Ingredients

  • Coriander leaves / Kothamalli
  • Mint leaves / Pudina
  • Curry leaves / Karuveppilai
  • Pirandai / Adamant creeper
  • Karisilankanni leaves
  • Coconut / Thengai
  • Red chilli
  • Toor dal, Moong dal / Paruppu
  • Urad dal
  • Brinjal
  • Keerai
  • Tamarind
  • Jaggery
  • Pepper corns
  • Garlic cloves
  • Cooking oil
  • Mustard seeds
  • Salt
  • Water

Instructions

  • To make any basic thogayal recipe, roast urad dal, red chilli and hing in 1 tsp of cooking oil.
  • Add the greens or coconut or any vegetables you are using. Saute well.
  • Switch off the flame and let it cool down.
  • Grind everything with required tamarind, salt and water to a thick, smooth or coarse paste as you like.
