Ugadi pachadi is the first dish Telugu people taste on Ugadi festival day after the pooja in Andhra. This year, Ugadi festival falls on March 19, 2026. Its an easy, no cook, fireless dish made with 6 simple ingredients but it tastes the best.
While my culinary roots are deeply grounded in traditional Nellai and Tanjore cuisines, living here in Bangalore has beautifully expanded my festive cooking repertoire. I have been documenting traditional South Indian recipes on this blog since 2009 and over the years, I’ve learned that mastering festival prasadam requires a delicate balance of authentic regional flavors.
I originally learned the nuances of this authentic Andhra-style recipe from my close Telugu friend, Megha. After years of testing and perfecting it in my own kitchen, I am sharing the exact measurements to help you achieve that perfect harmony of the six tastes.
What are the 6 Ingredients in Ugadi Pachadi?

Authentic Ugadi Pachadi is a symbolic dish made with a mix of six specific ingredients (Arushadruchi), each representing a different emotion and phase of life:
- Jaggery (Sweetness): Symbolizes happiness and joy.
- Neem Flowers (Bitterness): Signifies sadness or challenges.
- Tamarind Extract (Sourness): Represents unpleasantness or disgust.
- Raw Mango (Tanginess): Denotes surprises and new beginnings.
- Pepper Powder / Green Chilli (Spiciness): Reflects anger.
- Salt (Saltiness): Represents fear or the unknown.
Overall, This dish signifies the acceptance of both good and bad in life and is an essential part of the festive celebration.

Ugadi Pachadi Recipe | Andhra Ugadi Recipes
Ingredients
- 1 to 2 cups Water
- 1 tsp Tamarind extract Gooseberry size
- ¼ cup Raw mango finely chopped, Use baby mango for best taste.
- 3 tbsp Grated jaggery
- ½ tsp Pepper powder 10 to 15 pepper corns
- 1 tbsp Crushed Neem flower I used dried one, fresh is the best
- ¼ tsp Salt
Some people also add ripe banana pieces, coconut bits, few pieces of sugar cane and roasted gram dal / fried chana dal which is optional.
Instructions
- Wash and chop the raw mango pieces finely. Soak tamarind in water and take the extract using 1 cup of water.
- If the jaggery has impurities, you can dissolve the jaggery in little water, strain it and then add to the tamarind water.
- In a bowl, take the raw mango pieces, tamarind extract, pepper powder or red chilli powder, grated jaggery, salt, neem flower and mix well.
- Add little water to adjust the consistency based on your liking.
- Some like it to have it thick and some likes to be thin. Please add water accordingly.
- Offer to God on Ugadi festival day and enjoy !

There is a sheet available for making poll? Wow..India engayo poyiruchu pongka! :)
This coconut opputtu is the one we make in our households. We never make channa dal poll! We used to fry the coconut till it becomes dry and light brown in color, then grind it with jaggery-elaichi, and that is the stuffing! Now there are lot more easy methods have come. :)
