Pulippu murukku / Sour murukku – This recipe may sound new to many of you. It’s a traditional murukku recipe made among Telugu people. Its called as Pulani / Pullani Murukku ( Meaning Sour) in Telugu. I learnt this recipe from my friend Shalini. Her mom & periamma are experts in making varieties of murukku recipes. 

Onion murukku & Lemon murukku are some of their unique preparations.When we were in college, I used to go to Shalini’s house for group studies. Her mom used to serve this murukku as evening snacks for us. I love this murukku a lot. Its mild tangy taste and spiciness makes anyone fall for it. 

This murukku can be made in two ways. One method is by grinding rice soaked in curd / Thayir & other one by adding lemon juice. My friend taught me an easy method using store bought rice flour, Green chillies & lemon juice. It came out crunchy with tangy and spicy taste. We all loved it. INGREDIENTS
1 cup - 200 ml
  • Store bought rice flour - 1 cup
  • Roasted Urad dal flour - 3 tbsp
  • Lemon juice - 2 tbsp ( adjust)
  • Green chillies - 2 nos ( Add 4 for spicy taste)
  • Salt - as needed
  • Mustard seeds / Kadugu - 1/2 tsp
  • Hing/Asafetida - a pinch
  • Softened butter - 1 tsp
METHOD
  • Grind green chillies adding salt, hing and lemon juice. Grind it to a paste by wiping the sides of the mixie jar. No problem if its slightly coarse. Set aside.

  • In a wide bowl, take the rice flour, urad dal flour, green chilli paste, raw mustard seeds and butter. Mix well. Now add water little by little and make a thick smooth dough. Check for taste and add more lemon juice if needed.Stop adding lemon juice if the dough tastes sour. Do not add more lemon juice because it may give a bitter taste.

  • Take the murukku press with single holed mould. Fill the dough and keep it ready.
  • Heat oil in a kadai and when it gets heated , drop a pinch of dough. If it rises to the top immediately, oil temperature is right. Now squeeze the murukku in hot oil and cook both the sides in medium flame. Remove in a tissue. Store in a box after it cools down. The actual flavor of murukku will be known the next day.

Note
  • Adjust the quantity of lemon juice based on the taste. Do not add more.Murukku may taste bitter.
  • You can replace butter with hot oil or ghee.
  • You can use star mould too.
  • Generally sesame seeds or jeera is used in murukku recipes. But here mustard seeds are used. So u can replace it with sesame seeds or cumin seeds if u wish.
