Aloo Dum Biryani Recipe – Baby Potato Biryani – Small Potato Biryani Recipe

In my veg biryani series, I had already shared a Chettinad style baby potato biryani in pressure cooker. But this baby potato Dum biryani is a completely different version. I tried this recipe after watching this video. Usually aloo Dum biryani is prepared by shallow or deep frying sliced potatoes, marinated in curd+ spices mixture, made into a gravy and then layered with parboiled basmati rice. When I was browsing for various small potato biryani recipes, I was scared to see the tedious process because I had very less time in hand to prepare our Sunday lunch. But convincingly, I got this recipe.Feedback from readers made me try this recipe without any second thoughts. I loved the idea and simplicity of this recipe.Yes, This baby potato biryani is a much simplified version when compared with the traditional ones.This recipe involves no marination, no frying and taste wise there is no compromise at all. It tasted great just like Hyderabadi Veg Dum biryani. We all loved it & relished with onion raita. You can try this biryani for any special occasions like birthdays, wedding anniversary to treat your family. Kids would love this biryani for sure as it has their most favorite vegetable – Potato Winking. You can try this biryani in a pressure cooker using regular potato as well. Vegetable Palav Recipe – Karnataka Style Veg Pulao - Rice Bath Recipe

Here is a fool proof, Karnataka special Vegetable pulao recipe (vegetable palav) with step by step pictures and video. This mixed vegetable pulao is a must and should recipe in all the weddings, lunch buffet and parties in Bangalore, Karnataka. In hotels, its called as rice bath or veg palav in the menu. In our school moms group, we used to conduct kitty party once in a month in one of our houses. Mostly it would be a lunch party. I still remember Tara’s kitty party lunch menu. I had this pulao for the first time in her house and after that in few hotels, marriage functions and birthday parties. My friends call this as “Palav” in Kannada. I am a big fan of this Karnataka style pulao especially for its wonderful flavor. I don’t mind eating one full plate of it. I got this recipe from Tara and made it for our Sunday Lunch last week. It came out very well with the awesome masala flavor which is the highlight of this pulao. Tara makes it super spicy and very tasty. The whole pot gets emptied in few minutes. Thanks a lot Tara for teaching me this wonderful, authentic Karnataka veg pulao recipe to me. Now I am confident enough to try this rice variety for my guest and parties. This pulao looks mild green in color. In some hotels here, they serve a red colored pulao adding red chilli powder. Karnataka style vegetable pualo recipe How to make Karnataka style veg pulao recipe at home

Total time: 30 Minutes


INGREDIENTS
1 cup - 250ml
  • Sona masoori / Raw rice - 1 cup ( Use good quality ones)
  • Water - 2 cups ( to soak rice)
  • Mixed vegetables - 1/2 cup ( 1 Carrot, 5 beans, 1 potato, fistful peas)
  • Cooking oil - 3 tbsp
  • Bay leaf - 1 no
  • Black stone flower - 2 nos
  • Marathi moggu - 1 no
  • Star anise - 1 no
  • Cinnamon - 1 inch piece
  • Cloves - 2 nos
  • Big onion -1 no ( sliced)
  • Tomato - 1 small ( chopped finely)
  • Dhania powder - 1 tsp
  • Crushed kasoori methi - 1 tsp (optional)
  • Salt - as needed
To grind
  • Grated coconut - 1/4 cup
  • Green chillies - 6 nos ( use 8 for more spicy taste, 4 for less spice)
  • Mint leaves - a handful
  • Big onion - 1/2 no
  • Cinnamon - 2 inch piece
  • Cloves - 3 nos
  • Cardamom - 2 nos
  • Ginger - 1.5 inch piece
  • Garlic cloves - 8 nos
  • Water - as needed ( to grind to paste)
METHOD

  • Wash and soak 1 cup of rice in 2 cups of water for 15 to 30 minutes. Wash and chop the vegetables into small cubes.

  • Grind the ingredients given under “ To grind” to a smooth paste by adding required water. Set aside.

  • Heat oil in a pressure cooker base and add the whole garam masala. Saute until aromatic and then add sliced onions. Saute till transparent. Now add the tomato pieces and saute till mushy.

  • Add the ground masala paste. Mix well for a minute. Now add chopped vegetables, mix well for a minute. Then add the soaked rice along with water. Add dhania powder, crushed kasoori methi(optional) and required salt in the water. Mix well. Take some water and check for taste. Add more salt if required and slit green chilli for spicy taste.

  • Pressure cook in very low flame for two whistles. Open the lid after the steam is released completely. Fluff the rice gently with a fork. Remove in a plate and serve hot with onion raita ! This rice looks slightly mushy when hot. But rice grains become fluffy and separate as it cools down.

  • If you are making it for parties or functions, make this pulao one hour in advance and let it be in the cooker to stay warm. If it cools down, sprinkle very little water and reheat it for few minutes before serving. Tastes and smells yum !

Note
  • My friend Tara adds 8 to 10 chillies for the mentioned quantity. But I used 6 as my chillies were spicy. Adjust the quantity based on your taste. You can even add slit chillies in the water if you feel spiciness is less.
  • If you want, you can use red chilli powder or red chillies instead of green chillies while grinding the masala.
  • Addition of dhania powder and kasoori methi gives a nice flavor to pulao. Kasooi methi is not added usually in Karnataka style pulao, but I followed my friend's suggestion :)
  • Good quality raw rice is used for Karnataka style pulao. You can replace with basmati rice of you wish.In that case, use 1:1.5 cups of rice and water ratio.
  • For variations, you can use coriander leaves instead of mint leaves but flavor may vary.

Muslim Khichdi Recipe – Dal Khichdi

I got this recipe from Captain TV cookery show. It was demonstrated by a Muslim lady, Mrs. Humayun ( Sorry I don’t remember her name exactly) and she told its one of the traditional breakfast recipes of Tamil Muslims. This is an entirely different version from our usual dal kichdi recipes served in hotels. Its cooking procedure and ingredients are more like biryani. So I got impressed with the recipe and thought of trying out this authentic version. I made it for our Sunday lunch along with curd rice and fruit custard. It was mildly spiced and tasted yummy with nice flavor of moong dal and masala .I served this khichdi with Mint leaves chutney/Pudina chutney as suggested by her. Sendhil & Raksha loved it and told me prepare this for their lunch box too Happy. Its a very easy, quick, one pot meal ideal for breakfast and lunch box. Try this onceBring it on. INGREDIENTS
1 cup - 250ml
  • Basmati rice - 1 cup
  • Moong dal - 1/4 cup
  • Mixed vegetables - 1/2 cup (1 carrot, 1 potato, a handful of green peas)
  • Water - 1.5 cups
  • Salt - as needed
To saute
  • Cooking oil - 3 tbsp
  • Cinnamon, cloves, cardamom - 2 each
  • Big onion - 1 no
  • G&G paste - 2 tsp
  • Green chillies - 2 nos ( use 4 nos for more spicy)
  • Tomato - 2 nos ( small)
  • Mint + coriander leaves - a handful
  • Turmeric powder - 1/4 tsp
  • Ghee - 2 tsp
METHOD

  • Wash and soak basmati rice for 30 minutes. Wash and soak the dal in another bowl separately. In the mean time, chop the onion, tomato, mixed vegetables.

  • Heat oil in a pressure cooker base and saute cinnamon, cloves and cardamom. Now add the sliced big onion,g&g paste slitted green chilli and saute until onion turns transparent and raw smell goes off.

  • Now add the chopped tomato pieces, mint + coriander leaves, turmeric powder, salt. Saute till tomato turns pulpy. Drain the excess water from the soaked dal and add the dal to the cooker. Saute for a minute. Add the chopped vegetables and mix well.

  • Add 1.5 cups of water and check for taste after the water starts to boil Add more salt or put some slit green chillies if you want to add more salt or make it more spicy.Mix well and add the soaked, drained rice. Mix well and pressure cook in low flame for one whistle. Remove the lid after the steam is released. Fluff the rice with a fork.

  • Serve hot with Mint chutney and onion raita .Enjoy !
For Mint chutney
Take a handful of mint leaves + coriander leaves in a mixie jar. Add 3 tbsp of grated coconut, 2 green chillies, 1/2 tsp of cumin seeds, salt , a pinch of turmeric powder and a small piece of tamarind. Grind everything to a smooth paste. Serve it with khichdi.

Note

  • Add 3-4 green chillies for spicy taste.
  • Do not forget to use mint+coriander leaves as it gives a nice flavor. Add Mint leaves at least.
  • Adding ghee at the end gives richness and nice flavor. Skip it if you don’t want to increase the calorie.

In this post, I have shared how to cook basmati rice in a pressure cooker, open pot, rice cooker and Microwave oven.

Hi Friends,
Today I have shared a yummy & delicious celebrity biryani recipe that belongs to our South Indian actor, The Ultimate Star Thala AjithHappyDancing.I have been his fan for years and I am extremely happy to try and share his style of biryani in my blog.Few months back,I came across this recipe in a popular Tamil magazine (Kumudham Snehidhi). Our blogger friend Sundari Nathan shared the screen shot of the recipe page with me as per my request.So sweet of you dearHappy.When I read the article,it is said Thala is a great cook and an expert in making biryani. He used to prepare and serve a delicious mutton biryani for his Co-stars & workers in his shooting spot.Director Mr.Venkat Prabhu and South Indian actress Miss.Parvathy Nair have shared the method of making Thala biryani with all the minute details.Everybody had praised the taste & Thala’s passion of cooking biryani.Having tempted by the article, I tried this recipe at home by replacing mutton with mushroom & soya chunks.I used my own measurements as the quantity of ingredients were not specified in the magazine.I have tried this recipe twice in the past 2 weeks.It’s a very simple bachelor kind of recipe without much fancy ingredients & grinding job.To make this post more special, I served Thala Biryani in Thala Vazhai ilai with onion raita,Plain salna,Chilli potato and Semiya payasam ;).We all loved its awesome aroma and taste.I have shared the screen shot of the article below for your reference in Tamil.If you wish to try Thala’s actual Non-veg biryani using mutton,it will help youHappy.

Brinjal Biryani/Kathirikai Biryani Recipe

Actually I wanted to finish my Sunday Lunch Recipes series this week by posting an interesting biryani recipe.But suddenly I changed my plan and postponed the conclusion of this series to next weekend as I came across this yummy biryani recipe using my favorite vegetable, Brinjal Winking. I have tried brinjal gravy as a side dish for biryani but never thought of making a biryani adding whole brinjals.When Valarmathi shared this Kathirikai biryani,I was so excited & bookmarked it immediately to try this one.In Andhra,people call this as Vankaya biryani but its method & ingredients are slightly different. I made few additions to the original recipe and tried it yesterday.It came out very well.Being a big brinjal fan,I loved this rice to the coreDancing.I am so happy to add this biryani recipe in my Sunday Lunch Recipes Series and this is my 35th recipe in this series!Lets see how ro make this yummy & delicious Brinjal Biryani/Kathirikai Sadam recipe.I am dedicating this post to all brinjal lovers like me Happy.

Brinjal Biryani Recipe How to make birnjal biryani / Kathirikai sadam
Cuisine: Indian

Serves: Serves 2
Prep time: 10 Minutes
Cook time: 20 Minutes
Total time: 30 Minutes


INGREDIENTS
1 cup = 200 ml
  • Raw Rice OR Steamed Rice - 1 cup
  • Cooking oil or ghee -  2tbsp
  • Small brinjals - 6 nos
  • Big onion - 1 no
  • Ripe tomato - 2 nos
  • Curd – 2 tbsp
  • Green chillies – 2-3 nos
  • Whole Garam masala - 1 each ( cinnamon,2 cloves,cardamom,black stone flower,bayleaf)
  • Fennel seeds – 1/2 tsp
  • Mint leaves – few
  • Coriander leaves - few
  • Water - 2.5 cups
To stuff & marinate brinjals
  • Ginger & garlic paste - 1 tbsp
  • Red chilli powder - 1 tsp
  • Dhania powder –1 tsp
  • Garam masala powder - 1/2 tsp
  • Lemon juice - as needed
METHOD
  • Wash and slit the brinjals into 4 pieces without removing the stem. Keep them immersed in water till use to avoid discoloration.Mix all the masala powders & ginger,garlic paste with lemon juice given under “to marinate & stuff brinjal”.Stuff this paste inside the brinjal and let it marinate for 20 minutes.

  • In a pressure cooker base, heat oil and saute the whole garam masala & fennel seeds.Do not burn the fennel seeds.Add onions & slitted green chillies immediately.Saute until transparent.Add the tomato pieces & saute until mushy.

  • Now add the marinated brinjal and mix well until it shrinks slightly. Add mint leaves +coriander leaves.Mix well and then add curd.Stir it well & add water with required salt.

  • Add the rice,mix well & pressure cook in low flame for one whistle.Open & fluff it with a fork.Serve hot with raita!

  • Adjust the quantity of spices as per your taste.
  • You can replace brinjal with mixed vegetables or mushroom.In that case u don’t need to marinate.Instead add the paste after sauting onions & mix well till its raw smell leaves off
  • I din’t use basmati rice or jeera rice for this biryani.You can use them if you wish.For 1 cup of basmati rice,u should add 2 cups of water after soaking the rice for 20 minutes.for jeera rice, use 1:2 water without soaking the rice.

As I promised in my previous post,here is the long time due Sunday Biryani from my blog almost after a month.Yeah,I couldn’t post any biryani recipe for the past few weeks as I was concentrating on Diwali recipes.So this week,I wanted to share a healthy,interesting yet easy biryani recipe using millets.Actually speaking,I got the idea of making this biryani after I got few requests from my readers.I used little millet/Samai to prepare this biryani.I made a easy,no grinding biryani adding mixed vegetables for our lunch today.As I din’t have peas in hand,I used sweet corn kernels.It came out very well and it was tummy filling too.You can follow the same recipe and replace samai with varagu or Kuthiravali.I have mentioned the quantity of water for other millets in the Notes section.Please have a look at it before you try them.Lets check how to make this healthy,easy millet biryani recipe ! Mug Biryani Recipe - Dum Biryani ( Baked)

Gobi biryani / South Indian Cauliflower rice is my recent try in biryani recipes. Cauliflower is one of the favorite vegetables for kids & adults.In my family,my daughter loves my Gobi 65.So I always opt for gobi manchurian or gobi 65 more than other cauliflower recipes.This Friday I came to Salem to my in-laws house.My FIL bought a big sized cauliflower as it is Raksha's favorite vegetable. I made crispy Gobi fry with half of the cauliflower and made this biryani for Sunday Lunch yesterday.It came out really well.I referred my MIL’s hand written cook book for the recipe.I tweaked it slightly to suit our family’s taste.Everyone gave thumbs up after tasting the biryani.This cauliflower rice can be made as lunch box recipe for your kids.I am sure they will love to have it with raita.Ok,Lets see how to make this week’s Sunday Lunch Recipes Series 31-Gobi Biryani aka Cauliflower Rice .

INGREDIENTS
1 cup - 200ml
  • Basmati rice - 1 cup
  • Water - 1.75 cups
  • Big onion - 1 no
  • Tomato - 1 no
  • Red chilli powder - 1/2 tsp
  • Garam masala powder - 3/4 tsp
  • Salt - as needed
  • Mint+coriander leaves - few
  • Curd - 1 tbsp
  • Lemon juice - few drops
To grind
  • Green chillies - 2 nos
  • Cashewnuts - 5 nos
  • Cinnamon - 1 inch
  • Cloves - 2 nos
  • Cardamom - 1 no
  • Fennel seeds - 1/2 tsp
  • Ginger -1 inch piece
  • Garlic - 5 cloves
METHOD
  • Wash and soak the basmati rice for 30 minutes.In the mean time,take the big sized cauliflower florets and wash in turmeric+salt mixed hot water to remove germs.( Tip : Do not use small sized cauliflower florets because it will become mushy while cooking in cooker.So use bigger florets) Slice the onion and tomato.I used steamed rice here.So i used 1:2.5 cups of water after soaking the rice for 30 mins.
  • Grind all the ingredients given under “to grind” to a smooth paste adding enough water. Set aside.

  • Heat a pressure cooker with oil+ghee. Saute a bay leaf,black stone flower.Saute onion slices till transparent.Add the ground masala and tomato pieces.Saute till tomato turns mushy and raw smell of masala goes off completely.

  • Add turmeric powder,red chilli powder,garam masala powder and salt.Now add the cauliflower pieces and mix well to coat the masala.

  • Now add the washed & soaked basmati rice,water and pressure cook for 1 whistle in low flame. Open the cooker after the steam is released.Fluff the rice with fork and serve hot with raita!! Enjoy !

  • you can replace cauliflower with baby corn ,potato or meal maker/Soya chunks and make this rice.
  • For variations u can skip the grinding part and saute all the spices given under “To grind” in oil+ghee.
