Its been a long time I shared an eggless mug cake recipe in microwave. After trying some one minute & 5 minute cake successfully, Iam much more comfortable & confident in trying out recipes like this. Its my long time wish to try out one minute vanilla cake as it is my most favourite flavour. I have been searching for the same and I finally found it here. It came out super soft and spongy with a lovely vanilla flavor. Try this easy cake recipe for your kids during this summer vacation. It is going to be an instant hit in your family. Let me know your feedback ! 

Note: You should consume the cake immediately after baking because the bottom of cake may turn slightly chewy due to the heat of the bowl. So please keep this in mind.

INGREDIENTS

  • All purpose flour/Maida - 2 tbsp
  • Sugar - 1.5 tbsp
  • Cooking oil - 3/4 tbsp  (any odourless oil, I used sunflower oil)
  • Milk - 2 tbsp
  • Baking powder-1/4 tsp
  • Vanilla essence- 1/4 tsp ( Increase based on your taste)
  • Salt – a small pinch
METHOD

  • In a bowl,take maida,sugar,baking powder and salt. Mix well. To this add the wet ingredients like Milk, oil and vanilla essence. Mix well without lumps and make sure sugar is melted. The batter will fall like a ribbon. It is the right consistency of batter.

  • Now pour the batter into a microwave safe bowl. I used a porcelain/ceramic mug. The size of mug should be at least double the size of batter. Microwave it in high power ( 800w) for 1 minute. Adjust the timings based on the power of your microwave.The batter will rise till the brim and again goes in. So don’t scare. It won’t spill.

  • Check with a tooth pick. If it comes out clean or with little crumbs, cake is done. If you find wet batter in the tooth pick, bake it for 10-15 seconds more. 
  • Serve it warm and enjoy !
Note : You should consume the cake immediately after baking else the bottom of cake may turn slightly chewy due to the heat of the mug. If you don’t want to consume immediately, transfer the cake to another bowl and use it later.


Note

  • Make sure sugar is melted completely before you bake. So mix well for 2-3 minutes.
  • U can use powdered sugar but I am not sure with measurements.
  • U should consume the cake immediately to enjoy its best taste.

French Fries Recipe | Crispy Homemade French Fries

Recently I saw my friend buying a packet of frozen french fries to fry it using her newly bought air fryer. It tempted me to try french fries at home. The success of my McDonalds Veg Burger recipe & KFC style veg strips recipes made me confident enough to try this most popular, kids favourite french fries recipe too. I googled so many recipes & videos to make a perfect homemade french fries. As I mentioned in my homemade potato chips post, you need to use the right potatoes to get crispy McDonalds style french fries. People in abroad can use Russets or baking potatoes. 

In India, we get red colored potato covered with mud. It is called as chips potato. U have to use that variety for best results. If you have these potatoes in hand,just carry on with this recipe. You can make it perfect as shown in the picture. Here I have just sprinkled salt like in restaurants. U can also season them with organic spices if you wish. And if you are health conscious, you can opt for baked version too. I have given the temperature settings in the method section. 

When I tasted these fries, I reminded my daughter Raksha. She is in Salem for vacation. She loves these fries a lot and today I missed her very badly. I should make it again as soon as she come here. Ok, Lets see how to make crispy,homemade french fries recipe with the picture of potato I used.

Homemade french fries recipe How to make crispy french fries at home easily using 3 methods.

INGREDIENTS

  • Red colored potatoes - 2 nos (Big oblong shaped)
  • Salt - as needed
  • Ice cold water or water at room temperature – as needed
  • Cooking oil - to deep fry
HOW TO  MAKE FRENCH FRIES - METHOD

  • Wash and peel the skin of potatoes.Cut them into 1/2 inch thick slices and then into thin strips of uniform size.

  • Wash the strips in plain water or ice water for 2 –3 times to remove the excess starch content. Boil 2 cups of water in a pan. Switch off the flame and soak the potato strips in it for 5 minutes. No need to cover the bowl. Drain the water completely. Pat it dry in a clean kitchen towel. Leave it open for 5 minutes. Make sure there is no water in the strips and it should be completely dry.

  • Heat oil till medium hot and deep fry the potato strips for 2 minutes in medium flame. It would be oily and soft. Make sure the colour of potatoes are white.Remove & drain them in a tissue paper. Let it cool down completely. Store in zip lock bags and freeze them for later use. If making immediately, follow the next step.

  • Again heat oil till its well heated but not smoky. Now deep fry the potato strips for the second time till it becomes crispy and golden. Keep tossing them for uniform cooking. Remove in a tissue and sprinkle some salt. Serve with tomato sauce.

  • NOTE : If  you want to make them in bulk and store it for later use, after frying for the first time, remove and cool down completely. Store them in a zip lock cover and freeze it till use.Whenever you want to make it, heat oil well and deep fry them. Oil may sizzle & splutter as the potatoes are frozen and coated with ice. So fry them carefully till golden and crispy and serve hot.
  • Baked version : Follow the same steps till  you pat dry the potato strips in kitchen towel. Preheat the oven in convection mode at 200c. No need to cook the potatoes. Arrange the strips in a baking plate and drizzle some oil all over them. Sprinkle some salt or organic seasoning. Bake them at 200c for 25-30 minutes OR till they become crispy. Remove and serve hot.Soon I will try to make a separate post for this baked version.

Note
  • Follow any of the above discussed methods based on your liking.You will get crispy french fries.
  • To make these fries more flavourful, you can sprinkle garlic powder, thyme, basil etc.
  • Use Red colored mud coated potatoes for best results. Other potatoes may turn brown quickly while roasting.
  • Washing the potatoes twice is to remove the extra starch content in the potatoes. It helps you get nice color to the fries.

Jam biscuits also known as thumbprint cookies is a kids friendly cookies recipe.Summer Vacation is started for my daughter Raksha.She keeps asking me to make some snacks to munch while watching TV.So I baked these cookies for her yesterday.I tried these biscuits for the first time and it came out really well.With melt in mouth texture and awesome vanilla flavour, these jam drop cookies were yummy.Its taste was close to butter biscuit/Nankhatai.So this biscuit would be surely a hit among the kids and elders as well.No doubt my daughter liked it to the core and finished one batch of cookies in few minutes.She called it as "Jim Jam" biscuits.You can try this cookies for small parties,get together and for picnic as well. INGREDIENTS
1 cup = 200 ml
  • All purpose flour/maida – 1 cup
  • Sugar - 1/4 cup
  • Custard powder – 1/2 cup
  • Corn flour – 1 tbsp
  • Curd – 1 tbsp (semi solid)
  • Butter – 1/2 cup
  • Vanilla essence – 1 tsp
  • Mixed fruit jam - as needed
METHOD

  • Powder 1/4 cup of sugar and take in a wide bowl.U will get 1/4 cup + 1 tbsp pwd sugar.Add softened butter( at room temperature) and vanilla essence to it.Whisk it well till creamy.In a bowl,take maida,corn flour and custard powder.

  • Mix well and add this to the beated butter,sugar mixture.Fold it well and try to make a dough.Add 1 tbsp of curd and mix well.Make a stiff dough.No problem if there are mild cracks in the dough.No need to knead or beat the dough.Handle it gently.

  • Melt the jam in microwave high power for 30 seconds to 1 minute.I kept in 800w power for 1 minute.

  • Now take an orange sized ball from the dough.Roll it into 1/2 inch thick chapathi using a rolling pin.Dust it with maida if needed.Cut the cookies into desired shape using mould.Remove the cookies and arrange in a greased baking tray.( I greased the tray with few drops of oil) Make a small dent in the center of cookies using your forefinger, thumb finger or a bottle cap.Fill the dent with the jam.Put only few drops of jam because it may melt while cooking and spill in the sides.You can also put the jam just before 2 minutes at the end of baking .Its your choice.

  • Preheat the oven in convection mode in 180c.Bake these cookies in 180c for 18-20 minutes till the sides turn light golden brown color.Remove the tray and let it cool.

Take the cookies and store in a box.Enjoy !

Note
  • For variations,u can try with wheat flour.
  • I am not sure of replacing butter with oil.Instead u can replace half of the butter with apple sauce.
  • I used mixed fruit jam.It gives the best taste than other flavors i guess.
  • I baked half of the cookies by filling jam in the beginning and half the batch by adding jam at the end.Both tasted good.

Paneer cutlet without potato using Instant Poha mix from Mother's recipe is my second entry for Mother’s Recipe Innovative Cooking Challenge Contest. I used their Instant Poha Mix/Aval upma mix for making this cutlet recipe and it turned out awesome. Actually speaking, I wanted to try Paneer cutlet Recipe without Aloo/Potato for a long time.I am so happy i was able to achieve it with the help of this poha mix. Like potato, poha (rice flakes) is also one of the best binding agents for cutlet. As I have followed this in my Mc Donald’s burger recipe, I tried this cutlet recipe using Instant Poha mix very confidently. As I expected, the result was great! My daughter and My better half loved it to the core.With crispy exterior and soft interior, it was just perfect. As the poha mix had all the seasoning ingredients, it made my job simple. I just cooked the mix adding spice powders, mashed paneer and made these cutlets quickly and easily. Its an yummy evening snack recipe for kids and that too without potatoes. Thanks to Mother’s Recipe for giving this opportunity to Indian Food Bloggers and make us think different and innovative through this Challenge. Here I have deep fried the cutlets.You can go for shallow frying in a pan and make it as a low calorie snack.You can also opt for baking and make it even more healthy without oil. I have discussed baking method too. For variations, you can add boiled corn kernels and mixed vegetables too.Ok, lets see how to make this paneer cutlet recipe using Instant Poha Mix.

INGREDIENTS
1 cup - 200ml
  • Mother's Recipe Instant Poha Mix - 200 gms( 1 packet - Poha- rice flakes ) Or Plain Poha 
  • Water - 400 ml
  • Grated paneer – 3/4 cup ( Cottage cheese, around 100gms)
  • Big onion - 1 no
  • Ginger-Garlic Paste-1 tsp
  • Red chilli powder - 1 tsp
  • Dhania powder - 1/2 tsp
  • Garam masala powder -1/2 tsp
  • Aamchoor powder –1/4 tsp
  • Turmeric powder - 1/8 tsp
  • Maida-1 tbsp
  • Salt - as needed
  • Mint & coriander leaves - 2 tbsp ( each,finely chopped)
  • Cooking oil - to fry
To coat the cutlets
  • Corn flour - 1/4 cup
  • Water - as needed to make thick batter
  • Bread crumbs & Powdered corn flakes( only for baking ) - 1 cup or as needed
METHOD

  • Take the paneer & grate it using a fine grater or mash/crumble it well using your hands.Set aside.
  • Heat oil in a kadai and saute the finely chopped onions.Add the g&g paste and saute till its raw smell leaves completely.

  • Now add 2 cups( 400 ml) of water with little salt( the mix had salt in it.So use less) and allow it to boil.When it comes to boil,add the poha mix ( Rice flakes mix).Mix well & cover cook it for 8-10 minutes in medium flame.Mix it once in the middle.Poha will be cooked well & becomes mushy.All the water will be absorbed. If you are not using poha mix, you can add plain poha soaked in water for 20 minutes.

  • Now add the grated paneer & mix well.Add turmeric powder,red chilli pwd,dhania pwd,garam masala powder & amchoor powder.Mix well,add maida,mix well.Let the mixture become a whole mass like dough.Switch off the flame.Lastly add the finely chopped coriander and mint leaves.Mix well.Check for salt.Squeeze in little lemon juice and allow the cutlet mixture to cool down.

  • In the mean time,take the corn flour,add water and make a slightly thin like dosa batter.Take the bread crumbs in a plate.( For homemade bread crumbs,just powder the brown part of bread and use as such.I did this way)

  • Take a medium orange sized ball from the cutlet mixture and pat it.Dip it in corn flour batter & then in bread crumbs.Do this twice to get a super crispy exterior.
  • Heat oil to deep fry or shallow fry and drop the cutlets.Fry them till golden brown by flipping it whenever needed.Remove & drain it in a tissue.Serve with ketchup/tomato sauce.
  • For baking,make the cutlet mixture as mentioned above.Dip it in corn flour batter,then in powdered corn flakes & finally in bread crumbs.Repeat it twice.Now preheat the oven in 200c and bake the cutlets in 200c,convection mode for 10-15 minutes in one side.Flip it and again bake them for another 10-15 minutes.Remove & serve hot.

To use plain poha/Aval/Rice flakes, take 1 cup of poha ( thick rice flakes),wash & soak it for 20 minutes till it turns soft.Add cumin seeds while sauting onions & proceed as mentioned above.

Gobi Manchurian Recipe-How To Make Crispy Gobi Manchurian

I usually make Gobi Manchurian following my baby corn manchurian recipe. This time, for a change I tried crispy gobi manchurian recipe from Bharatz kitchen after getting tempted by the title. He had mentioned as “Crispiest Gobi Manchurian” with a clear video recipe. Usually in manchurian, Gobi turns soggy & soft immediately after mixing with gravy/sauce. But as he mentioned, this one stayed crispy for 30 minutes i.e till my photo session was over. This recipe really works well and tastes similar to the restaurant ones.

Some pre preparation work is needed for this recipe but its all worthy. If you don’t want to make gravy , simply skip the corn flour in sauce part and make it as gobi Manchurian dry version. It tastes even more crispy like street style ones. Soon I will post that recipe too. As Bharat explained, the secret of making crispy Manchurian lies in 2 things. 

One, you have to use small sized florets for deep frying. Do not use bigger size florets. This makes a great difference in the texture. The second thing is, you have to deep fry the florets twice. Anything when deep fried twice gives you the best crispiness. My MIL usually tell this to me and I have experimented the same with my masala vada & urad dal vada too. Deep frying twice helps to maintain the crispiness for long time. The same formula is applied here. But one thing, I should warn you here. Oil absorption will be slightly more than the usual deep frying as we are doing it twice. So use oil absorbent/Tissue paper & keep changing it whenever needed. Also work out more to burn the additional calories ;).

Gobi manchurian recipe Gobi manchurian - An yummy starter recipe !

INGREDIENTS

  • Cauliflower florets/Gobi pieces – 25-30 nos ( small sized)
  • Corn flour - 2 tbsp
  • Ginger-garlic paste - 1 tsp
  • Pepper powder - 1 tsp
  • Salt - little
  • Water, turmeric powder & salt - as needed to boil gobi
  • Cooking oil - to deep fry
For the batter
  • Maida/All purpose flour - 1/2 cup
  • Corn flour – 1/4 cup
  • Red food color – a pinch ( optional, I dint use)
  • Salt & water -as needed ( I used 1/2 cup water)
For the sauce/Gravy
  • Cooking oil - 1 tbsp
  • Finely chopped garlic cloves - 5 nos
  • Ginger - 1/2 inch piece ( finely chopped)
  • Big onion - 1 nos (-do-)
  • Spring onion - 2 sprigs (-do-)
  • Capsicum - 1/4 no (-do-)
  • Red chilli powder - 1/2 tsp ( use 1 tsp to make it very spicy)
  • Pepper powder – 1/2 tsp
  • Sugar – 1/4 tsp
  • Salt - as needed
  • Sauce mix ( Recipe follows)

  • Corn flour - 1.5 tsp
  • Water - 1/2 cup
  • Tomato sauce - 1 tbsp
  • Soya sauce - 1 tsp
  • Chilli sauce - 1/2 tsp
HOW TO MAKE GOBI MANCHURIAN - METHOD

  • Remove small sized florets from the cauliflower. Suppose, if you have removed them big,just cut them into small sized florets ( not too small). This is very important to get crispy gobi manchurian. Now boil the gobi in water mixed with turmeric powder & salt for 3 minutes. Remove and drain all the water immediately using a colander. Show it under running water to stop the gobi being cooked. It should stay firm.

  • Now add pepper powder, corn flour, G&G paste and little salt to the washed cauliflower florets. Mix it well & refrigerate it for 30 minutes. In the mean time, finely chop all the ingredients needed for sauce & keep the sauce mix ready by mixing corn flour & other mentioned ingredients in water & keep it lumps free.

  • Take a wide bowl and add maida, corn flour, salt and mix well. Add water to make a slightly thin batter like dosa batter. Now remove the florets from fridge & mix it with batter. Make sure all the florets are well coated with the batter.

  • Heat oil in a kadai and when it gets heated, put the florets one by one and deep fry them in medium flame for 2 minutes till they are 3/4 th cooked. Do not toss for one minute. Then stir well and cook till its 3/4th cooked. Do not wait for the bubbles to cease or the cauliflower turns golden brown because we are going to deep fry again. So remove the florets when they are still white in color. Drain in a tissue.
  • Again heat the oil for some more time but not smoky and add the florets now. Deep fry them till they turn golden brown & crispy. Bubbles will cease now. Now remove & drain in another tissue. You will find the gobi to be super crispy now. Have a bite n see, hehe (if you don't want to deep fry twice, just fry it till it becomes golden brown and crispy & proceed).

  • In another pan, heat 1 tbsp of oil & saute all the finely chopped veggies. Mix well adding some salt & sugar. Now add the sauce mix, red chilli powder & pepper powder and let it boil till the gravy reduces to half. Lastly add the deep fried gobi pieces, saute quickly and coat it well. Switch off the flame. Garnish with finely chopped spring onions & remove.

Note
  • Deep frying twice is very important to get crispy manchurian. But it absorb more oil . So use tissue/absorbent paper.
  • If you don’t want to feep fry twice, you can just fry it once but you should do it till gobi turns golden brown & bubbles in the oil ceases.
  • If you want to try this as gobi machurian dry version, omit the sauce mix and add a tbsp of tomato sauce, 1/2 tsp of soya sauce & 1 tsp of red chilli powder after sauteing the onions & capsicum. Mix well & add the gobi pieces, mix well & serve immediately. Do not use corn flour paste here.
