Indian Vegetarian Avocado Sandwich Recipe – Guacamole Sandwich Recipe

After a long gap, I am sharing a recipe with avocado because this healthy fruit is very rarely available in my placeSad. So whenever I see it in Reliance fresh, I take one to try some interesting recipes with it. Avocado is popularly known as “Butter fruit” in India. So far I have tried and posted avocado paratha, avocado milkshake and Guacamole recipes and that too very long back. So this time I made Indian style, vegetarian avocado sandwich for a change. This no cook sandwich is a quick and easy breakfast/dinner recipe. Its a vegan recipe as well. You can use whole wheat bread to make it healthy and low in calorie. I don’t think kids would like this sandwich. If you use milk bread, add lots of grated cheese to the sandwich filling and toast it with butter, kids may like to have itWinking. But this is an ideal recipe for adults who look for weight loss. One sandwich, a banana and a glass of milk was very much filling for meHappy. You too give a try ! INGREDIENTS

  • Ripen avocado - 1 no ( Big)
  • Green chilli - 1 no ( finely chopped)
  • Big onion - 1 no ( finely chopped)
  • Grated carrot - 1/4 cup
  • Lemon juice - Few drops
  • Coriander leaves - 2 tbsp (finely chopped)
  • Chopped capsicum - 2 tbsp
  • Ripe tomato - 1/2 no ( finely chopped)
  • Salt - As needed
  • Pepper powder - 1/2 to 1 tsp
  • Chat masala powder - 1/2 tsp ( add more if needed)
  • Olive oil or cooking oil - 1 tsp
METHOD

  • In a plate, wash and cut the avocado into two pieces vertically.Remove the seed with a knife. Scoop out the pulp and discard the skin.

  • In a wide bowl, take the paste, grated carrot, finely chopped green chilli, onion, tomato, coriander leaves, required salt, chat masala and pepper powder. Mix well.

  • Take two bread slices, trim off the sides if needed. Apply butter on one bread if needed.Apply the sandwich filling on the other bread.Cover it and grill or toast the sandwich if needed. I served it raw.

AVOCADO MILKSHAKE /BUTTER FRUIT JUICE RECIPE

Avocado milkshake recipe was in my try list for a long time. In Indian juice shops, it is mostly mentioned as butter fruit juice. Based on its consistency you can call it as a juice or milkshake. I tasted this milkshake without condensed in a juice shop recently. It was very nice. From then, I wanted to post this recipe in my food book because this is the easiest avocado recipes and it amazing health benefits. As you all know, Avocado recipes tastes the best only when the fruit is ripe else you can't even taste a bit of it and U have to throw the entire dish into the bin. Ingredients
  • Ripe Butter fruit/Avocado - 1/2 no
  • Cold milk - 2 cups
  • Sugar - 1- 2 tbsp
 
Instructions
  1. Wash and cut avocado into two vertically. U'll find a big seed inside.Remove it and discard.Now scoop out the pulp using a ladle.
  2. Grind it in a mixer or juicer adding sugar or honey &  cold milk.Adjust more or less milk based on the desired consistency.

GUACAMOLE DIP RECIPE – HOMEMADE MEXICAN AVOCADO DIP FOR NACHOS & TORTILLA

I wanted to try Mexican style avocado dip also known as Guacamole for long time. I was looking for tortilla chips & nachos to try this guacamole dip recipe. Last week I got a pack of nachos and I immediately tried this dip. 

This homemade guacamole is easy to make, healthy and tasty too. I referred this perfect guacamole recipe from Simply Recipes. Use ripe avocado for best taste. Raw avocado tastes bitter.  Now, without this dip, we are not able to eat nachos. I’ve given few tips at the end on how to buy good avocado if you are buying for the first time. Its for beginners. Please go through it.

INGREDIENTS

  • Ripe avocado – 1 no
  • Big onion – 2 nos (Finely chopped)
  • Green chilli – 1-2 nos (Finely chopped)
  • Tomato – 1 no ( Deseed and chop finely)
  • Lemon juice – 1.5 – 2 tsp
  • Coriander leaves / Cilantro – 2 tbsp (Finely chopped)
  • Salt – As needed.
  • Pepper powder – 1/2 tsp (adjust)
HOW TO MAKE GUACAMOLE
  1. Cut the avocado in half and remove the seed and take the pulp using a spoon. Discard the skin.
  2. Using a fork, mash the avocado roughly. Don’t overdo it. It should be little chunky.
  3. Chop the onions, green chillies , coriander leaves very finely.
  4. Now in a big bowl, take all the finely chopped veggies except tomato.
  5. Mix everything and add the avocado pulp. Mix little.
  6. Close the bowl with a plastic wrap or lid and refrigerate it until use.
  7. When you are about to serve it, chop the tomatoes finely and add it to the dip. Mix well, check for salt and spice.
  8. Serve with nachos or tortilla !!
 
NOTE
  • I have given the quantity of ingredients as per our liking. Please adjust them as per your wish. 
  • Refrigerating tomatoes changes the taste of the dip. So please don’t chop or add to dip until ready to serve.
  • Always keep the guacamole mixture wrapped or covered to prevent oxidation and change of color.
  • Refrigerate until ready or make it fresh and eat.

TIPS
How to buy good avocado

  • There are varieties of avocado available in the market. They are Hass, Lamb Hass, Gwen, Reed, or Sharwil , Bacon and Zutano.
  • Bacon and Zutano varieties are light in flavor.
  • Others have a nutty taste.
  • Good avocado can be first identified by its color.Ripe avocado looks dark green to black in color. Some varieties look light green in color.
  • When you want to examine them. Take an avocado and keep it in ur palm. Just press it lightly. Do not use your finger tips as it may bruise them.
  • If it gives slightly, it is ready to eat. If it is over ripe, pressing them gives a mushy feeling and your finger may sink into the skin.  If the skin is hard to touch and if it doesn’t give, avocado is not ripe yet.
  • If you planning to keep it for some days, you can buy the unripe avocado , wrap it in a paper and keep it for 4-5 days to ripen. It can be kept in room temperature.
  • Avocado can be stored in a refrigerator until eaten to slow the ripening process.
  • Avocado with the highest oil content are the Hass, Pinkerton, Sharwil and Fuerte varieties.
  • This buying method may be useful for people who plan to use avocado oil for health and diet or skin and beauty purposes.

When I came to know the health benefits of avocado (Known as Butter fruit in India) , I wanted to try some recipes with it. I tried a milk shake & it was too bitter in taste. Sine then I started running miles away when I see avocado in shops.Then I found ripe avocado wont taste bitter. Again I browsed for some other recipes and came across this post. She has given the title as “super soft Avocado paratha” . 

I tried on the same day and yes it was really super soft. So I too gave the same title. I made little changes in the actual recipe according to our taste. Thanks a lot Shoba for helping me with this recipe. This paratha would be ideal for travel & lunch box.  You can make it thick like paratha or as thin chapathi. I made a simple onion raita and pickle as side dish. You can also make some tomato chutney or thokku. Please try this recipe only if you have ripe avocado in hand. 

Please don’t take chance in trying with raw ones. It will taste bitter to the core. Ok, lets see how to make super soft avocado paratha at home. You can make this paratha recipe for your healthy breakfast or dinner !

Avocado Paratha - Super Soft Avocado Paratha Recipe

How to make soft avocado paratha at home for healthy dinner and breakfast !

INGREDIENTS


  • Wheat flour – 1 cup
  • Fully Ripen avocado – 1 no ( pulpy ones)
  • Big onion – 2 nos ( Grated)
  • Green chillies – 2 nos ( Finely chopped)
  • Garlic cloves – 7-8 nos ( Grated)
  • Coriander leaves – Few(finely chopped)
  • Ajwain/Omam or cumin seeds – 1/4 tsp
  • Garam masala powder – 1 tsp
  • Salt – as needed
  • Lemon juice – 2 tsp
  • Water – Very little ( 1-2 tbsp), Add only if needed
  • Cooking Oil – Little to make parathas

HOW TO MAKE AVOCADO PARATHA

  1. Cut the ripe avocado into two and take out the seed.
  2. Remove the pulp using a spoon.
  3. In a bowl ,grate the onion, garlic cloves. Finely chop green chillies.
  4. Mix everything with the avocado pulp and add the required salt, cumin seeds/ajwain, garam masala powder ,coriander leaves.
  5. Mix all the ingredients to the wheat flour and make a dough.
  6. Add very little water if needed.Say a tbsp or two.
  7. Take a lemon sized ball and roll thick or thin paratha by dusting in the wheat flour.
  8. Heat a dosa pan and make paratha pouring little oil around it. Cook both sides till brown spots appear.Remove it.
  9. Serve hot with a simple onion raita or pickle !

Note

  • Add water carefully. If the quantity of pulp is more, you don’t need to add water at all.
  • You can cook adding few drops of ghee to make it flavorful.
  • Garam masala powder is not used in the actual recipe. But I used it.
  • This paratha is soft by itself, no need to add butter milk or besan flour. No issue if even they are added.
  • Please use ripe , pulpy avocado. If you use raw ones,paratha will taste bitter.
  • One avocado is sufficient for the above recipe.
