 Recently I saw this Apple chikoo milkshake/ Apple Sapodilla milkshake recipe in the milkshake menu of Salem Lakshmi hotel. When I saw it titled as Queen palace milkshake, I got tempted to try at home. The combination of apple, chiku/ sapodilla / sapota , ice cream, milk, vanilla and honey sounds new, healthy and interesting as well. I know many kids would refuse to eat whole fruits. For those fussy kids, fruits milkshake is the best option. As we add ice cream to it, it gives a thick, creamy taste with a nice flavor. Raksha never touches sapota fruit even though she had read its health benefits like its good for eyes, bones, develops immunity etc. But today she had a small glass of this milkshake without any complaints. We too liked it very much. Its so easy to make. Just combine all the ingredients and blend it. Tasty apple chikoo milkshake would be ready in minutes. INGREDIENTS
1 cup - 250ml
  • Sapota / Sapodilla Fruit - 2 nos
  • Apple - 1 no
  • Boiled, Chilled Milk - 1 cup
  • Sugar or honey - 1 tbsp ( I used honey)
  • Vanilla essence - 1/4 tsp
  • Vanilla ice cream - 2 scoops
METHOD
  1. Wash and peel the fruits. Cut and remove the seeds. 
  2. Blend the chopped fruits with other ingredients till smooth.
  3. Transfer to a glass, garnish with nuts if you like and serve immediately.
METHOD - STEP BY STEP PICTURES
  • Wash and peel the skin of apple and sapodilla/ sapota using a peeler. Chop into big cubes and remove the seeds.

  • In a big mixie jar, take the chopped fruits, honey, vanilla essence, ice cream and chilled milk. Grind till smooth.

  • Pour the milkshake to a tall glass. Garnish with chopped nuts if you like. (I sprinkled my homemade caramel which I made for butterscotch ice cream). Serve immediately.

 Summer vacation is started for Raksha. She requested me to make some yummy milkshakes and ice cream recipes for her. To begin with, I prepared this easy and simple Oreo milkshake recipe without ice cream. As I din’t have ice cream in hand, I added some ice cubes and chilled milk in my blender to thicken the Oreo shake. It came out well with a frothy texture. Raksha liked it very much. The flavor of Oreo cookie and cream along with chocolate syrup, vanilla extract adds a great taste to the milkshake.  But to enjoy the best taste of milkshake, you must add ice cream. Soon I will try with ice cream to make it more creamy and rich and make a post here. Ok, lets see how to make Oreo milkshake recipe without ice cream.

INGREDIENTS

1 cup = 250ml
  • Oreo cookies - 4 nos
  • Chilled milk - 1 cup
  • Vanilla extract - 1/2 tsp
  • Sugar – 1/2 tbsp
  • Ice cubes - 2 nos
  • Chocolate syrup - 1 tbsp ( Optional, I used Hershey’s syrup)
  • Vanilla ice cream - 1 scoop (Optional)

METHOD

  1. Break the Oreo cookies into pieces and take in a blender / mixer jar.
  2. Add sugar, milk, vanilla extract, choc syrup (if using) and ice cubes.
  3. Run the mixie for a minute. Thick, frothy oreo milkhake is ready.
  4. Pour in a glass. Garnish with a piece of Oreo and serve immediately.

METHOD - STEP BY STEP PICTURES

  • In a mixie jar/blender, break the Oreo into small pieces. Add boiled , chilled full fat milk, sugar, chocolate syrup, vanilla extract, ice cubes.

  • Grind for a minute till it becomes frothy. Transfer to a serving glass. Garnish with chopped cookies. Serve immediately.

Note

  • For variations, you can add a scoop of vanilla ice cream or chocolate ice cream while blending.

Mango Frooti Recipe – How To Make Frooti At Home

Frooti is my most favorite mango drink since childhood. I guess most of you are like me Winking.On those days, for any small functions at home like birthday party or guest visits, Frooti bottle makes its presence without fail Happy. My mom used to serve it as a welcome drink. Even though there are many soft drinks available in the market, the craze for this store bought mango drinks like Frooti, Maaza or Slice never goes away. But once my family had a bad experience after drinking Frooti in a tetra pack. It must be an old stock I guessWorried. So we stopped buying it and started running miles away whenever I see it in functions or parties. I restrict Raksha & Sendhil too. Last week I bought few alphonso mangoes and a raw mango to try some interesting recipes with it. When I was browsing for it, I saw few homemade Frooti recipe. I never imagined Frooti making process at home would be so easy with very less ingredients and that too without any preservativesBatting Eyelashes. What else I need to try this !Happy I became very happy and tried it immediately with an over ripen mango which I wanted to finish off.This juice came out yummilicious in tasteLove Struck. It tasted very close to Frooti, Maaza or any store bought mango drink. Sendhil & Raksha loved it and gave a big thumbs upParty.You can make this as concentrate, refrigerate & store it, add ice cold water to dilute it and drink chilled anytime.The best part is we didn’t get any stomach pain, loose stools, cold/throat infection or feverPeace Sign. As everyone says, Homemade is always the best !! Now I don’t have to buy the highly priced mango drink from shops anymore. I have tried this drink thrice so far with different mangoes and observed few points. To make a perfect homemade Frooti recipe, you must follow this.
1. Use only Alphonso mangoes.It works the best ! Taste differs for Badami, malgova or Banganapalli mangoes.
2. Mango should be over ripen.Make sure it doesn’t have sour taste. You can clear off the over ripen ( about to decay) mangoes by making this drink.
3. The ratio of ripe mango & Raw mango should be 2:1 based on the size of raw mango.Raw mango is just to give mild tanginess.
4. Quantity of sugar differs as per the sweetness of mango.
5. Color of the juice also varies based on the color of mango.
Now I can confidently prepare this mango juice for my guests.  You too try this recipe in this summer vacation for your kids and family. Masala Chaas Recipe – North Indian Masala Buttermilk Recipe

When we think about thirst quenchers for summer, the simple and the best coolant that strikes our mind is buttermilk. Its an awesome summer drink that provides lots of health benefits to our body. In South India, Tamil nadu we never fail to make neer mor during summer. Sendhil & Raksha likes to have spiced buttermilk instead of taking curd rice. But I love to eat creamy curd rice with raw mango or baby mango ( Vadu mangai) pickleLove Struck. So I make South Indian neer mor almost everyday in summer just for them. Recently I tasted this North Indian style spiced buttermilk (“Chaas/Masala Chaas” or masala taak in Hindi ) in a lunch buffet. As it was kept in a mud pot and served chilled, I loved it very much and had 3 servings even after having a tummy full lunchWinking . I wanted to try this simple and yummy chaas at home for a change. I browsed for the recipe and tried at home. Roasted cumin seeds powder( Bhuna jeera powder) and black salt are the star ingredients of this basic plain chaas recipe apart from fresh yogurt/curd. To make a spicy masala chaas, green chilli, ginger, coriander leaves can also be used along with cumin powder and black salt. For variations, mint leaves/Pudina, hing and even black pepper powder can be used. A pinch of chaat masala can also be added for that extra punch. INGREDIENTS
1 cup - 250ml
  • Fresh Curd / yogurt - 1 cup
  • Small green chilli – 1 no
  • Roasted cumin seeds powder/Bhuna Jeera powder - 1 tsp
  • Black salt - 1 tsp OR Regular salt - as needed
  • Coriander leaves - 1 tbsp + to garnish
  • Sugar - a pinch
  • Ice cubes - Few
  • Ice water or plain water – 2 to 3 cups
Optional ( to grind)
  • Ginger - 1/2 inch piece
  • Mint leaves - 1/2 tbsp 
METHOD

  • In a mixie jar, take the green chilli, washed coriander leaves, roasted cumin powder, black salt and curd.If you wish, u can add 1/2 inch ginger piece, 1/2tbsp mint leaves while grinding. Grind it to a smooth paste. If you don’t have mixie, use a whisk and beat well.

  • Transfer the ground paste to a bowl. Add 2.5 to 3 cups of ice cold water.Mix well. Check for taste and add more salt and cumin powder if needed. Garnish with finely chopped coriander leaves and sprinkle a pinch of cumin powder.

  • Serve immediately or refrigerate it till use and serve chilled. Enjoy !

Note
  • Adjust the quantity of cumin powder and black salt as per taste.
  • Adjust the quantity of water based on the consistency and taste.
  • You can skip grinding coriander leaves ad use it just for garnishing
  • For variations, u can grind a small piece of ginger too.
  • You can also add a pinch of chaat masala at the end before serving.
  • Always serve it chilled to enjoy its best taste.

Jaljeera Recipe With Video –Jaljira – How To Make Jal Jeera At Home

Jal Jeera / Jaljira is a healthy summer drink that is most popular in North India. In Hindi, Jal means water and Jeera means cumin seeds. This drink is prepared with special spice mix masala powder that is mixed with water or soda. Jal jeera spice powder is made of roasted cumin, pepper, mint leaves, black salt, ginger, amchoor powder and lemon juice. So it has lots of health benefits. Basically it helps to improve digestion and aids for weight loss too. I have tasted this jaljira several times in “The Village” restaurant and in some other hotels as well. Mostly it is served as an appetizer in restaurants whereas I like to have this drink after a heavy meal. I love this drink very much and I don’t mind drinking at any time or any season of the yearWinking. So I bought a packet of jaljeera powder from the shop and prepared this drink at home for the first time. We loved it very much. Then I started serving this to my guests as a welcome drink. Everybody liked it so much and asked me the recipe tooWinking. Even though I make it with store bought powder, I used to tell the ingredients roughly and ask them to buy this jal jeera powder from the marketTongue. Yesterday I was thinking to start summer recipes in my blog. The most refreshing summer drink jaljeera flashed in my mind. I tried it this morning by watching Sanjeev Kapoor’s YouTube video and made it from scratch. I altered the recipe slightly by looking at the ingredients list of store bought jaljira packet. It came out very well and tasty. Traditionally tamarind is used in jaljeera but have used lemon juice instead. INGREDIENTS
1 cup - 250ml
  • Mint leaves - 1/2 cup
  • Coriander leaves – 1/4 cup
  • Ginger - 1/2 inch piece
  • Pepper corns – 1/2 tsp
  • Roasted cumin seeds – 1/2 tbsp / 1.5 tsp  ( Dry roast)
  • Black salt - 1 tsp
  • Powdered white salt – 1/2 tsp  ( Regular salt)
  • Sugar or grated jaggery -  1 to 2 tsp ( adjust)
  • Chat masala powder Or Amchoor powder - 1 tsp
  • Lemon – 1 no
  • Cold Water -  3 cups
To Serve
  • Ice cubes – Few
  • Kara Boondhi – To garnish ( as needed)
METHOD

  • Dry roast cumin seeds in a hot kadai for one minute. Do not burn the jeera. It tastes bitter and spoils the taste of jaljeera.
  • Take all the ingredients given in the list in a mixie jar. Add the roasted cumin seeds. Grind to a smooth paste adding required water. I used 1/2 cup water to grind it.

  • Transfer the ground paste to a bowl and wash the mixie jar with one cup of water. Add the washed water to the paste.  Place another bowl, keep a metal strainer and filter the drink. Press it with a spoon to filter well and discard the residue.

  • Add 1.5 - 2 cups more water and mix well. Check for taste and add more salt, sugar or lemon juice if needed. If you need more cumin flavor, add 1/2 tsp readymade cumin powder if u have in hand.

  • To serve : Take a tall glass, add some crushed ice or ice cubes, top it with 2 tsp of kara boondhi and pour the jaljeera till the rim. sprinkle a pinch of cumin powder if u wish. Serve immediately. Refrigerate the remaining drink for later use. Stays fresh for 2-3 days in refrigerator.

Note

  • You can add more black salt, amchoor powder , sugar and lemon juice at anytime after making the drink. Adjust them based on your taste. 
  • Jaljeera tastes the best when its served chilled. So always use ice cold water for preparation or refrigerate it  / add ice cubes while serving !
  • Never try this recipe without black salt and chat masala or amchoor powder.It adds a unique taste to this drink.

Thandai Masala Powder Recipe – How To Make Thandai Powder At Home

Thandai is a very popular drink in North India that is mainly served during Holi festival and Maha Shivratri. This drink is the best coolant for body with lots of  health benefits as it is prepared with the combination of nuts, whole spices and milk. Yesterday my neighbor called me to enquire whether we get readymade thandai masala powder or thandai syrup at shops nearby my house. I browsed for some good brands and told her to get Patanjali or Haldirams Thandai powder as these are the well known names to meHappy. She searched in shops but couldn’t get it. So I thought of preparing homemade thandai masala powder and share with her. As I had already shared the recipe of thandai from scratch, I know making at home is very easy. I used to make it regularly for every Maha Shivaratri festival along with our South Indian style arisi vella puttu and offer to Lord Shiva. This year I was planning to make the same following my recipe. But now after my neighbor’s suggestion, I wanted to make and store this homemade thandai masala in advance and prepare it quickly on Shivrathri day. I watched some You tube video recipes and adapted this recipe.I have also watched a video from BBD TV’s travel escapades in which the preparation of thandai with & without bhang from a popular shop in Ujjain was shown.I found it very useful. For this thandai powder recipe, I could see many variations across the web.Some recipes are very simple with just 4 ingredients and some recipes are with bhang as well. But in this recipe, I have not used BhangWinking  . Basically bhang balls are made from hemp seeds and leaves which are washed, cleaned and grinded to a smooth paste. But it should be used in minimum quantity as over dosage induces psychosis, excitement, uncooperativeness and hallucinations.

This is a very simple thandai masala that can be prepared with easily available ingredients. I have used Khus Khus in this recipe. I know its banned in some of the countries. In that case, feel free to skip it.Yesterday I made thandai using this powder and it came out very well. It was refreshing and we loved it a lot. I have passed some of this powder to my neighbor. INGREDIENTS
1 cup - 250ml
  • Almond/Badam - 1/4 cup
  • Cashew nuts – 2 tbsp
  • Melon seeds - 2 tbsp
  • Khus khus – 3 tbsp
  • Fennel seeds – 2 tbsp ( OR cumin seeds)
  • Pepper corns – 1 tsp
  • Cardamom – 8 nos
  • Nutmeg - Very small piece (optional)
  • Saffron threads - Few
  • Sugar - 1/2 – 3/4 cup
  • Dried Rose petals - 1 tbsp or 15 nos OR rose essence - 1 tsp
  • Pista – 1 tbsp (Optional , I used it)

  • To make thandai ( For one serving)

  • Boiled milk – 1 cup ( At room temperature, use full fat milk)
  • Thandai powder – 1 tbsp ( Adjust)
  • Ice cubes – few ( 2 nos)
METHOD

  • Take all the ingredients for thandai masala and keep it ready. Grind them to a fine powder using a mixie. Sieve it and again grind the coarse ones. Use the remaining leftovers for making fresh thandai or lassi. Mix the powder well with a spoon and store in a box. Thandai masala powder is ready !
  • This powder can be stored for 2 months in an air tight box. Use clean spoon to handle.

  • To make Thandai : Boil thick, full cream milk and let it cool down to room temperature. In a wide bowl, put few ice cubes, add 2 cups of milk and 1 tbsp ( i.e 5-6 tsp) thandai powder. Mix well. Check for taste and add more sugar or thandai powder if needed.

  • Strain it using a cloth strainer( Tea strainer) and serve it. If you want to serve later, refrigerate it till use. It tastes the best only when served chilled. The more the standing time, the more tasty it would be!
  • Straining is more important.Do not forget to strain the milk after adding thandai powder.

Note

  • There is no hard and fast rule in the quantity of ingredients for masala. You can reduce or increase it as per your like.
  • I felt pistachios are not needed as it was not mentioned in the Ujjain video.Still I had used just 1/2 tbsp of it. Do not add more. It would dominate the other ingredients in flavor.
  • Do not add more pepper corns. The color of thandai is usually sandal in color if its made without bhang. It looks green when bhang is added.
  • Adjust the amount of cardamom and fennel as they are the flavoring ingredients for thandai.
  • Straining is more important.Do not forget to strain the milk after adding thandai powder.
