Rasam recipes / Rasam varieties for rice are a must in any South Indian everyday meal. In our home, lunch is never complete without a hot bowl of rasam, rice and a simple vegetable side dish. I have shared nearly 20 different types of rasam that are pure vegetarian since 2009. Some are my mom’s spicy Tirunelveli / Nellai-style rasam recipe and others are traditional Thanjavur / Tanjore-style from my mother-in-law.

While most of them are Tamil nadu style rasam recipe, I have shared a few Kerala, Karnataka and Andhra style rasam recipes as well. You can mix these rasam with hot, mashed rice and a little ghee or simply drink them hot from a tumbler like a soup. Ingredients
  

  • 1 tsp Tamarind (Small gooseberry size)
  • Salt & water as needed
  • ¼ tsp Turmeric powder

Homemade Rasam Powder

  • ½ tsp Pepper corns
  • 1 tsp Cumin seeds
  • ½ tsp Coriander seeds optional
  • 1 Red chilli
  • 5 cloves Garlic

To Temper

  • 1 tsp Ghee
  • ½ tsp Mustard seeds
  • ¼ tsp Cumin seeds
  • ¼ tsp Asafetida / Hing
  • 1 tbsp Coriander leaves to garnish

Instructions
 

  • Soak tamarind and take extract with 1 cup of water.
  • Take the tamarind extract in a bowl. Add salt, turmeric powder and boil for few minutes.
  • In the mean time, coarsley grind the ingredients given under “homemade Rasam powder”.
  • Add this powder to the boiling rasam and little water. Mix well.
  • When the rasam starts to boil and becomes frothy, switch off the flame.
  • Close it with a lid.
  • Temper mustard seeds, cumin seeds and hing in ghee.
  • Add to the rasam and garnish with chopped coriander leaves.
  • Enjoy with plain rice !
