PANEER LADDU RECIPE / MALAI LADOO WITH CONDENSED MILK

Malai ladoo aka paneer ladoo is one of the most famous sweets in North India. I tried this easy laddu recipe for the first time using my homemade condensed milk .I referred milk maid website and here for this recipe.Its a very easy dessert/sweet that can be made within 10 minutes and it tastes great too! Indian kesar Malai ladoo can be made in different ways.This is one of the easiest method of doing it. All u need is just 3 main ingredients.Even beginners can try this sweet easily.I used store bought paneer.U can use homemade chenna too.Do try this easy n yummy sweet for this Diwali to treat your family and let me know how u liked it. Paneer laddu/Paneer ladoo recipe Easy n delicious paneer ladoo recipe using store bought paneer & homemade condensed milk

INGREDIENTS
1 cup = 250ml
  • Paneer - 200gms (store bought or homemade)
  • Condensed milk – 3/4 cup (-do-)
  • Boiled milk – 1/4 cup(at room temp)
  • Sugar - 1tbsp (optional,add only if u need more sweetness)
  • Elachi/Cardamom seeds - 2 nos
  • Kewra essence – 2 drops ( optinal,i din’t use)
  • Kesar/Saffron threads - few ( add less to get white ladoo)
  • Ghee – 1 tsp (unmelted)
METHOD
  • If using store bought paneer,immerse it in hot water for 10-15 minutes till it softens.Then crumble it well using your fingers.If using homemade paneer,no need to keep in hot water.Knead the chenna well with your palm & crumble it.

  • Take the crumbled paneer in a mixie jar.To this, add condensed milk,milk,saffron threads and cardamom seeds(without skin). Grind it to a smooth paste.After grinding the mixture,check for taste and add more condensed milk or sugar,grind again and proceed to next step.

  • In a wide kadai,take the ground paste and add 1 tsp of ghee(refer picture). switch on the flame.Keep the flame medium and stir in regular intervals till the mixture becomes thick and becomes a whole mass leaving the sides of pan.

  • Remove in a ghee greased plate and let it warm.Knead the dough well & make a non-sticky mass.Make balls and arrange in a cupcake liner.Decorate it by keeping a colored dot( I used a  pinch of orange food color powder dissolved in little water) and sliced pistachios.

Note

  • My ladoos were slightly yellow in shade as I used saffron threads.Skip it to get white colored ladoos.
  • Use  2 drops of kewra essence to get nice flavor.
  • Instead of store bought paneer,u can use homemade paneer too.Homemade chenna makes even more soft ladoo.
  • If using homemade chenna,knead the chena well and then grind with condensed milk.
  • U can use store bought or homemade condensed milk.U can add more condensed milk based on your taste buds.
  • After grinding the mixture,check for taste and add more condensed milk if necessary.
  • Do not keep the dough in flame for long time,ladoo may turn hard.Also remove the dough only after it becomes non-sticky.U can check it by taking a small piece and make a ball.If u are able to shape it well,remove in a plate.

BENGALI CHALER PAYESH RECIPE/RICE KHEER RECIPE

I am very happy to share my first post on Bengali recipes , Chaler payesh. Last month I posted a query in CAL group in Facebook to suggest me some yummy bengali lunch menu recipes. I got so many suggestions and recipe links to try. Thanks everyone for helping me in finding out some good Bengali vegetarian recipes. Sorry, as I was busy in travel and household chores, I couldn’t try them immediately. But I kept searching and bookmarking some yummy recipes from various websites. And finally I made a delectable Bengali vegetarian thali for the first time on last saturday. I prepared around 8 dishes which are a must & should recipes in an authentic Bengali lunch menu. We loved the thali very much and I had the same for dinner too! 

Before sharing the entire platter, I just want to post all the recipes one by one here. To start with, here is an easy, tasty, simple Bengali chaler payesh recipe. This payesh is nothing but our Indian style rice pudding or rice kheer made by boiling thick milk with aromatic rice(Gobindo bogh) n sugar.

Traditional chaler payesh is prepared by adding date palm jaggery or Khejurer gur is used in Bengal. But I used sugar. Some people use condensed milk too. Its a very tasty, simple to make & flavourful Bengali dessert. This dessert is prepared in all Bengali homes for most of their festivals like Durga puja, Lakshmi puja etc. I had some doubts between this payesh & Nolen gurer payesh and its consistency.

Special thanks to Deepasri Deb for giving a clear explanation which helped me to make this payesh perfect. It turned out so delicious and very flavourful. We loved it a lot. I have made this twice within a week. Once with basmati and second time with jeera rice. The smell of basmati rice/Jeera rice, bay leaf and cardamom while boiling in milk was fantastic. One must feel this fragrance more than I say. So I would give 5* rating for this recipe and suggest everyone to try this yummy, easy Bengali sweet recipe if you are a beginner for this cuisine. INGREDIENTS

  • Milk - 1 litre
  • Basmati or Jeera rice - 1/3 cup (Use Gobindo bhog for best taste)
  • Sugar - 1/3 - 1/2 cup
  • Cardamom - 4 pods
  • Nuts n dry fruits – to garnish
  • Ghee – 2 tsp (optional)
  • Bayleaf - 2 nos
  • Salt - A pinch
HOW TO MAKE CHALER PAYESH - METHOD

  • Boil milk in a wide bowl and when it starts to roll boil, add bay leaf and slightly crushed cardamom pods.

  • Wash the rice and add to the milk. Allow it to boil in low to medium flame till rice gets cooked well but it should be firm & soft without losing its shape. Generally rice takes longer time to cook. So keep mixing every now and then and make sure it is not burnt in the bottom.

  • When the rice is almost cooked, remove bay leaf(optional) & add sugar,a pinch of salt & mix well. Let it boil till the mixture thickens slightly.

  • Switch off the flame. Add nuts and ghee ( optional). Allow it to cool, refrigerate and serve chilled. Enjoy ! This payesh would thicken as it cools down. So adjust the consistency by adding little boiled milk before serving !

Note

  • Thanks to Ushnish Gosh ji for sharing few tips to make this payesh perfect. I have added them above.
  • The consistency of this payesh should be thick. So make it accordingly.
  • I removed the bay leaf before adding sugar by following sanjeev kapoor’s video. If you wish, you can keep it till the end.
  • I felt jeera rice gives more flavour than Basmati rice for this payesh. But its purely your choice.
  • Usually ghee  & water is not used in this recipe. Milk gives the taste. You can add little ghee if you wish.

HOLI LUNCH MENU RECIPES | NORTH INDIAN LUNCH MENU

Wish you all a very happy and colorful Holi celebration !!

I hope most of you have started Holi festival preparations. Actually I din’t have an idea of making Holi special lunch menu / North Indian lunch menu. But when I was going through holi images, I got tempted by a Holi special lunch menu plate and prepared this yesterday. Though there are wide number of choices for North Indian Lunch Menu recipes, I prepared some based on the recipes I have in my blog. Also I read Gujia  & thandai are mandatory for traditional Holi lunch. So I made sweet samosa, thandai and included in the menu. For spicy snacks, you can make some samosa, pakora or any chaat items. 

In the above picture, I have plated Jeera Rice, Poori, Gujia, Paneer Butter Masala, Aloo Methi, Dal tadka, Masala dahi, Roasted Masala Papad, Pickle, sweet lassi and Paneer kheer. I have shared the links for all the recipes below. I have also explained the step by step cooking of how I made this thali easily. Please go through them. HOW I PREPARED THIS MENU
For this menu,there is no soaking part and chopping is also very less.
  • I chopped onion, tomato, green chillies and taken all the other ingredients required for making Dal tadka in a pressure cooker base. Added enough water, salt. To this, I washed and kept 3 big potatoes halved into two for making aloo methi. I pressure cooked both at the same time. It took nearly 15 minutes to get cooked.
  • In another cooker, I prepared jeera rice. I din’t soak the rice and I used jeera rice with water ratio of 1:2.
  • Then I made the dough for gujia. As the dough needs a standing time of 30-45 minutes, I prepared the stuffing in the mean time & kept them covered.
  • While the dal and jeer rice cooker steam gets released, I removed methi leaves from the stem,washed and kept immersed in water adding salt and little sugar. I chopped onions and ginger bits and kept aside in a plate.
  • By this time, dal with potatoes and jeera rice would be ready. I removed the jeera rice in a bowl and kept plain rice for mixing with dal tadka & curd.
  • Then I took the potatoes out,washed & peeled the skin. I mashed the dal very well. I did seasoning for the dal, checked for salt and kept dal tadka ready.
  • Then I prepared aloo methi. It took 10 minutes.
  • Next I prepared paneer butter masala. I boiled tomatoes for blanching. In the mean time, I cut the required paneer and grated 1/4 cup for kheer and kept aside. PBM takes hardly 10 minutes to prepare.
  • Then i prepared paneer kheer and kept in freezer to chill down quickly. It takes 5-10 minutes.
  • I prepared masala dahi raita. It takes just 3 minutes to prepare. Whisk the curd for lassi adding salt or sugar. Set aside.
  • Now Gujia outer cover would be ready to roll & fill the stuffing. I prepared & kept it covered till i rolled poori.
  • Lastly i made the dough for poori. As you all know, poori dough should not be prepared earlier as it absorbs more oil. I rolled the poori, spreaded in a plate and covered with a lid to prevent drying.
  • I kept oil in a kadai for deep frying and i deep fried gujias first. After you fry gujias, the heatness of oil will be more. So now you can deep fry the pooris. Drain everything in a tissue.
  • Last but not the least, roast the store bought papad in direct flame.
By now all the dishes are ready. Remove the kheer from the freezer and keep in refrigerator till you serve !
In a plate, arrange all the dishes and and serve !

Cornflakes Mixture in Microwave | Cornflakes Chivda in microwave

Here comes an easy, low fat, crunchy cornflakes mixture/chivda or namkeen recipe using microwave. I should have tried and posted this during Diwali but I din’t. Last week my in laws were with me. We all have a habit of munching some savouries immediately after lunch.

Every time my FIL used to buy a mixture packet from Haldirams or Maiyaa’s. This time I wanted to try the same but I wanted it light to tummy as well as tasty. Suddenly this cornflakes mixture recipe using microwave flashed in my mind. 

As I can get raw cornflakes in all the shops here, I immediately bought some and tried this recipe for the first time. U can also try this with Kellogg’s cornflakes. It makes your job much easier. We all liked its crunchiness very much inspite of the fact that it is not deep fried. I never expected a mixture without deep frying tastes this good. It is an yummy,  guilt free, best evening snacks recipe for all the elders in your family. Do try this easy,  low fat cornflakes chivda recipe. Everybody will like it for sure! Cornflakes mixture Low calorie cornflakes mixture recipe using microwave !

Prep time: 5 Minutes

INGREDIENTS

  • Plain raw cornflakes - 3 cups
  • Poha/Thin rice flakes – 1/4 cup (optional)
  • Raw, dry Peanuts - 1/4 cup
  • Dalia/Fried gram dal/Pottukadalai -1/4 cup
  • Cashew nuts - a handful
  • Curry leaves - few
To temper
  • Cooking oil - 1 tbsp
  • Red chilli powder -2 tsp
  • Turmeric powder - 1/4 tsp
  • Salt - as needed
  • Chaat masala – 1/4 tsp(optional)
  • Sugar – 1 tsp
  • Dry grapes/Raisins – 1 tbsp
HOW TO MAKE CORNFLAKES MIXTURE IN MICROWAVE - METHOD

  • Microwave raw cornflakes in batches in high power (800w) for 1 minute. I kept for 1 minute 10 seconds. Time varies based on the microwave. For one batch, you can keep 3/4 cup of cornflakes. Spread in the turn table and microwave it. Please keep an eye that it is not getting burnt.

  • Remove and proceed the same for all batches. Keep it in a wide bowl & let it cool down.
  • Next,microwave thin poha for a minute and check whether it becomes crispy. If not, keep for another minute. Remove and add to cornflakes.
  • Then keep dalia and microwave for 1minute 30 seconds. Remove and mix.

  • Spread the peanuts and microwave for 2 minutes. Mine took 2 minutes 30 seconds. Remove and keep in a separate plate. Initially it tastes soggy, but it becomes super crispy when it cools down completely. After it becomes crispy, add it to the above mixture.

  • Next microwave cashews for a minute and remove.
  • Lastly microwave the curry leaves for a minute. Remove and add them.
  • Mix everything adding the required salt and set aside.
  • In a kadai, heat oil and add the raisins. Roast for a minute till raisins bulge. Add red chilli powder, turmeric powder & chaat masala powder or aamchur powder, sugar. Switch off the flame and add this to mixture. Mix everything together very well.

  • Check for taste. Store in a box and enjoy. It stays crispy for more than a week.


Note


  • I din’t use raisins as my husband in not fond of sweet taste. But I strongly recommend you to add to get a nice taste. 
  • I microwaved all the ingredients in high power (800w). Please adjust the timing based on yours. The timings I have given above is to give you an idea.
  • When you microwave, make sure everything comes out crispy. Otherwise the whole mixture will become soggy in a day or two.
  • Check its crunchiness by tasting it and then add to the mixture. U can check whether the peanuts are roasted by its smell.
  • If you are using kellogs cornflakes, no need to microwave it. Just mix with other ingredients and proceed.
  • If you don’t want to microwave dalia, cashews and peanuts. U can roast them in little oil or ghee and add to mixture. But make sure everything is crispy. 
  • If you don’t want to go for microwave option, you can either use deep frying or baking in convection mode. For baking in convection mode, preheat oven in 180c for 10 minutes. Then spread the cornflakes and bake for 4 minutes. Make sure you mix it once in a while and also it should not be burnt. Keep an eye after 2 minutes.

Easy Coconut Ladoo Recipe Without Condensed Milk | Thengai Laddu



Coconut ladoo,called as Nariyal Ka ladoo in Hindi and Thengai Ladoo in Tamil.I have made this coconut laddu without condensed milk. When it comes to easy festival sweets recipes, my priority goes to ladoo recipes. This coconut laddu was in my try list for years I should say. I thought of trying this for last Diwali but I couldn’t. As Holi festival is nearing, I took this as a chance to try this easy sweet recipe. I know most of you make it in less than 5 minutes using condensed milk. As I din’t have milkmaid/condensed milk in hand, I used milk and it came out perfect! U don’t need any expertise to try this recipe.Even beginners can attempt this. It won’t disappoint you for sure. Do try this simple and easy laddu recipe for this Holi/Diwali and get appreciations from your family members Smile.

Ingredients


  • Desiccated coconut or freshly scrapped coconut- 1 cup
  • Boiled milk - 3/4 cup (at room temp)
  • Sugar - 1/3 cup
  • Cardamom seeds - 2 nos(powdered)
  • Ghee – 2 tsp
Desiccated coconut – 1/4 cup (to coat the balls)

How To Make Coconut Ladoo Without Condensed Milk



  • Heat 2 tsp of ghee in a kadai.Add the dessicated coconut and roast for 2-3 minutes in low flame till u get a nice aroma.

  • Now add milk and stir well till all the milk is absorbed by coconut.
  • After the mixture thickens,add sugar and mix well.Sugar melts and the mixture becomes a semi solid paste.

  • Keep mixing in medium flame till all the sugar is well combined with coconut and the mixture leaves the sides of the pan.Take a small piece and try to roll a ball.If u are able to do it,the mixture is ready.Add cardamom powder,mix it and switch off the flame.

  • When the mixture becomes warm,grease ur hands with a drop of ghee and make balls. Immediately roll in the desiccated coconut.Else it wont stick.Arrange the ladoos in a plate.Stays good for 2-3 days when refrigerated.

Note


  • If u want to make a quicker version,use condensed milk in place of milk and sugar.The ratio of dessicated coconut and condensed milk should be 1:1.
  • Its better to use mature ones if u want to use fresh coconuts.scrape the white part & use it instead of desiccated coconut.In that case,fry coconut for more time till all the moisture completely goes off !
  • Do not keep the mixture for long time in flame as it changes the color of balls.
  • Also stay nearby and complete this sweet.U can finish it within 10 minutes.
  • Initially the balls will be yellow in color.After u coat them in coconut,its color changes to half white.
