without onion and garlic especially for my Jain readers.During Navratri,we try to avoid onion & garlic in our menu.So I tried this no onion no garlic Veg Biryani recipe for our Sunday Lunch.I referred this space for the recipe.As I didn't have enough vegetables in hand,I replaced it with baby corn.It came out well and we loved it.Friends,if you are looking for a no onion no garlic Jain biryani recipe,here it is !! Its been years i posted a manchurian recipe in my blog.In 2010, i shared vegetable manchurian gravy recipe.After that i couldn’t post any even though i keep making it very often in weekends.When we visit hotel/restaurant,most of the time we order gobi manchurian or baby corn manchurian for starter.Its our family favourite recipe.I like baby corn manchurian dry version too.I will try that & share here soon.But my daughter Raksha loves this gravy version more than the dry ones.So here we see how to make this crispy,kids favourite starter baby corn manchurian recipe with step by step pictures belowHappy.

Baby corn manchurian recipe Baby corn manchurian recipe - Yummy starter recipe which kids would love it

INGREDIENTS
To pressure cook for one whistle
  • Baby corn - 10 nos
  • Salt & water - as needed
For batter
  • Maida - 4 tbsp
  • Corn flour - 2 tbsp
  • Rice flour - 2 tbsp
  • Red chilli powder - 1 tsp
  • Ginger& Garlic paste - 1 tsp
  • Cooking soda - a small pinch
  • Salt & water - as needed
  • Cooking oil - to deep fry
For sauce
  • Cooking oil - 1 tbsp
  • Big onion - 1 no
  • Capsicum - 1/2 no
  • Spring onions – few ( chopped finely)
  • Finely chopped ginger - 1 tsp
  • Finely chopped garlic cloves - 5 nos
  • Green chillies - 1 no ( finely chopped)
  • Red chilli powder - 1/2 tsp - 1 tsp ( adjust as per ur spice level)
  • Pepper powder –1/4 tsp
  • Tomato sauce - 1 tbsp
  • Soya sauce - 1/2 tsp
  • Corn flour - 1 tsp (dissolve in 1/2 cup of water)
METHOD

  • Wash and chop the baby corn lengthwise of 2 inch size.The thin u chop,crispy it would be.Pressure cook it adding enough water & salt in high flame just for 1-2 whistle.Remove & drain the excess water.Squeeze it & set aside.

  • In a wide bowl,mix all the ingredients given under “to batter”. Add water little by little and make a paste like batter.Add the cooked baby corn pieces.Mix well and marinate for minimum 15 minutes-30 minutes.Overnight marination in refrigerator is also fine.Make sure the batter is not thick like bajji batter.It should be slightly thin.( If u make it too thin,baby corn wont coat well.If u make it too thick,the outer cover will separate while u put in sauce.so add water carefully.)
  • Deep fry now if u serve immediately.Else let it marinate & proceed to make sauce.
  • Heat oil in a kadai to deep fry.Deep fry the marinated baby corn pieces turning now & then.Baby corn should be well coated with the batter.Drop them one at a time and deep fry in batches.( If u keep less oil for deep frying,baby corn would stick to the bottom of kadai.So keep enough oil.)

  • Cook till turns crispy and golden brown.Remove in a tissue.If the pieces are sticked together,remove them and set aside.

  • For making sauce,heat oil in a kadai.Saute finely chopped onions,Stem part of spring onions,capsicum,ginger,garlic & chilli pieces.Then add the red chilli powder,salt,pepper powder & saute for few seconds.Then add the tomato sauce and soya sauce.mix well.Dilute corn flour in 1/2 cup of water and add it to the mixture.Let it boil till the mixture thickens.
  • Add deep fried baby corn to the cooked sauce.Mix well and switch on the flame.Mix well and then switch off the flame.

  • Garnish with chopped spring onion pieces and serve hot with tomato sauce.

Note


  • If u want the baby corn to be crispy while serving,make the sauce first.Lastly deep fry the baby corn pieces & add it.Serve immediately.U can also follow this way to get crispy manchurian.ie deep fry the fried baby corn pieces again before adding to the sauce.It will be super crispy while eating. In restaurants they follow this method.
  • You can skip adding corn flour water if u want a dry mixture.
  • Adjust the quantity of red chilli powder as per your taste.If making for kids,make it less spicy.

BABY CORN FRY(BABY CORN GOLDEN FRY RECIPE)-BABY CORN 65 RECIPE

I tasted this baby corn fry/baby corn 65 in a banquet. From then, I wanted to try it at home. Its a great starter recipe for lunch as well as dinner. Yesterday Raksha’s friends came home for lunch. So I prepared this fry along with veg fried rice, fruit custard and choco chip cookies.

 All the kids relished this fry with tomato sauce and there was not even a single piece left for us. It was very crispy, mildly spiced and the smell of masala was awesome. Everyone loved it. Do try this for your kids. U can make it as an evening snack too ! But one thing , you should eat it hot to enjoy its crispness and flavour!.

Crispy baby corn golden fry recipe


Cripsy baby corn golden fry recipe Crispy baby corn golden fries / baby corn 65 - Easy starter recipe
Cuisine: Indian

Cook time: 10 Minutes
Total time: 70 Minutes


INGREDIENTS
To pressure cook
  • Baby corn - 6 nos
  • Salt & water - as needed
For the batter
  • All purpose flour - 2 tbsp
  • Corn flour - 2 tbsp
  • Rice flour - 1 tbsp
  • Red chilli powder - 1/2-1 tsp
  • Garam masala powder - 1/2 tsp
  • Fennel seeds powder – 1/4 tsp(optional)
  • Ginger-Garlic paste - 1 tsp
  • Kasuri methi - a pinch
  • Fresh Curd – 1 tbsp
  • Salt - as needed
To coat
  • Bread crumbs - 1/2 cup
HOW TO MAKE BABY CORN 65 - METHOD

  • Peel the baby corn and pressure cook it adding required water and salt.cook in high flame for 3-4 whistles. Remove chop into roundels and set aside.

  • In a bowl, take the chopped baby corn and add all the powders given above. Lastly add a tbsp of curd. Mix well. Add little water to coat the baby corn with masala like bajji batter. Make sure the coating is not too thin or thick. Let it marinate for an hour.

  • After one hour, take the baby corn pieces, dip in bread crumbs well and deep fry in hot oil. While deep frying, do in medium flame and make sure you do not flip the baby corn as soon as you put in oil. Let it be in oil for a minute. Then flip the other side and cook for one more minute. After it turns golden brown, remove and drain in a tissue.

Serve hot with tomato sauce !



Note

Instead of deep frying, you can shallow fry the pieces in dosa pan drizzling with oil. It will become a yummy low calorie snack.
U can use lemon juice instead of curd.
Bread crumbs are optional but it gives a crispy outer layer.

Baby Corn Stir Fry - Two Versions | Baby Corn Recipes

This is a simple stir fry which goes well for rice n roti. I got this idea from my neighbour. I have given two versions .. One is my version in which I followed the method of potato curry and the second one is my neighbours' version which is purely a south Indian style . 

Based on your liking, try any. Both tastes good. I pressure cooked the baby corn to ensure proper cooking but that step is purely optional. We can just saute the baby corns, cover and cook by sprinkling little water as my neighbour suggested.

INGREDIENTS
  • Baby corn – 8-10 nos
  • Big onion – 1 no (finely chopped)
  • Ginger – 1 inch (-do-)
  • Garlic cloves – 6 nos ( –do-)
  • Red chilly powder / Sambhar powder –3/4 - 1 tsp
  • Garam masala powder - 1/2 tsp
  • Salt & water – as needed
  • Lemon juice – 1/2 tsp ( adjust)
  • Curry leaves – few
  • Coriander leaves – few
To Temper:
  • Olive oil / cooking oil – 1 tbsp
  • Mustard seeds – 1/2 tsp
  • Jeera – 1/2 tsp

METHOD
  • Pressure cook baby corn for 1 whistle. Set aside.
  • In a kadai , heat oil and add the mustard seeds & jeera, once they start to splutter , add onions,ginger & garlic pieces,curry leaves.
  • Saute well. Add little turmeric powder, salt and mix well.
  • Now add the sambhar/ red chilly powder. Mix well.
  • Finally add the cut baby corn slices. Saute well for few minutes.
  • Add coriander leaves, lemon juice and remove it. 
Serve hot with rice and roti!!

NOTE
  • Ginger&garlic paste can be used instead of ginger , garlic pieces.
  • Baby corn need not be pressure cooked. Instead it can be sauteed in oil & cooked by covering it in the kadai sprinkling little water in between..
  • Tomatoes can be used instead of lemon juice..

BABY CORN STIR FRY – VERSION 2

INGREDIENTS
  • Baby corn – 8-10 nos
  • Big onion – 1 no (finely chopped ) (optional)
  • Salt – as needed
  • Turmeric powder – 1/4 tsp
To grind:
  • Grated coconut – 1/4 cup
  • Green or Red chillies – 3 nos
  • Jeera – 1/2 tsp
To temper:
  • Oil – 1 tbsp
  • Mustard seeds – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Curry leaves - few

METHOD
  • Grind the items given under “to grind” without adding water.
  • Cut the baby corn into lengthy 1 inch strips.
  • In a kadai , heat oil and splutter mustard seeds, jeera & curry leaves. Saute onions if you use them..
  • Add the baby corn and saute well.
  • Now add the ground coconut , turmeric powder & salt.
  • Saute till the raw smell emanates.
  • sprinkle little water , mix well.
  • Cover & cook till the baby corn is done.
  • Add water whenever necessary. Always keep the flame in medium & stir well every now & then to avoid burning.
  • After the baby corn is cooked well, add fresh coriander leaves & remove.
Serve hot  with rice!
