French toast is a very easy, popular and quick breakfast recipe. Its an ideal recipe for kids breakfast & lunch box as well. Basic plain French toast batter has eggs in it. But nowadays many Indian people are making it without eggs by using custard powder or corn starch. My friend Shalini prepares this sweet toast quite often as evening snacks for her kids.She shared her eggless recipe with me and was telling me to make this post in my blog. As Raksha is not a big fan of sweetened bread toast, I was hesitating to try it. But her Father is just the oppositeWinking. He has a big sweet tooth and I know he will like this toast very much. So once I tried it for Sendhil’s breakfast with some leftover bread after making Cheese toast for Raksha. He loved it very muchApplause. Nowadays this eggless French toast is appearing often in my kitchen.You can serve this with freshly chopped fruits like strawberries, banana or by smearing with buttter, drizzling with honey or chocolate sauce and enjoy it.Soon I must try the savory version too. Eggless French toast recipe using custard powder

INGREDIENTS
1 cup - 250ml
  • Bread slices - 5 nos ( Milk bread or wheat bread)
  • Custard powder - 1.5 tbsp ( Vanilla flavor)
  • Sugar - 1.5 tbsp
  • Boiled milk - 1/2 cup
  • Cinnamon powder - 1/2 tsp
  • Vanilla essence or rose white essence - 1/2 tsp
  • Cooking oil or melted butter - to grease
METHOD

  • Take the custard powder, sugar, Vanilla essence, cinnamon powder in a wide plate.Add boiled & cooled milk and mix well without lumps. I used a big plate as its convenient for dipping the bread slice. If you want, you can mix them in a bowl too.

  • Now dip the bread slice on both the sides and all the corners.
  • Heat a dosa pan and drizzle with oil or butter. Place the bread slice and keep the flame medium.Flip the bread after it turns golden brown. Cook both the sides and remove in a plate. Serve hot with chocolate sauce or honey or chopped fruits !!

Note
  • Adjust the quantity of sugar based on your sweet buds. The quantity of sugar also depends on the sweetness of bread. I used 1.5 tbsp. Use just 2 tsp to 1tbsp for mild sweetness.
  • Make sure the milk is boiled and is at room temperature.It should not be hot. 
  • U can replace custard powder with corn flour.
  • Serve it really hot to enjoy its best taste.

Easy Garlic Spaghetti Recipe – Indian Vegetarian Spaghetti Recipes

Food blogging has made me try and taste varieties of recipes from various cuisines which I have not even imagined in my life. Being a South Indian, my whole food world was just revolving around Idli, dosa, poori and chapathi . But after I became a food blogger, my eating habits and cooking have changed completely. I am really proud and happy to be a passionate food blogger. 

Pasta, Hakka Noodles, Tacos, Spaghetti, Quesadilla, Tortilla – All these terms were very new to me until I saw them in our fellow bloggers blog. I did not even know how to cook them perfectly. Slowly I am learning everything and blogging the same to help beginners like me. I am happy that I am trying out various international recipes in my kitchen. My recent crush was to try spaghetti at home. 


Spaghetti is basically a type of noodles made from durum wheat semolina. Spaghetti is the plural form of the Italian word spaghetto, which is a diminutive of spago, meaning "thin string" or "twine". It is a staple food of traditional Italian cuisine ( Source: Wiki). Cooking spaghetti is not so difficult as I thought. Its procedure is more like cooking noodles. 

As a beginner, I wanted to make an easy and simple Indian style Vegetarian spaghetti recipe. I found this easy stir fried, garlicky spaghetti recipe HERE as I din’t have any vegetables in hand. I made some modifications as per my family’s taste buds and tried it for a Sunday breakfast. It came out really well with an awesome flavor of roasted onion and garlic in olive oil.  

This is just a basic spaghetti recipe. For variations ansd make it more rich, you can add sliced, sauteed vegetables and grated cheese on top before serving. Sendhil & Raksha gave a big thumbs up after eating. We relished it with tomato sauce. Its a quick breakfast recipe for bachelors and working women as there is very less chopping works. INGREDIENTS

  • Spaghetti - 200gms 
  • Water - 10 cups
  • Big onion - 2 nos ( sliced thinly)
  • Olive oil or cooking oil - 2 tbsp
  • Spring onion - 2 sprig ( finely chopped)
  • Red chilli flakes - 1.5 tsp
  • Pepper powder - 1 tsp
  • Soy sauce - 1/4 tsp ( optional)
  • Garlic - 10 cloves (finely chopped & crushed)
  • Salt - as needed
METHOD

  • In a wide bowl, boil 10 cups of water adding some salt and few drops of oil. Put the spaghetti as such (Do not break it) and let it cook in high flame for 15 minutes. Initially, spaghetti won’t be completely immersed. 
  • As It starts to cook, It will get immerse into the water completely and becomes soft like noodles. You can even cover and cook the spaghetti for sometime but water may spill while cooking. So stay nearby and adjust the flame whenever needed.

  • Spaghetti takes more time to cook than our regular noodles.So take care while cooking. Take out one string of spaghetti and check if it breaks and soft to touch. If so, switch off the flame and transfer the cooked spaghetti to a colander(steel sieve) Drain the excess water completely and leave it aside.

  • Chop the onion thinly into slices. Finely chop the garlic cloves and crush it slightly using a mortar & pestle. Chop the spring onions finely.

  • Heat olive oil in a kadai. Saute the crushed garlic cloves for few seconds. Add sliced onions and salt. Saute till onion turns transparent. Now add the red chilli flakes. Mix it well.

  • Lastly add the cooked spaghetti, pepper powder and soy sauce if adding. Mix well using a fork. Toss it well. Make sure spaghetti doesn’t break. Check for taste and add more pepper powder & salt. Garnish with finely chopped spring onions. Serve hot immediately. Enjoy with tomato ketchup or sauce ! You can add some grated cheese on top before serving kids.

Note
  • Adjust the quantity of chilli flakes and pepper powder as per your taste.
  • If you like tomato flavor in spaghetti, you can add a tbsp of tomato sauce while mixing.
  • For variations, you can try adding thinly sliced capsicum, carrot, mushroom and potato while sauting onions.
  • You can add some grated cheese on top before serving.

Veg Quesadilla Recipe - Indian Vegetarian Quesadilla


Recently I tasted Mexican Veg Quesadillas at Taco bell. Its my long time wish to prepare Vegetarian quesadilla at home. So I bought tortilla sheets and tried it in my own combination after watching few you tube video recipes. I made it for our Sunday breakfast. I din’t have sour cream, cheese or other Mexican ingredients in hand. So I used tomato ketchup and mayonnaise along with mixed vegetables stuffing and made it in our Indian style.It came out very well. Sendhil & Raksha liked it a lot. Try this easy and simple Indian Veggie quesadilla at home and enjoy your breakfast. I am sure kids would love this recipe.Lets see how to make Vegetable quesadilla with simple stuffing Happy.

INGREDIENTS

  • Tortilla sheets - 3 nos
  • Olive oil/Cooking oil - 2 tbsp
  • Tomato sauce/Tomato ketchup - to spread
  • Mayonaise - to spread
For stuffing
  • Carrot - 1 no
  • Capsicum - 1/4 no
  • Big onion - 1 no
  • Tomato - 1 no
  • Cabbage - 1/2 cup
  • Pepper powder - 1 tsp
  • Sugar – 1/2 tsp
  • Red Chilli Sauce or green chilli sauce - 1 - 2 tsp ( based on taste)
  • Herb seasoning/ Oregano mix - 1/4 tsp
  • Rosemary leaves - a pinch
  • Salt - as needed
METHOD

  • Chop the vegetables into thin strips. Heat oil in a kadai and saute the onions, chopped vegetables till its half cooked. Add the tomato strips and saute until mushy.Add salt & sugar while sauting.This helps for quick cooking and prevents color changing of vegetables.

  • After the vegetables are 3/4th cooked, add red chilli sauce, pepper powder, herb seasoning mix and rosemary leaves.Mix well. Check for taste and add more spices as you like.Stuffing is ready.

  • Take the tortilla sheets and microwave in high power for 1 minute. I kept in 800w power.Take a sheet and spread the tomato ketchup. Spread the stuffing in the center. Apply 2 tsp of mayonnaise all over the stuffing as shown in the picture.Fold it like a half moon.

  • Heat a dosa tawa & sprinkle a tsp of oil. Cook the folded quesadilla on both the sides till golden. Remove and cut into three triangular shaped pieces using a scissors. Serve hot with salsa or cheesy sauce.Enjoy !


Note
Adjust the quantity of chilli sauce & pepper powder as per your taste.
You can replace red chilli sauce or green chilli sauce.
You can replace mayonnaise with sour cream.

Hakka noodles, or Hakka mee, is a type of noodles - It is yellow in color, normally served in soup and with meat such as pork or chicken fillet, with vegetables and egg ( Source: Wiki).Usually I make Veg noodles with store bought plain noodles.For the first time, I bought Ching’s Hakka noodles and made Vegetable noodles for our breakfast combining Indian & Chinese style.I never thought its so easy and quick to make. I followed the instruction given in the pack on how to cook hakka noodles and cooked it perfectly. Noodles was firm yet soft. It came out well and tasty. Sendhil & Raksha loved it so much. Rice Vinegar & Soy sauce are the star ingredients for this recipe. But I used White vinegar and little tomato ketchup too. I am happy that I tried hakka noodles at home.For a no onion, no garlic version, just skip those ingredients from the list and follow the recipe. Soon I am planning to try Schezwan and more varieties with hakka noodles.Now lets see how to make this Kids friendly, quick and easy Veg Hakka noodles.

Easy Vegetarian Tacos Recipe With Baked Kidney Beans

Recently I tasted Crunchy Taco at Taco bell in Gopalan Innovation mall, Bangalore. I just loved its filling & toppings.Inspired by that, I bought some readymade Taco shells & a tin of baked beans in tomato sauce( Sil brand) from Big basket, Online ( This is not a promotional post). As I am not aware of the availability of Taco shells & baked beans in Bangalore,I ordered them online. I guess it must be available in Nilgiris, Total mall & Spar. Making homemade pizza must be the dream for many.Me too not an exceptionBatting Eyelashes.Whenever I order Pizza online from Dominos or Pizza Hut,i used to think “When I am i going to make it on my own???Day dreaming” Of course,I have tried pizza using readymade pizza base and shared a post in my blog years ago.But i was waiting to make a perfect pizza from scratch following a simple recipe.Recently my friend Shalini shared me an easy,no knead,no wait, stovetop pizza recipe(Also known as Tawa pizza/skillet pizza) video in youtube.I was super excited to see the ease and quickness of this recipe and tried it on the same day.I used a simple topping with onions,tomato,olives and capsicum.It was excellent in taste and got a big thumbs up from my family members!! Parfait Recipe – When my friend Shalini told me about this recipe,I had no clue of What is parfait,how it is made, how it tastes. Immediately I browsed for the recipe & images.I found in Wikipedia that Parfait is a type of food that is eaten as a dessert or breakfast in United States. It is a French word that means perfect.

In the United States, parfait refers to either the traditional French-style dessert or to a popular variant, the American parfait, made by layering parfait cream, ice cream, and/or flavored gelatins in a tall, clear parfait glass, and topping the creation with whipped cream, fresh or canned fruit. In Canada and the United States, parfaits may also be made by using greek yogurt layered with granola, nuts or fresh fruits, such as peaches, strawberries or blueberries. 

I loved the simplicity of this recipe and tried it for our Sunday breakfast using strawberry flavored yoghurt layered with muesli & fresh fruits. It came out very colorful and we loved its taste too. So I thought of sharing this easy dessert and breakfast recipe for you to try if you are bored with our usual Cereals with milk combo. Its so healthy &a tummy filling recipe. After tasting this strawberry yogurt parfait, I wish to try all the variants of parfait recipe and taste it. Ok, Lets see how to make this easy and healthy fruit yogurt parfait recipe.

Vegans, please replace yogurt with non-dairy yogurt. Actual recipe calls for granola, but I used muesli here. It was super crunchy to taste !

INGREDIENTS

  • Granola Or Muesli - 4 tbsp
  • Flavored yoghurt - 2 cups ( I used DANONE Strawberry yogurt – 80gms)
  • Fresh fruits ( Blueberry , Strawberry,Apple and Cherries) - as needed
HOW TO MAKE FRUIT AND YOGURT PARFAIT - METHOD
  • Refrigerate or freeze the yoghurt for an hour and let it be cold and thick. I bought Danone & Nestle yogurt. But used Danone. Take all the required ingredients and keep it ready.
 

  • In a clear glass/Parfait glass, put 2 tbsp of muesli as the first layer. Then add half of the yogurt from 80gms cup. Again layer it with muesli and then add the remaining yoghurt. Lastly layer it with chopped fresh fruits. Garnish with a fresh mint leaf and serve immediately. Healthy and tasty fruit yogurt parfait is ready. Enjoy ! Doesn't it sound easy ?? ;)
( If you use greek yogurt, you can mix sugar with fresh fruits and then layer it to give a sweet taste. I used sweetened Strawberry flavored yoghurt. So I din’t use any extra sugar. For variations, you can use chopped banana pieces, cranberry, raspberry etc)
If you don't have flavored yogurt in hand, just blend the strawberry adding some sugar, Mix with homemade thick curd & hang it for an hour by tieing them in a cloth or freexe it for an hour to make it thick. Excess water content would be removed. Then you can use this thick curd for making parfait !

Its been years since i shared an international recipe in my blog.I badly wanted to post a recipe this week.After searching so many recipes,i settled down with this eggless pancakes.I have never thought making pancakes at home is so easy and simple.As i have not tasted pancakes so far,i din’t have any idea about its softness & texture.My friends in abroad had told me,its like our South Indian thick dosa/Uttapam.But after i made this eggless pancakes on my own following this recipe,i was amazed to see my golden,fluffy & soft pancakes.I was very happy and proud that i made a popular(American) international breakfast recipe at home perfectly and that too in my first attempt.Basically pancakes are done using plain flour/Maida.Here i have used our regular chapathi atta/wheat flour and made small changes in the actual recipe to suit our taste.And I am completely happy with the results.Actually I halved the original recipe & tried it.So this quantity serves only one person.Just follow this recipe & once u get it right,u can double the same.
Friends,do try this not so sweet,soft,fluffy n healthy eggless pancakes recipe with wheat flour for your breakfast.Enjoy topping it with any pancake syrup like maple syrup,caramel sauce,honey or just choco chips.Tastes yummmm..!! Very soon i will share my favourite savoury pancakes recipeWinking.
Note:Please adjust the quantity of sugar if u like your pancakes to be sweet.Never skip baking powder which is the magic ingredient here.Just follow this recipe with my tips to achieve the best results.All the very best for beginners Happy.

INGREDIENTS

  • Wheat flour/Atta - 1/2 cup ( I used aashirvaad)
  • Baking powder -1 tsp ( use fresh powders for best result)
  • Cinnamon powder - 1/2 tsp
  • Salt - a pinch
  • Sugar - 1/2 tbsp
  • Water - 1 tbsp
  • Milk - 1/2 cup ( boiled, at room temp)
  • Cooking oil - 1/2 tbsp ( use odourless oil)
  • Melted Butter - 1 tbsp
  • Vanilla essence - 1/2 tsp
METHOD

  • Take a bowl and mix all the dry ingredients( wheat flour,cinnamon powder,baking powder,salt & sugar)Now add the wet ingredients namely oil,water,melted butter,vanilla essence and milk.

  • Mix with a whisk gently.Do not over beat it.The consistency of batter would be thick at the same time it should be pourable as shown in the picture.Adjust the quantity of milk based on the flour u use.But add 1-2 tbsp extra and definitely not more than that.
  • After mixing the batter,rest it for 10 minutes which is very important. The baking powder will react with other ingredients and gives you a fluffy pancake.

  • Heat a dosa pan. I used non-stick pan here.Iron griddle works the best.Make sure the pan is not over heated.To check the right temperature of the pan,just sprinkle few drops of water & if the water sizzles slightly,pan is just right.
    • Never let the pan smoke.Heat of the pan is very very important to get nice colored,uniformly cooked pancakes.If your pan is over heated,u will not be able to make round pancakes.Shape won’t be proper.Also the color of pancakes turn dark brown. 
    • In case if the pan is over heated,switch off the flame for sometime & then make pancakes.It will come out well.Also u should cook the pancakes only in low to medium flame.
  • Grease the pan with butter and simmer the flame completely.Then pour the batter.Spread the batter lightly with a back of ladle but the pancake should be thick enough.So do it carefully.
  • Keep the flame low & cook one side till u see bubbles all over the pancake.Now flip it.U will see the golden colored top.Cook the other side for few seconds and remove in a plate.
  • Serve it with butter & syrup/Honey !

Note

  • Adjust the quantity of milk based on the atta u use.I used aashirvaad here.
  • You can replace atta with maida/all purpose flour.But i guess u won’t do,hehe..
  • Do not use baking powder more than the mentioned quantity.If u use more baking powder,pancake may taste bitter.
  • Do not get confused with baking powder & baking soda.Use only baking powder.
  • If u have frozen butter,first melt it in a pan and then add to the batter.
  • Do not make the batter thin or spread it well.Pancakes are supposed to be thick.So spread the batter lightly and cook in low flame for best results.
  • Adding cinnamon powder & vanilla essence is for flavor.So don’t avoid it.Add more sugar for sweet tasting pancakes.
