Easy Veg Sandwich Recipe is a quick 10-minute Indian style bread sandwich layered with crunchy cucumber, carrots, tomatoes, tomato ketchup and homemade green chutney. My neighbor shared this easy veg sandwich recipe with me. The method of preparation and taste reminds me of the most popular Bombay sandwich, but the recipe of green chutney and sandwich masala is different. I have just used chaat masala here.

It’s a very quick sandwich recipe which I make most often for Sendhil’s morning breakfast on weekdays. But I use whole wheat bread and do not apply tomato ketchup as he doesn’t like it. The one you watch in the video is made for me. For Raksha, I make the same sandwich by skipping tomato and adding grated cheese. You can even grill or toast it with butter if making for kids. This sandwich can be customized according to our preferences.

It’s the green chutney that makes everyone eat this sandwich without any complaints! The green chutney recipe can be prepared as per your liking by adding more green chillies, skipping ginger, etc. Let’s see how to make this easy and simple veg sandwich recipe with step by step pictures and video!

Quick Notes for US & Abroad Kitchens

  • Bread Varieties: Soft white sandwich bread, whole wheat bread, multigrain, or brioche slices work wonderfully. In the US, look for thick sandwich bread (such as Nature’s Own or Pepperidge Farm) so the slices hold the fresh chutneys without becoming soggy.
  • Preventing Sogginess: Always apply a thin, protective barrier of softened room-temperature butter, mayonnaise, or cream cheese to the bread slices before spreading green chutney or ketchup. This keeps the bread crisp and fresh for hours.
  • Chutney Consistency: Blend the green chutney with as little water as possible to keep it thick and spreadable. Fresh lemon juice not only adds bright acidity but also keeps the mint-coriander chutney vibrant green.
  • Toasting or Grilling: While traditionally served cold and fresh, you can easily toast this sandwich in a skillet with salted butter or press it in a panini press / sandwich toaster until golden and crispy with melted cheese.

Ingredients
  

For Sandwich

  • 6 slices Bread slices (white bread or whole wheat bread) crusts trimmed
  • 1 no Carrot (approx. 50g / 1.8 oz) grated
  • 1 to 2 tbsp Butter or olive oil (approx. 15 to 30g / 0.5 to 1 oz) softened
  • 2 tbsp Tomato ketchup / sauce (approx. 30 ml / 1 fl oz) adjust to taste
  • 3 tbsp Homemade green chutney as needed
  • 2 to 3 nos Tomatoes (approx. 100g / 3.5 oz) thinly sliced
  • 1 no Cucumber (approx. 80g / 2.8 oz) thinly sliced
  • 1 tsp Chaat masala powder (approx. 3g) or red chilli powder

For Green Chutney

  • 0.5 cup Fresh coriander leaves / cilantro (approx. 25g / 0.9 oz) tightly packed
  • 2 tbsp Fresh mint leaves (pudina)
  • 2 nos Green chillies adjust to taste
  • 0.5 inch Ginger peeled
  • 2 cloves Garlic peeled
  • 0.5 tsp Chaat masala
  • few drops Lemon juice
  • 1 pinch Sugar optional, to balance taste
  • Salt and water as needed

Instructions
 

  • Add all the ingredients listed under ‘For Green Chutney’ (fresh coriander leaves, mint leaves, green chillies, ginger, garlic, chaat masala, lemon juice, sugar, and salt) into a small blender jar. Grind to a smooth paste adding very little water. Transfer to a bowl and set aside.

  • Take 3 bread slices (milk bread, brown bread, or whole wheat bread). Trim the edges/crusts with a sharp knife if preferred. Spread green chutney on the first slice, tomato ketchup on the second slice, and softened butter or olive oil on the third slice.

  • Spread the grated carrot over the chutney slice, sliced cucumber on the ketchup slice, and sliced tomatoes and onions on the buttered slice. Sprinkle chaat masala powder or red chilli powder over each layer. Stack the slices one over the other to form a layered club sandwich. Cut diagonally into triangles and serve immediately!

  • You can toast or grill the sandwich with butter on a tawa if making for toddlers or kids who prefer warm, crispy sandwiches.
  • Adjust the spiciness of the green chutney by adding more or fewer green chillies to suit your family’s taste.
  • For a cheesy variation, add a layer of grated mozzarella or a processed cheese slice over the vegetables.
  • If packing for school or office lunch boxes, place the cucumber and tomato slices between buttered bread to prevent sogginess.
