Drumstick Leaves Soup | Murungai Keerai Soup Recipe

Drumstick leaves is a super healthy green variety. Its called as Murungai keerai in Tamil, Nugge soppu in Kannada, Moringa leaves in English, Sahajan ke patte in Hindi, Murinna ila in Malayalam. It has amazing health benefits. So I wish to include in our diet at least once in a week. Usually we make sambar, poriyal or adai with murungai keerai.

Recently I tried Murungai keerai kootu and this soup recipe. Both came out very well and tasty. In fact we loved this soup more than kootu and poriyal as it tastes tangy and spicy like rasam. More than soup, you can call it as murungai keerai rasam. Murungai keerai soup has lots of health benefits. It is easily digestible when compared with cooked whole greens. This soup is rich in Calcium, Iron, Pottasium and Vitamin A.

For healthy variations, people add boiled moong dal, coconut milk etc. But I made a simple version as suggested by my neighbor. I also referred Sharmis passions. For some people, drumstick leaves may be hard to digest. It increases the Pitta of our body and leads to vomiting and diarrhea. Even I have this issue. So for people like me, this soup is a boon. Its easy to digest and you can reap all the benefits of drumstick leaves.

The best time to consume this soup is around 11 am or in the early evening around 3pm. It helps for easy digestion and absorption. You can take this soup twice in a week or in alternate days if you like.

INGREDIENTS

  • Drumstick leaves - 2 cups
  • Ghee - 2 tsp
  • Cumin seeds - 1/2 tsp
  • Crushed garlic - 10 cloves
  • Small onion - 10
  • Tomato - 1
  • Pepper powder - 1/2 tsp ( as needed)
  • Salt & water - as needed
HOW TO MAKE DRUMSTICK LEAVES SOUP
  1. Clean the drumstick leaves by removing its stem. Wash it thrice. 
  2. Heat ghee and splutter cumin seeds, crushed garlic.
  3. Saute finely chopped onion till transparent. Add tomato and saute till mushy.
  4. Now add the washed and squeezed drumstick leaves. Mix well for a minute.
  5. It shrinks in size. Add little turmeric powder and sugar to maintain its green color.
  6. Add 3 cups of water and let everything boil till leaves are cooked and water reduces to 1 cup.
  7. Remove and add pepper powder. Serve hot. You can also filter the soup through metal strainer and enjoy the stock.
  8. Healthy and tasty Drumstick leaves soup is ready.
METHOD - STEP BY STEP PICTURES
  • Clean the drumstick leaves by removing its stem. Wash it thrice and set aside. Wash and chop onion, tomato finely and crush garlic.

  • In a kadai or bowl, heat ghee. Splutter cumin seeds and crushed garlic. Add chopped onion and saute till transparent.

  • Add tomato and saute till mushy. Now add the washed and squeezed drumstick leaves. Mix well for a minute till it shrinks in size. Add a pinch of turmeric powder and sugar to maintain its green color if you like.

  • Lastly add 3 cups of water and allow everything to boil in medium flame and cook together till water reduces to 1 cup. By this time, keerai will be cooked soft too.

  • Switch off the flame and serve as such adding some pepper powder OR you can strain the soup in a steel filter and serve the stock adding pepper powder. Healthy and tasty drumstick leaves soup is ready.

I tried this Indian style Pumpkin soup recipe ( manjal poosanikai soup in Tamil, Kaddu ka soup in Hindi)  using Wonderchef soup maker. When I received their recently launched soup maker for the review, I was very happy to see the product and packaging. It was so good and easy to use with 5 different modes for making smooth soup, chunky soup, making compote, juice and blend mode.

This evening I tried making pumpkin soup in the automatic soup maker. I loved the smoothy, creamy end result. All it takes is just 20 minutes to cook, blend and make a delicious soup. This automatic soup maker does the job of a pressure cooker and mixie. Yes it cooks the vegetables to smooth or chunky pieces as per the selection of the mode and grinds well to make it creamy and thick. Ok, lets see about this product in detail below.

As pumpkin tastes bland, I used bayleaf, onion and garlic sauteed in butter to lend some flavor. We liked it very much. So this is purely an Indian style recipe without using fresh cream. Hope you will like this easy pumpkin soup recipe.

Pros :
  • The look of this product is good. It looks modern and not so big for this capacity.
  • It does the job of a pressure cooker and blender which is very much comfortable.
  • This product gives a beep sound once the process is over. So you can relax.
  • You can easily make the soup or juice for a family of 4 to 5.
  • Operating time is lesser for this quantity.
  • It has a hassle free operation.
  • There is no need to strain the soup. So the fiber is retained in the dish.
  • It has an option to make compote for babies without touching the food.
  • Its more hygienic too.
  • We can make homemade soup with our own combinations. You can make it more healthy without any preservatives unlike store bought readymade soup packets !
Cons :
  • The first thing that strike my mind is the quantity/capacity of this product. We should make minimum 1.3 liters of soup which I felt too much for a 3 member family like us. It would be ideal for 6 to 10 people. For us, it comes to 2 servings each. I felt it would be better If Wonderchef can bring a smaller size in this product.
  • There is no reheat or warm mode in this product.
  • There is no indicator/led light to show the machine is ON. We should identify its under operation only with the sound.
  • There is no Saute option.So if a soup recipe calls for sauting the spices and vegetables, we should do it separately in a kadai and transfer to the soup maker.
  • Costwise it is slightly lesser than Philips and Morphy richards.

How to make pumpkin soup using Wondechef Automatic soup maker

INGREDIENTS

1 cup - 250ml
  • Yellow Pumpkin pieces - 2 cups
  • Water - 4 cups
  • Butter - 1 tbsp
  • Bayleaf - 1 no
  • Big onion - 2 nos
  • Garlic cloves - 6 nos
  • Salt - as needed
  • Pepper powder - as you like
  • Fresh cream – 1 tbsp ( to garnish, optional)

METHOD

  1. Wash and peel the skin of pumpkin. Chop into small pieces and set aside.
  2. In a kadai, heat butter and saute bayleaf, onion and garlic cloves.
  3. Add pumpkin pieces to it. Saute well till raw smell goes off.
  4. Add water, salt and transfer to the Wonderchef Automatic soup maker.Cover with a lid.
  5. Switch on the machine. Press mode button and select Smooth soup option.
  6. It beeps and starts processing. It gets switched off after 20 minutes with a beep.
  7. Open carefully and transfer to a bowl. Add pepper powder, fresh cream and serve hot !

METHOD - STEP BY STEP PICTURES

  • Read the instruction manual before you start with. Wash and slice the skin of pumpkin.Discard it. Now chop the pumpkin into small pieces. Chop onion and garlic cloves finely.

  • Heat butter in a kadai. Saute bayleaf. Add onion and garlic cloves. Saute till transparent. Add Pumpkin pieces and saute till its raw smell goes off. Saute for 5 minutes.

  • Now add water, salt and transfer everything to the Wonderchef Automatic soup maker. If you don’t have the soup maker, you can make everything in the base of pressure cooker and cook it for 2 whistles in low flame, grind to a smooth paste, add pepper powder and serve hot !

  • For soup maker : After you transfer the pumpkin to the soup maker, cover with the lid.Switch on and press the MODE button. When you press repeatedly, you can see the selection of different options. Press till SMOOTH button flashes. If you like chunky soup, you can select CHUNKY option.
  • Press START BUTTON. Process starts and finishes automatically. Steam releases from the mouth of the jug. You can just sit and relax till it beeps. While it blends the soup, you will hear the sound of a mixie. Do not panic like me , hehe. Approx. it took 20 minutes for the process to complete.
  • After the process gets over, you will hear a BEEP sound. Open the lid carefully because steam comes out vigorously. Do not show your face while opening the lid.Transfer the soup to the bowl. Add pepper powder, fresh cream if you like. Serve hot with any bread, grilled veg sandwich !

Ginger Carrot Soup Recipe Without Coconut Milk | Indian Vegetarian Soup Recipes

Ginger carrot soup recipe is a perfect, soothing, Indian vegetarian soup recipe for Winter season. I have never imagined a soup recipe beyond tomato soup and sweet corn soup so far. Other than this, I have tried Veg clear soup with wontons in a Chinese restaurant and tomato shorba in a North Indian restaurant. 

Last week when I was talking with my friend Shalini, she was suggesting me to try this healthy ginger carrot soup by sharing her recipe. This recipe is without coconut milk and milk. So Vegans can try this recipe adding olive oil instead of butter. Even weight watchers can have this soup as it is prepared with ginger.  I have heard about this soup but I had no idea of how it tastes & looks. I thought this soup might be having a sweet taste because of carrot and I was hesitant to try it. 

On the same day, I got a mail from the editor of Daily thanthi newspaper asking me to share some interesting soup recipes for Monsoon. I tried this soup with a 50-50 mind set. But to my surprise, it came out extremely well. Sendhil & Raksha were full of praise. The smell of butter and spices with the mild ginger flavor were awesome. 

For Vegan version, replace butter with olive oil. Non-vegetarians can use chicken stock instead of vegetable stock. I happily clicked the picture of this soup and shared the recipe with the editor. It was published on last Sunday Chennai edition. I was waiting for Karthigai deepam celebrations get over to post this yummy & rich, creamy carrot ginger soup recipe in my blog. INGREDIENTS

  • Butter - 1 tbsp (Olive oil for Vegan version)
  • Carrot - 1 Big sized
  • Ginger - 2 inch piece
  • Big onion - 1/2 no
  • Garlic cloves - 5 small
  • Bay leaf - 1 no
  • Cinnamon - 1 inch piece
  • Salt - as needed
  • Water  or vegetable stock - 2 cups ( adjust)
  • Sugar - 1/4 tsp
  • Pepper powder - as needed
  • Fresh cream - 1 tbsp (optional)
METHOD
  • Wash and chop the carrots into slices. Chop onions, ginger and garlic cloves. Heat a pressure cooker base adding 1 tbsp of butter (Use butter for best taste,Vegans can use olive oil).Saute bayleaf and cinnamon for a second. Add the chopped onions,ginger,garlic and carrot pieces.Saute for a minute.

  • Lastly add 2 cups of water and required salt. Pressure cook in low flame for 2 whistles till carrots are done. Open the cooker after the steam is released. Drain the excess water in a bowl.
    Take out the bay leaf and cinnamon from the cooked mixture and add it to the drained water.

  • Let the carrot mixture cool down. Grind them into a smooth paste adding reserved water. Strain the ground paste using a metal strainer. Use a spoon & mix well to strain it thoroughly. It will look like a paste while you strain. Add it to the reserved water and boil the soup for few minutes adding sugar,salt and pepper powder.  Add little water if necessary.

  • Lastly add the fresh cream,mix well and switch off the flame. Serve Hot !! Enjoy this flavorful, soothing Carrot Ginger Soup with your family:)

  • Adjust the quantity of pepper powder as per your taste.
  • You can skip cinnamon if you don’t want more spices.
  • This soup can be had directly without straining to get a creamier taste.
  • Instead of carrot, you can use pumpkin.
  • Fresh cream is completely optional.But don’t skip butter if you are not a vegan. It gives a great flavor to this soup.

Sweet Corn Soup Recipe With Fresh Corn, Milk - Indian Soup Recipes

Sweet corn soup with fresh corn, milk and corn flour with step by step pictures. I never thought sweet corn soup is so easy to make until I try it on my own.We are a big fan of tomato soup recipe. Whenever we visit restaurants ,our order would be one and only tomato soup. So I make the same at home too. I never thought of making other soup recipes. 

Recent days I have been getting requests to post more soup and weight loss recipes. Especially my school friend Jayarani has been urging for long time to do it. So I started with this easy sweet corn soup recipe. I referred a cook book and tried this restaurant style sweet corn soup recipe. Sendhil and Raksha loved it a lot. I was surprised when Raksha asked me for second serving. 

Generally sweet corn soup is prepared with creamy canned sweet corn along with boiled vegetables. But this recipe called for freshly boiled sweet corn. Its a mix of Indian and Chinese versions. I was happy that I could serve a healthy soup recipe other than the usual tomato soup. Lets see how to make this yummy sweet corn soup recipe with step by step pictures.

INGREDIENTS

  • Boiled, fresh Sweet Corn Kernels - 1 cup ( You can also use canned sweet corn)
  • Water - 2 cups
  • Ginger & Garlic Paste - 1/4 tsp
  • Corn flour - 1 tsp
  • Salt - as needed
  • Butter - 1-2tbsp
  • Sugar – a pinch 
  • Pepper powder - as needed
  • Chopped Spring onion-1 tbsp
  • Boiled milk at room temperature – 1/4 cup
  • Coriander leaves - to garnish(optional)
HOW TO MAKE SWEET CORN SOUP - METHOD
  • Using a knife remove the corn kernels from the cob. Pressure cook it adding 1 cup of water. Drain the excess water and reserve 2 tbsp of kernels. Grind the remaining sweet corn adding some water. It will become a smooth paste.

  • Melt butter in a pan and add the g&g paste. Careful, it splutters. Saute quickly and add the chopped spring onion and ground sweet corn paste. Saute for few seconds. Add 1 cup of water + drained sweet corn cooked water. Let it boil well adding salt & Sugar.

  • Dilute corn flour adding 1/4 cup of milk. Add this to the boiling soup. It will start to thicken slightly. Add some water or milk to adjust the consistency. Lastly add the reserved sweet corn kernels and sprinkle some pepper powder. Serve hot.

NB: Replace milk with water if you don’t like to use it. Adding coriander leaves and spring onions are optional.

Tomato Soup Recipe | Indian Restaurant Style Tomato Soup (Without Cream)

This is my first post on soup recipes. Tomato soup using fresh tomatoes is the one and only soup I order whenever we go out for dinner. But no two restaurants serve tomato soup (thakkali soup) in same taste. Everybody has their own variations. Among all the soups I have tasted, I would say the best tasting soup is the one I had in Salem”Lakshmi Hotel - Salem, Tamilnadu’'. It was the bestest. 

My total family is a big fan of that soup and sometimes we have gone there for dinner just to taste that soup. Every time I keep sniffing/smelling the soup to find out the ingredients and I tried many times to recreate the same. At last I succeeded in my attempt. This tomato soup tastes 90% close to that soup.  I got the same color and taste. I have not used carrot, beetroot or cream . This is just the original color of fresh tomatoes.

INGREDIENTS
To saute
  • Butter - 1 tbsp
  • Cinnamon - 1 inch piece
  • Cloves - 1 no
  • Bayleaf - 1 no
  • Garlic cloves - 10 nos
  • Big onion - 1 no(small size)
  • Ripe tomatoes - 4 nos(chop finely)
To mix in the soup
  • Salt - as needed
  • Sugar - 1/4 tsp
  • Tomato sauce / tomato ketchup -1 tbsp
  • Corn flour - 1 tbsp
  • Water- 3 cups
  • Pepper powder -  to serve
HOW TO MAKE TOMATO SOUP - METHOD

  • In a pressure cooker base,melt butter. Add the cinnamon, clove and bay leaf. Saute for few seconds. Add onions, chopped garlic cloves and saute well. Finally add the chopped tomato pieces and saute till mushy.

  • To this, add 3 cups of water, salt and pressure cook in high flame for 3-4 whistles. After the steam is released, remove the bayleaf, cinnamon and grind it with a hand blender or a juicer.

  • Strain the sediments and discard. Add the bay leaf and cinnamon back to the strained soup.
  • Now add sugar, tomato sauce, 1/4 tsp of white pepper powder and allow it to boil for a minute. Dilute corn flour in little water and add to the soup. Allow it to boil till raw smell emanates completely.

  • Serve hot with bread croutons.
  NOTE
  • Generally a piece of carrot or beetroot would be added to the tomatoes while cooking to give a nice color. But I din’t use any as my tomatoes itself were ripe with a nice color.
  • If you add carrot or beetroot, do not grind it along with tomatoes. Please discard them after you pressure cook.
  • For making bread croutons, cut the bread into slices, apply little oil. Bake in a convection oven at 180c for 20 mins. Flip it once in the middle. U’ll get a super crispy bread croutons which you can serve with this yummy soup. It tastes great !




Serve hot topped with toasted bread pieces and pepper powder ! It tastes yummy!
