Cornflakes Mixture Without Oil – Kellogg's Corn Flakes Mixture / Chivda

Cornflakes mixture using Kellogg’s corn flakes. It is made without deep frying in oil. Recently my daughter Raksha tasted this cornflakes chivda in her friend’s house. She told me to try it for Diwali. I asked her friend’s mom for the recipe and tried it today. Its a very easy, quick and healthy snack as it has very less oil. Kids & adults would love this for sure.Its quiet additive !

Many of us buy corn flakes cereals (Kelloggs or Kwality brand) for breakfast. If you have it in hand, you can make this corn flakes mixture in the next 10 minutes. You can pack this for your kids snack box or for their teatime after coming back from school. It can be stored for 2 to 3 days without losing its crispness. Friends, diwali is incomplete without mixture recipe. If you have not done any mixture recipe, you can try it now. Cornflakes mixture Low calorie cornflakes mixture recipe using Kellogg's Cornflakes with less oil!
Cuisine: Indian
Category: Snacks
Serves: 4.5 cups
Prep time: 5 Minutes
Cook time: 5 Minutes
Total time: 10 Minutes


INGREDIENTS

  • Kellogg's corn flakes - 2 cups (Original, plain flavor)
  • Roasted peanuts – 2 tbsp
  • Curry leaves - few
  • Cashew nuts - 2 tbsp (broken, optional)

To temper
  • Cooking oil - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1 /2 tsp
  • Urad dal - 1/2 tsp
  • Red chilli powder - 1 tsp ( add 1.5 tsp for more spiciness)
  • Turmeric powder - 1/8 tsp
  • Salt - as needed
  • Chat masala – 1/4 tsp(optional)
  • Sugar – 1/4 tsp
  • Dry grapes/Raisins – 1 tbsp (optional, add if your kids like it)
METHOD

  • In a kadai, heat oil and splutter mustard seeds, urad dal and cumin seeds. Add roasted peanuts, curry leaves and mix well.

  • Lower the flame completely and add turmeric powder, red chilli powder, salt and sugar. Mix well.

  • Lastly add the cornflakes and mix well in low flame till its coated with chilli ppowder. Check for taste and add 1/2 tsp more chilli powder at this stage, mix well and switch off the flame.

  • Store in a box after the mixture cools down. Stays crispy and good for 2-3 days when stored in an air tight box.

    Note
    • Do not use raw corn flakes for this recipe. You should deep fry it or microwave before making mixture.
    • I used Kellogg’s brand corn flakes cereals,original flavor. 
    • Adjust the quantity of chilli powder as per taste. But keep the flame low while adding chilli powder else it will burn.
    • For variations, you can add raisins and cashews. Saute raisins till it bulges. I din’t use as my daughter doesn’t like it.
    • You can also add little chaat masala for more flavor.

    Birthday Party Recipes Menu Ideas – Indian Party Food Items List

    List of Indian food ideas for kids birthday party recipes menu at home / vegetarian food items list for birthday party dinner & Lunch – Organizing Children’s birthday party is really a challenging task for parents. Some people love to conduct an elaborate dinner or lunch party and some prefer to make a simple tea party by just providing cake and snacks based on their budget.

     Most of the people wish to keep the party in the evening or in the afternoon if its a weekend. Since its a kids party, many people stick to vegetarian menu if they have a mix of vegetarian and non-vegetarian guests.

    Be it a simple snacks party or an elaborate dinner/lunch party, choosing the cake, planning the menu, decoration of home/ party hall and arrangements would be tough for many especially beginners.
     
    So I have tried my best to help you choose the party menu. Birthday party food items should be attractive, kids friendly and healthy at least to some extent. Not just for kids, menu should be appealing to adults as well. Long back I had shared a simple kids birthday party menu idea after getting inspired from one of my friend’s party.

    After I made that post, I too got the confidence and started conducting simple birthday party at home for Raksha’s birthday. I got many mails from my readers to post more related to this topic. So today I have come up with the list of kids friendly, birthday party menu items list for Indian kids to help parents like me. I have also linked the recipes for reference. Its purely a vegetarian menu but you can find both South Indian & North Indian recipes.

    Non-vegetarians, please excuse me. You can get some ideas from this list and make fries, gravies, biryani with chicken, mutton and egg. I took the help of my friend Shalini to frame this list. As we live in apartments, we have the chance of attending many parties. Shalini is in US now. Being in abroad, her friends conduct some potluck, get together and parties during weekends to meet people and build relationships. So she could help me well with her own ideas.

     I have also got some menu ideas from my school moms friends. With the help of this list, you can decide the party menu based on your budget. You can cook the food on your own or buy from outside/ restaurants.You can also opt to make Jain food without using onion and garlic.


    All these pictures shared in this post are the ones I collected for years. The picture given below is the simple decoration I made at home for Raksha’s birthday party.

    I have categorized this list as Starters/Appetizers, Main course, Dessert, Drinks & Beverages that are suitable and loved by kids from 3 to 10 years. Basically kids love to have foods based on tomato, paneer, sweet corn, cauliflower, baby corn, bread, cheese and fruits. So I have given most of the dishes using these ingredients. These recipes would be surely a winner among the kids. 

    Friends, do make your own permutations and combinations according to your kids preferences and frame the party menu. Hope you all find this list useful.     In the above picture, you can find a sample of simple snacks party and the lunch party menu. If you are inviting kids without parents, you can give a simple party by giving a drink, starter/snacks, cake and a dessert. Finger foods is the best option for kids below 10 years. Skip the main course. To make it even more simple, you can just finish it with cake & samosa or veg puffs.  If you are inviting adults/parents, then you can go for wider options. Birthday party should be more of fun, hassle free and memorable. So you can arrange for small games, magic shows, music, dance to make the party more interesting.

    POINTS TO NOTE

    • Pastries are better than the cream cakes. So choose the cake accordingly.
    • Make less spicy food as you are cooking for kids. Parents will adjust/ compensate about the taste.
    • Kids prefer deep fried foods for starters. Gobi 65 or manchurian is the best choice.
    • They love the food more if its cheese, paneer and potato based.
    • Kids love to have poori more than roti.
    • Most of the kids love paneer butter masala and potato, peas kurma more than mixed vegetable kurma.
    • Always keep some plain rice, dal and rasam to tackle fussy kids.
    • If you arrange for dinner party, make some idli too.
    • Its always better to avoid aerated drinks like pepsi, 7up etc. You can give some fruit juices instead. No problem even if its store bought.
    • Gulab jamun would be the best dessert for Kids. No kid would say NO.
    • Ice cream is also a must for kids.
    • Keep some hot water ready. Many kids are allergic to cold stuffs like ice cream , chocolate and cakes. So you can tell the parents to give them hot water immediately after they eat ice cream/chocolates to prevent from cold, fever. I am sure this tip works.
    • Finally, do not force your kids to eat everything in the plate. Most of the kids love to eat the cake, starter and dessert. Do not worry about it. Parents can feed them later at their house if needed.

    Vegetable Bread Pizza is an easy and quick breakfast and snack recipes for kids.It tastes good with or without cheese.Actually Bread pizza can be made in 3 ways.It can be made without oven ie. in dosa tawa ( Stove top) or it can be baked in convection oven or microwave if you have at home. All are easy to make and tastes good in its own way.Its a great idea to use the leftover bread slices. I feel tawa and microwave options are easier as it takes less time to cook than baking in convection oven. But we should do it carefully as the chances of burning is more.This morning I prepared bread pizza recipe on stove top, oven and microwave just to make this post. I have shared all of the 3 methods below with a short video. Choose & try whichever is convenient to youHappy. I have used store bought pizza sauce and pizza seasoning/ spice mix. You can make it  just by using tomato ketchup & pepper powder. To make a pucca Indian version, sprinkle some garam masala powder or tandoori masala powder, marinated paneer cubes if you have in hand. You can top with lots of cheese for kids & without cheese if making for you & your husband ( If you are calorie conscious)Winking.Adding grated mozzarella cheese is just for attracting kids because taste of this pizza comes from the sauce, mixed vegetables and spice mix.Just play around with your favorite veg and non-veg toppings and enjoy it.     How to make bread pizza on tawa, oven and microwave Easy, yummy, kids friendly bread pizza recipe on tawa/stove top, convection oven and microwave methods

    Ingredients

    1 cup - 250ml
    • Bread slices - 5 nos
    • Grated Cheese - 1/2 cup to 1 cup ( I used Amul Mozzarella cheese)
    • Capsicum - 1 no ( finely chopped)
    • Big onion - 1 no ( finely chopped)
    • Ripe tomato - 1 no ( finely chopped)
    • Black Olives - 5 nos ( sliced)
    • Boiled Sweet corn - 1/4 cup ( optional)
    • Pizza sauce or paste sauce or schezwan chutney - as needed ( I used pizza sauce around 3-4 tbsp)
    • Pepper powder - 1/2 tsp
    • Salt - a pinch
    • Chilli flakes - 1 tsp ( optional)
    • Oregano mix or pizza seasoning mix - 1 tsp

    • Butter - to grease the tawa & bread

    Method

    1. To make bread pizza, wash and chop all the vegetables finely. Grate the cheese and keep aside.Take a bread slice and apply butter on both the sides.Keep in a plate.

    2. In a wide bowl, mix all the finely chopped vegetables, pepper powder, salt and pizza seasoning mix.Keep it ready.
      Take the bread slice and apply the pizza sauce on one side.Spread the mixed vegetables. Top with grated cheese. You can either cook them on tawa/pan, microwave or bake in convection oven.

    3. Bread pizza in tawa : Heat a dosa tawa and apply some butter. Keep the loaded bread slice.Cover cook in very low flame for 3-4 minutes or until the cheese melts.Remove in a plate and serve hot. Cover cook is very important. If you don’t cover cook, cheese won’t melt and bottom of bread slice may burn.

    4. Bread pizza in microwave : Place the bread slice in microwave and cook in high power( mine is 800w) for 1 minute or until cheese melts.If the power is less, it may take 1.5 to 2 minutes. If power is more, it can be done under 1 minute.So keep an eye.

    5. Bread pizza in convection oven : Preheat convection oven in 180c. Keep the bread pizza in a baking tray. Bake it for 5 minutes at 180c. Cheese melts and the sides of bread slice turns slightly crispy. Remove and enjoy !

    Note

    • The quantity of chilli flakes, pizza mix and pepper powder depends on our taste.
    • You can add any number of toppings like paneer, mushroom, jalapeno, sweet corn etc..
    • Do not cook the pizza on open tawa, it takes long time for the cheese to melt.
    • Microwave bread pizza takes very less time to cook.If you keep for more time, pizza would burn.

    Bread Roll Recipe – Potato Stuffed Crispy Bread Rolls Recipe

    I have few snacks recipes using bread in my try list for long time. So I started with this bread roll recipe and thought of trying them one by one to share in my blogHappy. This potato stuffed bread roll recipe is a yummy, kids friendly snack with their 2 favorite major ingredients – Potato and bread. Recently I tasted this bread rolls in a simple birthday party conducted in my neighbor’s house.It was a snack party.So she had served this bread roll with tomato sauce/ketchup,a cake slice, store bought potato chips and a glass of store bought drink. Bread roll was crispy outside and soft inside. When I asked about the recipe, she gave a gist about it. After getting the idea from her, I watched a chicken bread roll video in YouTube to find out how to make it crispy. I tried it last week for Raksha and her friends. I made some lemon popsicle too.     Elai Vadam Recipe – Ilai Vadam – Easy Rice Appalam In Banana Leaf

    Elai Vadam / Exhibition appalam – Rice papad / Arisi appalam made in banana leaf ( Vazhai ilai) was in my try list for the past few years. Whenever my fellow bloggers post this elai vadam recipe, I get tempted to try but I never got the confidence to try on my own. Recently my MIL prepared this ilai vadam using idli rice after watching Revathy Shanmugam mam’s cookery show in Jaya TV. Last week when she came to Bangalore, she brought some vadam to taste. She said its a time consuming process but the end result is worthy.Its taste reminded Delhi appalam we get in exhibition.We had this rice papad sprinkled with red chilli powder and we loved it very much.  

    My MIL told me the tradition behind this appalam making process.On those days, people in Tamilnadu villages used to make this rice vadam using Vadham ilai or Poovarasan ilai. This vadam is usually given for ladies after delivery ( Postpartum diet) as urad dal papad creates gas problem.This vadam is roasted in direct fire ( Sutta appalam) instead of deep frying in oil as deep frying makes it difficult to digest.The best thing about this vadam is it dries up quickly even under the shade. It takes one to two days to get ready based on the weather in your place. Overnight drying under the fan would be enough. I felt this vadam is ideal for places where there is lack of sunlight. 

    With the help of my MIL, I prepared this easy arisi appalam in Bangalore using raw rice. This vadam can be prepared with raw rice, idli rice or both in equal quantity. If you make it with raw rice, vadam comes out super light, airy and crispy whereas vadam made with idli rice comes out crunchy and very flavorful like store bought arisi appalam but slightly dense in texture. 

    In that case, you can add little sago( javvarisi) to bring the light texture. As I have thatte idli stand, this vadam process was completed within one hour. If you don’t have this plate it may take more time. You can buy thatte idli stand or elai vadam stand in the market if you are really interested to try this one.     Cook time: 60 Minutes

    INGREDIENTS
    1 cup - 250ml
    • Raw rice - 1 cup ( I used Maavu arisi/dosa rice)
    • Salt - as needed
    • Cumin seeds - 1/2 tsp
    • Water - As needed (I used 1/2 cup for grinding, 3/4 cup for mixing)
    HOW TO MAKE ILAI VADAM / RICE APPALAM - METHOD

    • Wash and soak the raw rice in enough water for 2 hours. Drain the excess soaked water completely and grind the rice coarsely without adding water. Then wipe the sides and add 1/2 cup water, required salt. Grind to smooth paste like maida. Please note there should not be any grits in the batter. It should be completely smooth. So grind patiently for long time. I used my Indian mixie for grinding the batter and it took 5 minutes. Grind in two batches.

    • Remove the batter in a bowl.Add cumin seeds. The consistency of batter should be slightly thinner than dosa batter.
    • Now take a banana leaf and spread the leaf inside the plate according to its shape.Add 1/2 ladle of batter and swirl the plate. Batter spreads all over the plate. If you don’t have banana leaf, just spread the batter directly in the plate & swirl/rotate it.It also works but its difficult to peel once its cooked. If you have 3 plate or 6 plate ilai vadam stand, follow the same and spread the batter in all the plates.

    • Heat water in an idli pot. When the water comes to roll boil, place the idli plate. Let it steam for 5 minutes. The color of batter changes to pale white & transparent after cooking. Remove the leaf from the plate and let it become warm. Peel the cooked vadam and spread in a cotton cloth( Dhoti) or in a polythene sheet. Do not put in newspaper. It will stick with it.

    • Let it dry in balcony or under the sun for one day. If you don’t have this option, dry it under the fan wind. When it dries up, it shrinks in size & changes in color slightly.
      After one day drying, it would have dried up to 75%. During night, keep it under the fan. If its crispy all over, its ready. If its soft in the middle, it needs more time to dry. So the next day, keep it under the sun & repeat the same till its completely moisture free. Store it in a box & use it for months. Stays good even for an year if prepared properly.

    • Heat required oil in a kadai to deep fry. Break the vadam into half & deep fry in oil. Flip & cook both the sides. Remove & drain in a tissue. Sprinkle red chilli powder on top & serve as an evening snack or with any variety rice !

    Note
    • The consistency of batter is very important. Do not make it too watery or thick.
    • You can make this vadam with idli rice instead of raw rice.
    • Steaming takes maximum 5 minutes.
    • Try to peel the vadam after its cooled down.
    • If the vadam turns golden brown after frying, it may be due to the quality of rice. In that case, you can try adding few drops of lemon juice in the batter and make it next time.

    Crispy Corn Cheese Balls Recipe – Indian Party Snacks Recipes

    Long back I have shared a recipe for Masala corn cheese balls in which all the spice powders, ginger-garlic paste are used. Its purely of our Indian style with all the masala flavor in it. Its made without potato. Cheese and sweet corn are the major ingredients.I used to make it for my guest and kids parties at home. Recently I came across this video of Corn cheese balls with Oregano & chilli flakes. I got tempted and tried it last Sunday for evening snacks. I followed my Aloo patties( Burger) recipe technique, coated the balls twice in maida paste and bread crumbs to get super crispy exterior. It came out very well. Use Panko crumbs for best result. Raksha liked it very much but she wanted the Indian masala flavor instead of Oregano. Then I made few balls adding garam masala powderWinking.Overall this recipe is a big hit in home. Friends, do try this recipe either with Indian masala or Italian seasoning based on your kids liking. Follow the same procedure and make this yummy, crispy corn cheese balls to celebrate kids birthday party, get together, kitty parties to serve as a starter.     Masala Peanuts Recipe – Masala Kadalai (Microwave & Deep fried Versions)

    When I was young, my dad used to buy this besan coated, red colored, deep fried, spicy, dry masala peanuts( masala kadalai in Tamil) and roasted green peas ( Kara Pattani ) that is sold in small packets along with cone ice cream in cinema theatres to munch on during interval time Nowadays we could find mostly popcorn & boiled sweet corn ( butter cup corn) in most of the theaters which I am not fond of. So we buy it only for my daughter Raksha. She likes Haldirams masala peanuts and moong dal as well. But I feel the quantity of salt is high in it. So I started making them at home either in microwave or by deep frying in oil depending on the time in hand. Mostly I make it for Raksha’s school snack box or for her evening snacks after coming back from school. Yesterday I prepared this masala peanuts for our teatime. I took a video recipe by making one batch in microwave and deep frying the other batch. Both came out really well, equally crunchy and tasty. Kids would like the deep fried version more than microwave ones. For people under diet or calorie conscious, you can opt for baked version in oven to cut down the calories.I have shared both of them with step by step pictures and a video below.     INGREDIENTS
    1 cup - 250ml
    • Raw peanuts - 1/2 cup
    • Besan flour / Kadalai maavu - 3 tbsp
    • Rice flour - 1.5 tbsp
    • Red chilli powder - 1 tsp ( Add 1.5 tsp for spicy taste)
    • Garam masala powder - 1 tsp
    • Ginger & Garlic Paste - 1/2 tsp
    • Salt & water - as needed
    • Asafetida/ Hing – 2 pinches
    • Cooking oil - 1 tsp ( to mix in the batter)
    • Cooking oil - to deep fry
    METHOD

    • Wash and soak raw peanuts in water for 15 minutes. Soaking helps to skin to remain intact with peanuts while frying. The masala won’t come off with the skin after frying. After soaking drain the soaked water completely.

    • Take them in a wide bowl and add the besan, rice flour, red chilli powder, Garam masala powder, Ginger & garlic paste, hing and required salt. Mix well. Then add water little by little and mix well till all the peanuts are well coated with the masala. Do not make the batter too thick or too thin. Now add 1 tsp of cooking oil all over the batter. Mix well and set aside.

    • For deep frying : Heat cooking oil to deep fry and drop a pinch of batter to check its temperature. When its hot, it will rise to the top immediately. Now sprinkle the masala coated peanuts in oil and deep fry till it becomes golden in color and crunchy. Cook in medium flame and toss them in oil whenever needed, cook till bubbles cease. Remove in a tissue paper.

    • For microwave version : Grease a microwave plate with oil and spread the masala coated peanuts in the plate.You can spread them directly on the glass plate inside the microwave.  Microwave in high power for 6-7 minutes and cook till its roasted. Keep an eye to avoid burning of peanuts. You should remove the plate once in the middle( after 3 minutes) and flip them to cook the other side as well. Again microwave for 3-4 minutes. Mine took totally 7 minutes in 800w power. Roasted Peanuts will be soft to touch when hot. But it will become very crispy once it cools down. So let it cool down completely before you munch. Serve with tea !

    • Adjust the quantity of spice powders as per your taste buds.
    • If you don’t have enough time for soaking, just wash the peanuts and mix all the flours in the wet peanuts and proceed as given above.
    • Timings in microwave depends on the power of microwave. So please keep an eye. It will burn off suddenly.
