Sambaram Recipe | Moru Vellam | Kerala Style Spiced Buttermilk

Every year during Onam Sadya, I try to make Sadya at home. I have shared nearly 5 different Sadya menu and posted in my blog. Pleasec check the links below. Dishes like Puli inji, avial, ada pradhaman, pazham, papadam are mandatory in every Sadya be it simple or elaborate. Similarly sambaram i.e Kerala style spiced buttermilk should be in the Onam sadya menu for sure.

Onam sadya will be incomplete without this sambaram. Its fondly known as moru vellam in Malayalam language. Spices like ginger, green chilli (Kanthari / Bird’s eye chilli), curry leaves and small onions is crushed coarsely and added to churned buttermilk. It gives a super flavor to the buttermilk and makes it more healthy. Sambaram is served at the end of the meal as it helps to digest the sadya food.

INGREDIENTS
1 cup = 250ml
  • Curd - 1 cup
  • Water - 2 cups (adjust)
  • Salt - as needed
To crush coarsely
  • Bird's eye green chilli (Kanthari) or green chilli - 3 or 2
  • Ginger - 1/2 inch piece
  • Curry leaves - 1 sprig
  • Small onion - 6
HOW TO MAKE SAMBARAM
  1. Take curd in a bowl. Add water, salt and churn it.
  2. Grind chilli, onion, ginger and curry leaves coarsely.
  3. Mix with buttermilk and serve it. Enjoy !
METHOD - STEP BY STEP PICTURES
  • Take curd in a wide bowl. Add water and required salt. Churn well with a whisk. Check for taste and add more water if necessary.

  • Grind green chilli, small onion, curry leaves and ginger coarsely using pulse option in your mixie. (Alternately, you can chop everything finely and add to buttermilk).

Note

  • Quantity of water differs based on the sourness of curd.
  • You can add more green chilli if you like spicy taste. I made it less spicy.
  • Instead of grinding in mixie, you can use mortar and pestle and crush it coarsely.
  • Some people add the spices finely and add to buttermilk without grinding.

Khus Khus Milk / KasaKasa Paal Recipe - Poppy Seeds Milk

Recent days my sleep got disturbed because of my lower back pain. I was unable to sleep continuously due to anxiety and panic attacks. Apart from meditation and other natural sleeping techniques, I was looking for some home remedies and foods to include in my diet. I came across this khus khus milk / khas khas milk (poppy seeds in English) / Kasakasa paal/ Gasagasa paal recipe in Gowri samayalarai YouTube channel. I tried it on the same day as all the ingredients were readily available with me. It came out so well with a nice flavor of poppy seeds and cardamom.

Basically poppy seeds are used in baked goods and traditional dishes worldwide. Both the seeds and their oil are said to offer various health benefits including promoting digestion, boosting skin and hair health, treating headaches, coughs to curing asthma and insomnia. As poppy seeds are derived from the opium poppy, its banned in some countries. In India, people use khus khus in their cooking regularly for grinding masala. It helps to give a thick and creamy texture to kurma and other gravies. 

To powder the poppy seeds, I dry roasted them first which was not mentioned in the original recipe. I also added some cloves for flavor. It smells and tastes so good. Everyone in my home including Raksha loved it. I am taking this milk at night 30 minutes before going to bed. My sleep quality is improved. I am planning to take this milk for another week till I go back to my normal sleep. But do not consume more. For adults, you can give 1/2 cup of milk. 

Friends, do try this khuskhus milk / Poppy seeds milk / Gasagasa paal at home for a good night’s sleep. Remember this milk alone doesn’t make wonders. You have to do meditation, try to divert your mind by listening to good music, watch movies or do your favorite activity that relaxes your mind.

Poppy seeds milk - Khus khus / khas khas milk recipe for good sleep and added health benefits.

INGREDIENTS
1 cup = 250ml
  • Poppy seeds / Khus khus - 1/2 cup
  • Nutmeg / jathikai - 1 small piece ( I used 1/4 th of one nutmeg)
  • Cardamom - 5
  • Pepper corns - 10
  • Turmeric powder - 1/2 tsp
  • Cloves - 2
HOW TO MAKE KHUS KHUS MILK / KASAKASA PAAL
  1. Heat a kadai and dry roast the poppy seeds in low flame for few minutes.
  2. Add cardamom, cloves, nutmeg and roast it for a minute.
  3. Switch off the flame and allow to cool down completely.
  4. Now add pepper corns and turmeric powder.
  5. Grind everything to a smooth powder. Remove and store in a box.
  6. To make khus khus milk : Boil 1/2 liter milk. Add 1 tbsp of this powder.
  7. Mix well and boil for few minutes till it changes color. Strain the milk and serve hot or warm !
METHOD - STEP BY STEP PICTURES
  • Heat a kadai and dry roast the poppy seeds in low to medium flame for few minutes. Make sure you don’t burn it.

  • Add cloves, nutmeg and cardamom and roast it along with poppy seeds for a minute. This helps to powder easily. Switch off the flame.

  • Allow to cool down completely. Add them to mixie jar and add in pepper corns, turmeric powder.

  • Grind to a fine powder. Do not run the mixie continuously for long time. Poppy seeds releases oil and looks like paste. So grind it carefully. Mix in regular intervals and check if it becomes a powder.

  • Now transfer the powder to an air tight box. You can store up to a week at room temperature.

  • To make khus khus milk : Boil 500 ml milk in a bowl. Add 1 to 1.5 tbsp of this poppy seeds powder. Boil for few minutes till it changes color. Strain the milk using a metal filter. Serve the milk hot or warm. Enjoy !Kasakasa paal recipe

Note

  • Dry roasting poppy seeds is optional but it helps to powder it well.
  • If you want to wash the poppy seeds, wash it and spread them in a cotton cloth. Let it dry completely. Then you can roast it.

Turmeric Milk Recipe – Manjal Paal For Cold, Cough

 In my house, we used to drink milk with turmeric powder and pepper powder at night during initial stages of cold and cough to get a good relief. Apart from this, we also inhale steam twice in a day, do salt gargle, drink hot water, consume everything hot throughout the day to curb cold and cough in the initial stages itself.

As per my ayurvedic doctor’s advice, every night before going to sleep, I give turmeric milk adding a pinch of pepper powder for Raksha as she is prone to get cold and cough very often. Addition of pepper powder helps to absorb curcumin from turmeric powder. My mom and MIL has also insisted me to give manjal milagu paal (also known as Golden latte) at night and some tulsi leaves in morning when she was a kid to build her immunity, get rid of cold, cough, allergies and to improve overall health.

Now when I heard about this Corona virus ( Covid-19 ), we all started to consume this manjal paal everyday at night. So I thought of making this post for beginners to know about our traditional turmeric milk and its health benefits. Drinking a cup of milk adding a pinch of turmeric powder + pepper powder everyday has so many amazing health benefits.
  • It is loaded With Antioxidants
  • Helps to boost immunity
  • Induces good sleep
  • Helps to Reduce Inflammation and Joint Pain
  • Improve Memory and Brain Function.
  • Curcumin in Turmeric helps to Improve Mood
  • Protect Against Heart Disease.
  • Lowers Blood Sugar Levels.
  • Reduce Risk of Cancer.
  • Has Antibacterial, Antiviral and Antifungal Properties.
  • Some articles have mentioned that turmeric milk helps in weight loss too. 
As far as I know turmeric milk doesn’t have any side effects in general. But over consumption or over dosage for some people may experience nausea, stomach upset problems. If you want to give turmeric milk for babies or kids below 3 years, please consult your doctor.

Every year my MIL used to give me a pack of homemade turmeric powder using the raw turmeric we buy during Pongal festival. I add a pinch of turmeric powder in milk, boil for few minutes and then consume it. You can also use good quality store bought turmeric powder. INGREDIENTS
1 cup = 240ml
  • Milk - 500ml (1/2 litre)
  • Turmeric powder - 1/2 tsp
  • Pepper powder - 1/4 tsp
  • Sugar or palm candy or organic jaggery - as needed
HOW TO MAKE TURMERIC MILK

  • In a pan, boil milk. Reduce the flame to low. Add turmeric powder, pepper powder and sugar or palm candy. Turmeric milk
  • Boil for few minutes and switch off the flame. Strain the milk through a cloth strainer or mesh. Transfer to the glass.. Drink hot ! Turmeric milkTurmeric milk
  • For variations, you can also add a pinch of dry ginger powder, a pinch of cinnamon powder too. If you are using jaggery, add powdered jaggery or jaggery syrup after switching off the flame. This helps to avoid curdling of milk.

Note

  • Usually I add 4 tsp of sugar for 500ml milk. Add 2 tbsp of palm sugar candy if using.
  • Do not add more turmeric powder and pepper powder than the mentioned quantity. Over dosage may result in stomach upset problem for some people.
  • Drink the milk hot when you have cold and cough. It helps to give a good relief from cold and cough during initial stages.

Homemade Badam Milk Powder Recipe – Badam Drink Mix Without Sugar

Badam milk made using ready made badam drink mix must be the favorite of many people. In my house Sendhil loves to drink it hot whereas I love chilled/ cold badam milk. I used to buy MTR or AACHI badam mix powders. I never thought homemade badam milk mix is so easy until I tried at home recently. It can be prepared easily with very few ingredients. Homemade badam milk mix powder is always healthy and hygienic when compared to store bought ones.

Here I have made this badam milk powder without sugar. You can add cane sugar or white sugar while mixing with milk. Though the shelf life of this instant badam milk powder is less, homemade ones is a cheap and best option. Homemade badam milk powder mix recipe using easily available ingredients.

INGREDIENTS
1 cup = 240ml
  • Almonds / Badam - 1/2 cup
  • Milk powder - 2 tbsp
  • Saffron threads - Few
  • Turmeric powder - 1/2 tsp
  • Cardamom seeds - 5
To make badam milk
  • Hot milk - 1 cup
  • Badam mix - 1 tbsp
  • Sugar - 2 tsp
HOW TO MAKE BADAM MILK POWDER
  1. Boil 1 cup of water. Add almonds and boil for a minute.
  2. Soak for 5 minutes. Drain the water and wash under cold water.
  3. Peel the skin easily and blanch the almonds.
  4. Spread the almonds in a cloth and pat dry them.
  5. Dry roast the almonds for few minutes. Cool down completely.
  6. Grind the roasted almonds, cardamom, saffron threads and turmeric powder to a smooth powder.
  7. Add milk powder, mix well and transfer to a box. Badam milk powder mix is ready.
  8. To make badam milk, take hot milk in a cup. Add sugar, badam milk mix and mix well.
  9. Serve hot and enjoy !
METHOD - STEP BY STEP PICTURES
  • Blanch the almonds/ badam. To quickly blanch the badam, boil 1 cup of water and add the almonds. Boil for few minutes and switch off the flame. Soak for 10 minutes and drain the hot water. Run it under cold water and peel the skin easily.

  • In a cotton cloth, spread the blanched badam. Pat dry and make sure badam is dry.

  • Heat a kadai and dry roast in medium flame till the badam till brown spots appear here and there. Switch off the flame. Let it cool down completely

  • Do not grind when the badam is hot or warm. It should be in room temperature else badam becomes sticky after grinding.

  • In a mixie jar, add badam, saffron threads, turmeric powder and grind for few seconds at regular intervals to powder it finely. Remove in a bowl and add milk powder. Mix well.

  • Store in an air tight box. Use a clean spoon to handle. Its shelf life is 15 days without refrigeration.
  • To make badam milk, take 1 cup of hot milk, add 1 to 2 tsp sugar. Add 1 tbsp badam drink mix. Mix well and enjoy. For kids, you can also filter the milk and drink. Enjoy !

Note

  • I did not add sugar in badam mix powder. You can grind along with badam if you like.
  • Adjust the quantity of badam mix while adding to hot milk.

 Recently I saw this Apple chikoo milkshake/ Apple Sapodilla milkshake recipe in the milkshake menu of Salem Lakshmi hotel. When I saw it titled as Queen palace milkshake, I got tempted to try at home. The combination of apple, chiku/ sapodilla / sapota , ice cream, milk, vanilla and honey sounds new, healthy and interesting as well. I know many kids would refuse to eat whole fruits. For those fussy kids, fruits milkshake is the best option. As we add ice cream to it, it gives a thick, creamy taste with a nice flavor. Raksha never touches sapota fruit even though she had read its health benefits like its good for eyes, bones, develops immunity etc. But today she had a small glass of this milkshake without any complaints. We too liked it very much. Its so easy to make. Just combine all the ingredients and blend it. Tasty apple chikoo milkshake would be ready in minutes. INGREDIENTS
1 cup - 250ml
  • Sapota / Sapodilla Fruit - 2 nos
  • Apple - 1 no
  • Boiled, Chilled Milk - 1 cup
  • Sugar or honey - 1 tbsp ( I used honey)
  • Vanilla essence - 1/4 tsp
  • Vanilla ice cream - 2 scoops
METHOD
  1. Wash and peel the fruits. Cut and remove the seeds. 
  2. Blend the chopped fruits with other ingredients till smooth.
  3. Transfer to a glass, garnish with nuts if you like and serve immediately.
METHOD - STEP BY STEP PICTURES
  • Wash and peel the skin of apple and sapodilla/ sapota using a peeler. Chop into big cubes and remove the seeds.

  • In a big mixie jar, take the chopped fruits, honey, vanilla essence, ice cream and chilled milk. Grind till smooth.

  • Pour the milkshake to a tall glass. Garnish with chopped nuts if you like. (I sprinkled my homemade caramel which I made for butterscotch ice cream). Serve immediately.

 Summer vacation is started for Raksha. She requested me to make some yummy milkshakes and ice cream recipes for her. To begin with, I prepared this easy and simple Oreo milkshake recipe without ice cream. As I din’t have ice cream in hand, I added some ice cubes and chilled milk in my blender to thicken the Oreo shake. It came out well with a frothy texture. Raksha liked it very much. The flavor of Oreo cookie and cream along with chocolate syrup, vanilla extract adds a great taste to the milkshake.  But to enjoy the best taste of milkshake, you must add ice cream. Soon I will try with ice cream to make it more creamy and rich and make a post here. Ok, lets see how to make Oreo milkshake recipe without ice cream.

INGREDIENTS

1 cup = 240ml
  • Oreo cookies - 4 nos
  • Chilled milk - 1 cup
  • Vanilla extract - 1/2 tsp
  • Sugar – 1/2 tbsp
  • Ice cubes - 2 nos
  • Chocolate syrup - 1 tbsp ( Optional, I used Hershey’s syrup)
  • Vanilla ice cream - 1 scoop (Optional)

HOW TO MAKE OREO MILKSHAKE WITHOUT ICE CREAM - METHOD

  1. Break the Oreo cookies into pieces and take in a blender / mixer jar.
  2. Add sugar, milk, vanilla extract, choc syrup (if using) and ice cubes.
  3. Run the mixie for a minute. Thick, frothy oreo milkhake is ready.
  4. Pour in a glass. Garnish with a piece of Oreo and serve immediately.

METHOD - STEP BY STEP PICTURES

  • In a mixie jar/blender, break the Oreo into small pieces. Add boiled , chilled full fat milk, sugar, chocolate syrup, vanilla extract, ice cubes.

Mango Frooti Recipe – How To Make Frooti At Home

Homemade mango frooti recipe with video and step by step pictures. Frooti is my most favorite mango drink since childhood. I guess most of you are like me. On those days, for any small functions at home like birthday party or guest visits, Frooti bottle makes its presence without fail. My mom used to serve it as a welcome drink. Even though there are many soft drinks available in the market, the craze for this store bought mango drinks like Frooti, Maaza or Slice never goes away. But once my family had a bad experience after drinking Frooti in a tetra pack. It must be an old stock I guess. So we stopped buying it and started running miles away whenever I see it in functions or parties. I restrict Raksha & Sendhil too. 

Last week I bought few alphonso mangoes and a raw mango to try some interesting recipes with it. When I was browsing for it, I saw few homemade Frooti recipe. I never imagined Frooti making process at home would be so easy with very less ingredients and that too without any preservatives. What else I need to try this !. I became very happy and tried it immediately with an over ripen mango which I wanted to finish off. This juice came out yummilicious in taste. It tasted very close to Frooti, Maaza or any store bought mango drink. 

Sendhil & Raksha loved it and gave a big thumbs up. You can make this as concentrate, refrigerate & store it, add ice cold water to dilute it and drink chilled anytime.The best part is we didn’t get any stomach pain, loose stools, cold/throat infection or fever.

 As everyone says, homemade is always the best !! Now I don’t have to buy the highly priced mango drink from shops anymore. I have tried this drink thrice so far with different mangoes and observed few points.

To make a perfect homemade Frooti recipe, you must follow this.

1. Use only Alphonso mangoes. It works the best ! Taste differs for Badami, malgova or Banganapalli mangoes. 2. Mango should be over ripen. Make sure it doesn’t have sour taste. You can clear off the over ripen ( about to decay) mangoes by making this drink. 3. The ratio of ripe mango & raw mango should be 2:1 based on the size of raw mango. Raw mango is just to give mild tanginess. 4. Quantity of sugar differs as per the sweetness of mango. 5. Color of the juice also varies based on the color of mango.

Now I can confidently prepare this mango juice for my guests.  You too try this recipe in this summer vacation for your kids and family. I am sure your kids will sing  “ Mango Frooti Fresh and Juicy”.

INGREDIENTS
1 cup - 250ml
  • Over ripen Alphonso mango - 1 no  (1 cup chopped)
  • Raw mango - 1/2 no (If small sized mango or 1/4 part of big mango) (1/2 cup chopped) 
  • Sugar - 1/4 to 1/2 cup (Adjust)
  • Water - 3 to 4 cups
  • Ice cubes – while serving
METHOD

  • Wash and peel the skin of raw mango & ripe mango. Chop into pieces.

  • In a pressure cooker, take the chopped mango pieces, add 1/3 cup sugar and 2 cups of water ( If you want to make thick concentrate, add 1 cup of  water). Pressure cook in very low flame for 2 whistles or till mango cooks soft.

  • Open the cooker after the steam is released.Strain it and filter the cooked water. Keep it aside till use.

  • Grind the cooked mango to a pulp without adding water. Mix this pulp with the cooked mango water. Mix well and strain it again to remove the fiber part of mango. Discard the fiber part.

  • Mix the mango juice well and check for taste and thickness. If you want to store as concentrate, pour in a glass bottle and refrigerate it. If serving immediately, add 1/2 to 1 cup water and adjust the consistency. If sugar is less, add little more sugar and mix well. Refrigerate for 3-4 hours till chilled.

  • Put some ice cubes in a glass and pour the drink. Serve immediately ! This drink stays good for 3 days if refrigerated !

  • Use over ripen alphonso mango for best taste.
  • Adjust the quantity of sugar and water as per taste and desired consistency.
  • Some recipes suggested equal quantity of ripe mango and raw mango. But I feel 2:1 ratio would be fine.
