Boiled Peanut Chaat Recipe / Peanut Masala Chaat Recipe

Recently I tasted boiled peanut chaat as a starter in a lunch buffet. We loved it very much. So I tried at home when my neighbor gave me a bag full of raw groundnuts from her own farm. As the groundnuts were fresh, I pressure cooked it and made this chaat. You can also use roasted peanuts instead. It gives an additional crunchy taste. Raksha loved it very much. I am sure your kids will love it too. You can make it for their snacks box, after school evening snacks or for birthday party too.  Its a quick and simple recipe. All you have to do is just chop the vegetables, mix boiled or roasted peanuts and serve ! Lets see how to make this easy, yummy peanut chaat recipe with step by step pictures and video.

Boiled peanut chaat recipe with cooked peanuts, onion, carrot, tomato and spice powders

INGREDIENTS
1 cup = 250ml
  • Boiled peanuts or roasted peanuts - 1 cup
  • Big onion - 1 (small sized, finely chopped)
  • Bangalore tomato - 1 (small sized, finely chopped)
  • Carrot - 1 (grated)
  • Coriander leaves - 2 tbsp (finely chopped)
  • Lemon juice - few drops
  • Chaat masala - 1/4 tsp to 1/2 tsp
  • Red chilli powder - 1/4 tsp to 1/2 tsp
  • Cumin powder - 1/4 tsp
  • Salt - as needed
  • Sugar - 1/4 tsp
  • Sev / Bhujia / Omapodi – to sprinkle / garnish
HOW TO MAKE BOILED PEANUT CHAAT
  1. Wash and cut the vegetables finely.
  2. Wash and soak raw peanuts in water for 30 minutes.
  3. Pressure cook peanuts in enough water and salt in very low flame for one whistle.
  4. Remove and drain the excess water.
  5. Take the boiled peanuts in a bowl. Add onion, tomato, carrot and coriander leaves.
  6. Mix chaat masala, spice powders, salt and sugar. Sprinkle lemon juice and mix well.
  7. Lastly garnish with sev / omapodi and serve immediately for best taste !
BOILED PEANUT CHAAT - STEP BY STEP PICTURES
  • Wash and chop onion, tomato, coriander leaves finely. Wash and peel the carrot skin. Grate it and set aside.

  • Wash and soak the raw peanuts in water for one hour. Pressure cook it adding sufficient water and required salt. Cook in low flame for one whistle.  

  • Remove after the steam is released. Drain the excess water. Set aside.

  • In a wide bowl, take the boiled peanuts, finely chopped onion, tomato, coriander leaves and grated carrot. Add salt, chilli powder, chaat masala, cumin powder, salt and sugar. You can also add a pinch of black salt if you like. 

  • Lastly add lemon juice and mix well. Garnish with sev / omapodi and serve immediately for best taste.
  • Enjoy !

Note

  • Adjust the quantity of chilli powder and chaat masala as per your taste.
  • You can use roasted peanuts with skin instead of boiled peanuts.
  • Lemon juice is optional but it adds a nice taste.
  • For variations, you can add pomegranate, grated coconut and boiled sweet corn kernels.

Sprouted Green Gram Salad – Sprouts Salad Recipe

Whenever I think of weight loss, we eat this sprouts salad for lunch instead of our regular meals with rice. Sprouts are one of the best choice for weight loss. Basically sprouts are very nutritious. They offer a variety of health benefits like easier digestion, improved blood sugar levels, lowers bad cholesterol and a lower risk of heart disease as its a good source of anti oxidants. It is also rich in Potassium, Magnesium and Fiber which reduces blood pressure. Sendhil used to take this salad in his lunch box for office almost everyday when he was under weight loss treatment. Apart from this salad he also did workout, consistent walking for at least 45 minutes per day. It helped him to lose nearly 10 kgs in 2 to 3 months.

Children, elderly people, pregnant women and people with weak immune system should avoid eating raw or lightly cooked bean sprouts. Actually this moong bean sprouts salad recipe was suggested by my gynecologist for weight loss after delivery. So I followed the same for Sendhil as well. My doctor also suggested a raw green gram salad for milk secretion during lactation. Its a sweet salad recipe. I will post it soon.  In Karnataka, people make this green gram salad adding pomegranate, coconut and do the seasoning which is very tasty. It is called as Kosambari in Kannada. For variations, I make it once in a week.  I will try to post that recipe as well. Now lets see this basic sprouts salad with easily available vegetables and ingredients.

INGREDIENTS
1 cup = 240ml
  • Sprouted green gram/ moong bean sprouts - 1/2 cup
  • Carrot - 2 no
  • Big onion - 1
  • Coriander leaves - Few
  • Lemon juice - Few drops
  • Pepper powder - as needed
  • Salt - as required.
HOW TO MAKE SPROUTS SALAD
  1. Wash the green gram sprouts in drinking water and keep in a bowl.
  2. Peel and grate carrot. Finely chop onion, coriander leaves.
  3. Add to the sprouts and mix well. Add required salt, lemon juice and pepper powder.
  4. Mix well and serve. You can also pack this for lunch box.
  5. Make this easy sprouts salad for weight loss. It really helps !
SPROUTS SALAD RECIPE - STEP BY STEP PICTURES
  • Wash and peel the carrot. Grate it. Chop the big onion and coriander leaves finely. Set aside. (I used turbo chopper for chopping onion, carrot and coriander leaves finely.)

  • In a bowl, take green gram sprouts. Add grated carrot and finely chopped onion, coriander leaves.

  • Add the required salt, pepper powder and few drops of lemon juice. Mix well and serve.
    Enjoy !

Note

  • Adjust the quantity of pepper powder and lemon juice as per your taste.
  • For variations, you can add freshly grated coconut and finely chopped cucumber too.
  • I used my turbo chopper for chopping carrot, onion and coriander leaves finely.
  • You can also use boiled moong instead of raw ones.

EASY WATERMELON SALAD RECIPE-INDIAN STYLE



Watermelon salad is the most popular street food in India during summer. U can find people selling this salad in carts outside the schools & parks all over India. Its a very simple recipe yet I wanted to blog it. In Tamil nadu, this salad is usually served in a disposable bowl with a tooth pick. In Bangalore, I have seen some vendors serving in a small banana leaf in a more authentic way. Its a very simple but very tasty recipe with two toppings. One with salt and pepper and the other one with Chaat masala.

Recently I tasted this salad in a marriage banquet. Its taste and the simplicity of this recipe tempted me to blog it. U can make this salad for parties and get together too. Its too easy to make and the best body coolant for summer. As I mentioned in my watermelon juice post, it is always good to consume a fruit as it is without losing its fiber. So lets have this easy, Indian style watermelon salad recipe to beat this summer heat!. U can also add few pieces of cucumber to make it colorful & healthy. Sure, U will feel energetic and refreshing in this hot season.

PURPLE CABBAGE/RED CABBAGE SALAD RECIPE


This post was lying in my drafts for long time.As i mentioned in my Purple Cabbage Poriyal recipe, i tried poriyal and salad with this cabbage for the first time.I must thank my friend Shalini for telling this simple and easy Indian style salad recipe.It was very nice and we just loved its crunchy taste.The same recipe can be followed for Red Cabbage too.U have to consume this salad immediately to enjoy its Fresh,crunchy taste.As u all know,Purple Cabbage is loaded with Anti oxidants which helps the body to fight against diseases and also makes our skin clear & flexible .I have used Olive oil and pepper powder for salad dressing.U can also try adding Roasted & chopped Almonds or ground nuts to make it more crunchy with nutty flavour.By this way,kids may like it.

  • Pepper powder - as needed
  • Olive oil – 2tsp
  • Lemon juice – few drops
  • Salt - as reqd
METHOD

  • Wash and chop all the vegetables into thin long strips.
  • In a bowl,take olive oil,salt,Pepper powder and lemon juice.Mix well.
  • Now add all the chopped vegetables.Mix well and serve immediately.
  • Add sweet corn and coriander leaves to make it more colorful and flavourful..


Note


  • I used white pepper powder here.U can use black pepper powder too.
  • Use deseeded tomato.I used Bangalore tomato in this recipe.

Easy Salad Recipe For Kids - Salad For Birthday Party

Yesterday we went to Raksha’s friend birthday party. I’ll post that party menu recipes this weekend. I tasted this salad there. It was a very simple recipe but very tasty. Raksha doesn’t like to eat pomegranate but she loves sweet corn very much. As that salad had more sweet corn, she had it without complaining anything. It was so colourfully done to attract the kids. All the kids liked it very much. Not only kids, we too liked it a lot. It tasted very similar to Karnataka kosambari.

Today I prepared the same at home and I have planned to give her a bowl of salad after she comes from the school. We had it along with our lunch. Friends, do try this colourful salad and give it to your kids. This can be prepared well in advance.U can even pack for their lunch box along with some variety rice. It would be healthy and filling too :)

INGREDIENTS
1 cup - 250ml
For mixing
  • Pomegranate - 1/4 cup
  • Sweet corn kernels - 1/3-1/2 cup
  • Grated coconut – 1-2 tbsp
  • Cucumber - 1 tbsp (Optional)
  • Coriander leaves – 2tsp
  • Pepper powder – 1/2 tsp (optional)
  • Salt - as needed
  • Lemon juice - few drops (optional)
HOW TO MAKE SALAD - METHOD

  • Pressure cook the sweet corn and remove the kernels (Click here to see the easy removal of kernels). Finely chop the cucumber, coriander leaves. Grate the coconut using a peeler so that it looks like long strands as you see in the picture.  
  • In a wide bowl, add all the ingredients. Mix well, add salt and lemon juice if desired.

Note
  • If you are planning to try this for parties, cook the corn and remove the kernels, take out the pomegranate seeds and chop the cucumber on the previous day itself. 
  • Refrigerate everything separately in an air tight box. On the day of party, just two hours before, take everything out of the fridge and mix well, add salt and freshly grated coconut. Nowadays we can store the grated coconut in a ziplock bag and freeze it. Bring it to room temperature and mix it with the salad. Add lime juice if desired and set aside. By the time you serve, it would be good to taste.
  • For variations, you can also add grated carrots. Adding grated coconut gives a nice taste. Skip if your kid don’t like it.
  • Do not add pepper powder if you make for kids.
  • Adding lemon juice is completely optional. I din’t use it. 
  • U can also add a tsp of olive oil to make it more healthy.

MIXED FRUITS AND VEGETABLE SALAD WITH SPROUTS

I wanted to make a simple , healthy salad with sprouts, mixed vegetables and fruits for a long time. I googled so many basic salad recipes and came out with my version.Here i used grated beetroot .So the color of beetroot dominates here. Otherwise it would be a colorful salad to attract ur kids. Make ur choice of adding or omitting the veggies and fruits given in this recipe.
SPROUTS SALAD

INGREDIENTS
For 1 person
    • Sprouted green gram - 1 handful
    • Carrot - 1 no(grated)
    • Beetroot - 1/2 no ( grated) (optional)
    • Big onion - 1/2 no (chop finely)
    • Cabbage - Few leaves ( chop finely)
    • Pomegranate - 1 handful
    • Guava - 1/2 no ( Chop into squares)
    • Coriander leaves - A few
    • Lime juice  - Few drops
    • Pepper powder - 1/2 tsp
    • Salt - As needed
METHOD
  • Take a wide bowl and mix all the ingredients given above. Squeeze a few drops of lime juice. Mix well and serve !!

Variations
  1. Add two pinches of chat masala to the above recipe to give a nice flavor. But adjust the salt as chat masala contains salt.
  2. U can also add chopped tomato pieces and cucumber pieces when u want to serve instantly otherwise the salad may become watery. 
  3. I usually pack the above salad for my hubby's lunch box without tomato and cucumber.

HOME MADE LAYS CHIPS AND A CRUNCHY VEG SALAD

LAYS – Potato chips is loved by all , irrespective of ages.This has become one of the most important snacks during travel time.We used to make potato chips in weekends at home.Once I tried to bring the taste of lays by adding masala powders.It came out well with the  similar tasteThumbs-up.Some of us may be afraid of giving these packed chips to our kids because of Oil , MSG and the other spices used in it(Of course,I am afraid to give it to my kid:).Eating once in a while is not going to affect their health.But I've seen my uncle’s children finishing minimum of one packet daily:).So its better if it is home made , isn’t it?..

How you cook your potato chips depends on a number of different things: what equipment you have, how much time you want to take, and what kind of potato chips you like.
In general, deep-fried potato chips turn out crispier and more oily, while baked potato chips are often drier and crunchier. Microwave potato chips, while still good, are often made by people who want their potato chips quickly. So i’ve posted all the three methods.

Home made lays chips

Ingredients
  • Potato – 2  nos (medium)
  • Chat masala – 1/2 tsp (increase according to ur taste)
  • Red chilly powder – 1/4 tsp (-do-)
  • Amchoor powder /Dry mango powder– a pinch (optional)
  • Salt – as needed
  • Oil – To deep fry.
Preparation:
  • Wash your potatoes thoroughly with cold water and dry them with a paper towel.
  • Peel the potatoes using a potato peeler .
  • Cut the potatoes into thin slices using either a sharp kitchen knife or a vegetable slicer(i used one of the designed moulds in the slicer).
  • In a plate or bowl, mix the chat masala ,salt and red chilly powder together and set aside.
1.DEEP FRY METHOD:
  • Pour 2 cups of oil into a frying pan and heat it. 
  • Add a batch of potato slices at a time to frying pan and cook for 2 - 3 minutes or until the chips are firm and browned by flipping it in the middle(or until the bubbles get ceased).
  • Remove the chips from the frying pan and let them dry out on a paper towel. 
  • Now add the mixed powder to it when its hot.Shake the bowl well for even mixing(take care the chips should not break)
  • Repeat this process for all of the potato slices that you've cut. 
2.BAKED:
  • Coat the potato slices with oil by hand or with a sauce brush.
  • Sprinkle them with powder which we have kept ready. 
  • Pre-heat your oven to around 400 degrees F.
  • Place the potato chips on a baking tray (evenly spaced out). 
  • Bake the potato chips for 10 - 15 minutes or until they are golden brown and crispy.
  • Flip them over halfway through the baking. 
  • Take them out of the oven, let them cool off, and serve.
  • Sprinkle more powder if required.
3.MICROWAVE METHOD:

  • Coat the potato slices with oil by hand or with a sauce brush.
  • Sprinkle them with powder which we have kept ready. 
  • Spread out your potato slices in a layer on a large microwaveable plate.  potato chips mw
  • Cook on high for about 3 -5 minutes (or until your chips are properly browned)(time varies based on ur MW). 
  • Set them aside to cool and repeat the process for the rest of your potato slices. 
  • Sprinkle additional  masala powder if required.

    I’ve tried 1st & 3 rd method.2nd one yet to try,i took this method from a site.I would say ,MW method is the best among the two methods which I've tried ( donno about bake method) because it consumes very less oil and turns out more crispy and can be quickly prepared.The crispness remains the next day too.But if the quantity is more,u should do it in batches.

  • Note: Please increase the quantity of masala powders according to your taste buds and the number of potatoes u use!! I didn’t use Amchoor powder because chips become tangier!!

  • When i prepare this for my toddler, i add just a pinch of chat masala and salt , no chilly powder at all!!.

    CRUCHY VEG SALAD

    I learnt this recipe from my friend Shalini , who is very close to my heart and always there to share my joys & sorrows.We are friends from  our college days and is continuing now.Yes , she is also settled in Bangalore:).God has blessed me with such a nice friend :)
    I used to ask her for different snacks & side dishes .This snack brought me a good name from my husband and FIL.. She gave me the confidence to cook:)
    Now coming to the recipe,u all may be thinking how a salad could be crunchy  ?.yes,its a salad made with KURKURE.I think most of u do this in weekends;) Crunchy kurkure pieces in between the grated vegetables tastes excellent..:)
    Very simple ingredients and can be made in a jiffy.Tastes great and healthy too:)

    Kurkure salad

    Ingredients:
    • Kurkure – 1 small packet  ( Any flavor is ok) ( i used green rajasthani )
    • Grated carrot – 1 cup
    • Grated  big onion –3/4 cup
    • Grated beetroot – 1/2 cup (increase if u  like adding it more)
    • Lemon juice – few drops.
    • Coriander leaves – to garnish.
    • Salt ( Optional )
    Method:
    • Grate all the vegetables and keep aside.
    • Break the kurkure into small pieces in a bowl.

    • Just before serving,mix all the grated veggies with broken kurkure pieces and add 2 –3 drops of lemon( Don’t add more,it will become bitter) in  a big vessel and mix it well.
    • Garnish with coriander leaves.
    • Transfer the contents to the serving bowl with a spoon!!.
    Tastes great with coffee/Tea!!
