Usually Nachos is served with salsa, cheese sauce, bean dip, curd mayo dip etc. But I wanted to try some simple and instant dip recipe using store bought, eggless mayonnaise just like the ones served in restaurants like Mc Donald's and Tacos. Finally I prepared this no cook, garlic flavored mayo dip without cheese and without fire when I was looking for some easy mayonnaise dips for chips and nachos. It can be served with potato wedges and French fries too. I won't say this one tastes exactly like restaurants, but it tasted delicious. Kids would love it for sure. We relished it with salted nachos and potato chips for our weekend evening snacks. Raksha loved it very much. Basically we all love to eat chips with plain, store bought mayonnaise. When you pep it up with spices like garlic, oregano, basil, pepper powder, chilli flakes and Olive oil, it goes to the next level. So friends, do try this easy, instant, no cook, yummy mayonnaise dip for Nachos and chips. You will love it !
In a wide bowl, mix all the ingredients given above except hot water.
After mixing the dip, check for consistency.
If its too thick, add little more olive or hot water.
Mix well and serve with Nachos, Chips, Potato wedges or French Fries !
METHOD - STEP BY STEP PICTURES
In a wide bowl, mix mayonnaise, tomato ketchup, garlic powder, chilli flakes, pepper powder, Italian seasoning or oregano, basil and olive oil.
Check for consistency. If its too thick, add little more olive oil or a tbsp of hot water. Mix well, check for taste. Add more seasoning or ketchup if required. Mix well and serve with Nachos, Chips, French Fries or Potato wedges.

Note
Adjust the quantity of Italian seasoning, chilli flakes and pepper powder as per your taste.
You can skip pepper powder if you don't like.
For variations, you can add some hung curd instead of tomato ketchup.

I started making chocolate quesadilla at home after tasting chocodilla at Taco bell restaurant. Chocolate quesadilla is nothing but chocolate filled tortilla. Earlier I used to make Nutella quesadilla but this tortilla stuffed with dark chocolate shavings or choco chips tastes the best. Its so easy to make and I am sure your kids and family would love it. Grated dark chocolate bar - 1 cup ( Use cooking chocolate bar) Or choco chips – 3/4 cup (adjust)
Butter - to grease the tortilla
HOW TO MAKE CHOCOLATE QUESADILLA
Take the dark chocolate bar and grate in a plate. Set aside.
Take the tortilla sheet and put in a butter greased dosa tawa.
Cook one side of tortilla sheet and flip it. Spread the grated chocolate in one half of cooked side of the sheet.
Fold the other side of the sheet to cover the chocolate and cook in dosa tawa greased with butter.
Cook the tortilla sheets till golden brown spots appear in the sheet and chocolate melts.
Remove and grease with butter. Serve hot !
METHOD - STEP BY STEP PICTURES
Take the cooking chocolate bar and grate it. Keep aside. Instead of chocolate bar, you can use small sized chocolate chips too.
Grease the dosa tawa with butter and put a tortilla sheet. Cook one side and flip it. Spread the chocolate gratings in one half of the cooked side or spread the choco chips in one half of the sheet.
Fold the sheet and cook both the sides by flipping and pressing the sheet until the chocolate melts.
Grease with butter and remove the chocolate quesadilla. Cut into two triangles using a scissors or knife and serve hot ! Enjoy topping with chocolate sauce if you like.

Adjust the quantity of chocolate as per your taste.
You can spread Nutella instead of grated chocolate but taste differs.
You can also try adding grated diary milk chocolate instead of dark chocolate but I am not sure about its taste and texture.
Do not over cook tortilla sheets. It may become chewy.

Recently I came across this wheat flour pizza without yeast and oven in Cooking shooking Youtube channel. As I was craving to eat pizzas, I tried it instantly. It came out so well. Though the taste of this atta pizza cannot be compared with the regular pizza dough made with all purpose flour and yeast, It is really good and a healthy alternative.
As I had already shared a tawa pizza recipe, making this one was not so difficult for me. In this recipe, cooking pizza without oven is slightly different. Its more like baking cake in a kadai or pressure cooker. Salt is being used. Also I made a thin crust pizza for Raksha and medium crust pizza for myself and Sendhil. So pizza in the pic looks thin and not fluffy. But the pizza base was really soft. One couldn’t guess that this pizza is yeast free.
Baking powder, baking soda and curd are the most important ingredients in this recipe. So do not skip any. I served it hot by garnishing with Dominno's pizza seasoning. It was yummy ! Toppings - as per your choice (I used onion, tomato only)
Butter - 1 tbsp (to apply on sides of crust)

HOW TO MAKE WHEAT FLOUR PIZZA WITHOUT YEAST, OVEN
Wash and slice onion, tomato, olives and capsicum for toppings.
In a wide bowl, mix atta/wheat flour, baking powder, baking soda, salt and sugar.
Add required curd gradually and make a smooth, slightly sticky dough. Do not use water or milk.
Add little oil and knead the dough to become non sticky.
Divide the pizza dough into 2 parts. Take a butter greased round plate. Spread the dough.
Press and make a dent around the corner. Prick with fork. Spread pizza sauce / pasta sauce, red chilli sauce all over the pizza.
Arrange the toppings like onion, tomato, capsicum, olives and sweet corn or paneer pieces.
Cover with grated cheese. Apply butter around the corners for easy removal.
Take an old kadai and spread 1 inch powdered salt. Preheat in high flame for 5 minutes.
Now lower the flame completely and place a small bowl inside the kadai.
Place the pizza plate and cover cook in low flame for 10 to 15 minutes.
Remove the pizza to a plate and serve hot. Enjoy !
WHEAT FLOUR PIZZA - STEP BY STEP PICTURES
Wash and slice onion, tomato, paneer cubes, olives and capsicum if using for toppings.
In a wide bowl, mix wheat flour, baking powder, baking soda, salt and sugar. Mix well. Make a dent and add curd gradually.
Make a slightly sticky dough. Do not use water to make the dough. Use curd only. Add some oil and knead the dough for 5 to 8 minutes till it become non-sticky.
Divide the dough into 2 portions. Take one ball and spread the dough in a butter greased plate. Make a round shape. Prick with a fork. Mix pizza sauce / tomato sauce and chilli sauce.
Spread the sauce. Stud in and arrange the toppings. Cover with grated cheese. Apply butter generously all over the sides to remove the pizza easily after cooking.
Take an old kadai. Spread powdered salt for 1 inch. Heat the kadai in high flame for 5 minutes till salt is heated. Keep an eye such that salt should not get burnt.
Now place a small bowl and invert over the kadai. Place the pizza plate and cover the kadai. Keep the flame completely low. Cover cook for 10 to 15 minutes. Remove once the corners turn golden brown with a nice smell. Remove the plate from the kadai.
Gently slide the pizza to a serving plate using a knife or flat ladle. Sprinkle oregano or pizza seasoning on top. Slice and serve hot. Enjoy !

Do not skip baking powder and baking soda.
Use curd to make the dough.
Do not make the dough too sticky. We must knead adding oil to make a smooth, non sticky dough.
Toppings can be our choice. You can use baby corn, paneer cubes, olives, jalapeno and sweet corn.
You can also try sprinkling tandoori masala powder for additional flavor and taste.

Eggless wheat flour pancake is one of our favorite weekend breakfast recipes. We love to have it with chocolate syrup and honey. I have heard my sister and friends in abroad telling me about store bought pancake mix. I got tempted to try eggless homemade pancake mix and prepared it. It came out so well, soft and fluffy. Raksha and Sendhil loved it. Usually all purpose flour / Maida is used in store bought pancake mix. But I am happy that I tried it with some healthy alternative, whole wheat flour instead of Maida. I used Choco chips in my pancake batter. You can add blueberries, mashed banana for healthy variations. Friends, do try this easy pancake mix at home and make the pancakes instantly.
Wheat flour/Atta - 3 cups ( I used Aashirvaad brand)
Baking powder - 3 tsp / 1 tbsp ( use fresh powders for best result)
Cinnamon powder - 1.5 tsp
Salt - a big pinch
Sugar – 3 tsp/ 1 tbsp
To make pancake
Pancake mix - 1 cup
Water - 2 tbsp.
Milk - 1 cup ( boiled, at room temp)
Cooking oil - 1 tbsp ( use odorless oil, I used refined oil)
Melted Butter - 2 tbsp
Vanilla essence - 1 tsp
Choco chips – 1 tbsp
Wheat flour – 1/2 tsp ( mix with Choco chips to avoid sinking)
HOW TO MAKE EGGLESS PANCAKE MIX
In a wide bowl mix the flour, baking powder, cinnamon, salt and sugar.
Store in a box. Homemade pancake mix is ready.
To make eggless pancakes, take 1 cup of pancake mix in a bowl.
Add milk, water, butter,vanilla essence and cooking oil.
Mix without lumps. To this batter, add 1 tbsp of choco chips mixed with wheat flour. Heat a tawa and grease with butter.
Pour a small ladleful of pancake batter. It should be thick and round.
Cook in medium flame. Flip and cook the other side too.
Remove and serve with honey / maple syrup.
HOW TO MAKE PANCAKE MIX AND EGGLESS PANCAKE AT HOME - STEP BY STEP PICTURES
To make homemade pancake mix, take wheat flour, baking powder, cinnamon powder, salt and sugar. Mix well. Store in an air tight box. Homemade pancake mix is ready.
To make eggless pancakes with the mix, take 1 cup of pancake mix in a bowl. Add the mentioned quantity of melted butter, vegetable oil, vanilla essence, boiled milk at room temperature and water.
Mix well to make lumps free batter. In a small bowl, take choco chips and add 1/2 tsp wheat flour. Mix well and add to pancake batter. This step helps to avoid choco chips sinking in the batter. Batter should be thick but flowing.
Heat a pan / tawa. Grease with butter. Pour a small ladleful of batter. Do not spread it. Make it thick and small.
Cook in medium flame till it bubbles on top. Flip the other side and cook till golden.
Remove in a plate. Make the other pancakes and stack them. Drizzle chocolate syrup or honey or maple syrup. Enjoy !

This pancake mix stays good for a month.
Consistency of the batter should be thick, smooth but flowing.
Cook the pancake in low to medium flame patiently.

Cajun potatoes was in my try list since I tasted in Barbeque nation hotel. Cajun fried potato with mayonnaise was served as starter. It was so tasty. We all loved it very much and had 2 servings extra. Raksha and Sendhil told me to try at home. When I was searching for Barbeque nation style Cajun potato recipe, I found one in my Instagram page feed. I tried it for a weekend lunch. It came out so well just like the ones in Barbeque nation. The recipe I followed was given from scratch with homemade Cajun spice mix recipe. So it was so easy and convenient . For variations, you can deep fry the potatoes. I shallow fried it. Also you can adjust the quantity of mayonnaise as per the taste. Lets see how to make Barbeque nation hotel style Cajun spice potato with step by step pictures.
Mayonnaise - 4 to 5 tbsp ( I used eggless mayo, Veeba brand)
Tomato ketchup
- 1 to 2 tbsp
Cooking oil - to shallow fry potatoes.
Cajun spice mix recipe
Garlic powder or garlic paste - 1 tsp
Dried oregano - 1/2 tsp
Dried thyme - 1/2 tsp
OR pizza seasoning – 1 tsp
Pepper powder - 1 tsp
Red chilli powder - 1 tsp
Big onion - 1 (finely grated or paste)
Salt - as needed
HOW TO MAKE CAJUN POTATO
Wash and pressure cook baby potato with skin adding salt and water in pressure cooker.
Take the cooked potato and press with fork gently.
Add corn flour, maida and coat well. Shallow fry them till golden brown on both the sides.
Remove in a plate. To make Cajun spice mix, mix all the ingredients given under “Cajun spice mix recipe” in a bowl.
Add mayonnaise, tomato ketchup. Mix well.
Just before serving, add the mayo mix over the potato and serve !
CAJUN POTATO RECIPE - STEP BY STEP PICTURES
Wash and pressure cook baby potato with skin adding required water and salt in a pressure cooker base. Cook in high flame for one whistle. Switch off the flame and . Potato should not be over cooked. It should be soft but retain its shape.
Take the potato and press it with a spoon gently to flatten it. Coat it with maida and corn flour. Heat oil in a kadai. Shallow fry the potato both sides. Cook in medium flame to make the outer layer crispy. Flip it whenever needed and fry it.
In a bowl, mix all the ingredients given under “ Cajun spice mix recipe “. Add mayonnaise, tomato ketchup. Add little hot water to dilute the mix if needed.
Add the mayo, cajun mix to the potato and serve hot immediately.
Note
You can use regular potato instead of baby potato. Just pressure cook whole potatoes.
For variations, you can deep fry the cooked potato instead of shallow frying it.
Adjust the quantity of mayonnaise and tomato ketchup based on your taste.

This is my second post on vegetarian spaghetti recipe. I started trying out spaghetti based recipes recently and my first recipe was easy garlic spaghetti. We loved that a lot. Christmas is the perfect time for me to attempt some interesting cakes and cookies recipes. Last year during this time, I posted few Christmas special recipes like Gingerbread man cookies, Tutti frutti cookies, eggless tutti frutti cake, shortbread cookies, Kulkul , eggless rose cookies and some more. This year, I wanted to start my Christmas recipes with this easy, melt in mouth, most special snowball cookies recipe. Its a very simple cookie that can be made with easily available ingredients. Snowball cookies is also called as Mexican wedding cakes/cookies, Russian tea cakes.
With lots of butter and nuts ( Pecan or walnuts)these cookies comes out with a melt in mouth texture and crunchy taste. Pecan nuts is widely used for the recipe. But I had used a combination of nuts which you can find in the ingredients list.These snowball cookies can be made without nuts as well. I followed the recipe from Classy cakes and watched You tube video by Jenny can cook. Even though this is my first try, I am completely happy with the result. Raksha loved it a lot and took it for her school snack box today.

Granulated sugar - 2.5 tbsp ( Powdered sugar can also be used)
Vanilla essence - 1 tsp
Salt - A small pinch
Chopped Nuts - 1/2 cup ( Pecan nuts is preferable, I used combo of walnuts, cashews, hazelnut and melon seeds)
Icing sugar or powdered sugar – 1/2 cup ( to coat the cookies)
Cinnamon powder – 1/2 tsp ( optional)
METHOD
Chop the nuts finely and keep aside. In a wide bowl, mix the softened butter, sugar, salt and vanilla essence. Beat well for 5 minutes. The mixture will become creamy.
Add maida, mix well. Add chopped nuts and mix well with your hands. Make a smooth , non-sticky dough. Dough should not be too wet and sticky. Some recipes call for refrigerating the dough for 30 minutes. But some recipes don’t say so. So I baked the cookies immediately using half of the dough. I wrapped the remaining dough in a cover and refrigerated it for 30 minutes. Then made balls and baked it.
To make balls, take the cookie dough ( If refrigerated, thaw it for 10 minutes and then use it) and scoop out a tbsp of dough. Make balls and arrange them in a butter greased or butter paper lined baking tray. Leave half inch gap between each cookies.
These cookies don;t expand or flatten much as we have not used baking powder or soda. If your cookies flatten so much, then the quantity of butter is more. In that case, add more maida and sugar, proceed.
Preheat the oven in convection mode at 180c and place the baking tray inside the oven.Bake at 180c for 10-12 minutes. Open the oven and touch one cookie,try to move it. If its too soft, immovable, sticky and doughy, bake for another 2 minutes else remove the baking tray and check the bottom of cookies.If its slightly golden in color, your cookies are done. These cookies would be very soft when hot. But it will continue to cook even after taking out from the oven.So do not over bake the cookies.Just 12 –14 minutes is sufficient. My cookies had some cracks on top.
Do not touch the cookies till it becomes warm. Take 1/2 cup of icing sugar in a wide bowl. Once the cookies turn warm, dip the cookies in the icing sugar and give one coating. Arrange them in a tray and let the cookies cool down completely. Again dip the cookies in the icing sugar and give the second coating. If you wish, you can go for third coating as well. Keep the cookies in a tray and serve them. These cookies stays good for 2-3 days if done properly.

Note
Do not over bake the cookies. It will turn hard and sometimes burnt. I baked it approx. 13 minutes.
The cookie dough I kept in the refrigerator baked quickly ( 2 minutes lesser) than the ones I baked without refrigeration.
Do not add more sugar than the mentioned quantity because we are coating the cookies with icing sugar.It will become over sweetened.
My cookies were mildy cracked.
