Roadside chutneys are often made with a watery consistency, making them budget-friendly and ideal for serving large crowds. But honestly, that’s what makes them so good! There’s nothing like dunking a couple of hot idlis into a big pool of chutney and just enjoying it. In Bangalore and pretty much all over Karnataka, even popular hotels serve that classic watery white coconut chutney and the spicy red kara chutney.

Personally, I’ve always loved the taste of chutneys from small roadside hotels way more than the ones served in fancy restaurants. There’s just something about that street-style flavor that hits different. So I’m always trying out different versions of these chutneys I come across online — whether it’s from Google or some random YouTube video. It’s kind of a fun obsession at this point!

One such recipe is this roadside hotel style kara chutney recipe without using coconut. Tomato, onion, garlic, red chilli and salt are the major ingredients of this kara chutney recipe. Idli batter is used as a thickening agent. Some people add besan flour or roasted gram flour (pottukadalai maavu) instead of dosa batter. But I feel the addition of idli dosa batter is enough to give a mild thicker consistency to serve with idli, dosa. Ingredients
  

  • 3 Tomato
  • 2 Big onion
  • 10 Small onion / Shallots
  • 2 to 3 Red chilli
  • 2 Byadgi red chilli / Kashmiri chilli
  • Tamarind Small piece
  • 5 Cloves Garlic
  • 1 tbsp Idli, dosa batter
  • Salt As needed
  • Water As needed

To Temper

  • 1 tbsp Sesame oil OR Cooking oil
  • 1 tsp Mustard seeds
  • 1 tsp Urad dal
  • 1 strip Curry leaves

Instructions
 

  • In an Indian mixer jar, take the chopped onion, shallots, garlic cloves, red chilli, chopped tomato, tamarind, salt & water. Grind smooth and set aside.
  • Heat oil in a kadai. Splutter mustard seeds, urad dal, curry leaves.
  • Add ground chutney and mix well till oil starts releasing. Add 1/2 cup water and roll boil for few minutes till raw smell goes away completely.
  • Take dosa batter in a small bowl and add little water to dilute it. Add to the boiling chutney and mix well.
  • Boil for few minutes till it becomes slightly thick. Switch off the flame and serve hot with idli, dosa.

Notes

Adjust the quantity of red chilli as per your taste.
Byadgi chill is used to give bright red color to this chutney Whereas Guntur chilli is for spice. 
Adding equal amount of tomato, onion gives a nice flavor to this chutney.
Tamarind is added to give a countereffect for tomato. It helps to balance the tanginess.
For variations, you can add a small piece of jaggery.
