Paneer Bhurji Recipe - How to make Paneer Bhurji

Paneer bhurji recipe

Paneer bhurji is a simple, quick and tasty side dish for chapathi / roti. It can be prepared easily under 15 minutes. All you need is some onion, tomato for the base along with whole spices and spice powders. You can serve this paneer bhurji as side dish for roti / chapathi or stuff and roll it to make paneer frankie and enjoy ! You can also stuff this paneer bhurji in two bread slices, toast to make it a sandwich. Sometimes, I use this paneer bhurji to make paneer masala dosa too.

Paneer bhurji recipe - Scrambled paneer masala recipe for chapathi / roti.

INGREDIENTS
1 cup = 250ml
  • Paneer / Cottage cheese - 200 gms
  • Cooking oil - 2 tbsp
  • Cumin seeds – 1/2 tsp
  • Big onion – 1 (finely chopped)
  • Ginger garlic paste – 1 tsp
  • Big Ripe tomato -1 (-do-)
  • Turmeric powder - 1/4 tsp
  • Red chilli powder - 1/2 tsp
  • Crushed kasoori methi – 1 tsp
  • Garam masala powder - 1/2 tsp
  • Salt - as needed
  • Sugar - 1/4 tsp
  • Water - as needed
  • Coriander leaves - to garnish
HOW TO MAKE PANEER BHURJI
  1. Wash and scramble the paneer into small pieces using your hands.
  2. Heat oil and splutter cumin seeds. Saute onion till transparent.
  3. Add ginger garlic paste and saute till raw smell goes off.
  4. Add tomato and saute till mushy. Add red chilli powder, turmeric powder, garam masala powder, salt and sugar. Mix well.
  5. Lastly add the scrambled paneer. Mix gently and switch off the flame.
  6. Add crushed kasoori methi and finely chopped coriander leaves.
  7. Mix and serve with roti/ chapathi.
METHOD - STEP BY STEP PICTURES
  • Wash the Paneer and scramble into small pieces or grate it using a big holed grater. Do not make it mushy. Set aside.

  • Heat oil in a kadai. Splutter cumin seeds. Saute onion, ginger garlic paste till raw smell goes off.

  • Now add the tomato and saute till mushy. Add turmeric powder, red chilli powder and garam masala powder. Add salt and sugar.

  • Mix well and lastly add the scrambled paneer. Mix gently and add crushed Kasoori methi. Switch off the flame and garnish with finely chopped coriander leaves.

Note

  • For variations, you can saute 1/4 cup of chopped capsicum along with onion.
  • You can also add 1/2 tsp of coriander seeds powder if you like.

Easy Paneer Curry | Paneer Masala Curry For Chapathi

This is an easy peasy paneer curry for chapathi / roti. Paneer butter masala is the only gravy I make using paneer as its Raksha’s favorite. Most of the paneer gravies call for grinding tomato onion to make the base. But I really got bored of making it in the same way. So I tried this easy paneer curry recipe after watching few YouTube channels.

There is no grinding job for this paneer masala curry. Its so easy to make and can be prepared under 10 minutes. Bachelors and working women can prepare it for their lunch box quickly. Friends, do try this easy paneer masala curry and enjoy with chapathi / roti.

INGREDIENTS

  • Paneer / Cottage cheese - 200 gms ( cubed)
  • Cooking oil - 2 tbsp
  • Cinnamon - 1 inch
  • Cloves - 2
  • Cardamom - 1
  • Cumin seeds - 1/2 tsp
  • Big onion - 1
  • Tomato – 2
  • Ginger garlic paste – 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Red chilli powder - 1/2 tsp
  • Coriander seeds powder - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Sugar - 1/2 tsp
  • Salt & water - as needed
  • Crushed kasoori methi – 1 tsp
  • Coriander leaves - to garnish
HOW TO MAKE PANEER CURRY
  1. Wash and chop onion, tomato finely. Cube cut paneer and keep in hot water till use.
  2. Heat oil in a kadai. Saute the whole spices. Add onion, ginger garlic paste.
  3. Saute tomato till mushy. Add turmeric powder, red chilli powder, dhania powder, garam masala powder, sugar and salt.
  4. Add water and boil till oil floats. Lastly add the paneer pieces and crushed kasoori methi. Mix well and give one boil.
  5. Switch off the flame and serve hot with roti and chapathi.
METHOD - STEP BY STEP PICTURES
  • Wash and chop onion, tomato finely. Cut paneer into small cubes and keep it in hot water till use.

  • Heat oil in a kadai. Saute cinnamon, cloves, cardamom add add the onions. Saute till transparent. Add ginger garlic paste and saute till its raw smell goes off.

  • Add some water and boil in low flame till oil floats on top. Lastly add paneer pieces and crushed kasoori methi. Mix well and boil for a minute.

Note

  • For variations, you can add green peas, capsicum, boiled potato cubes and cauliflower instead of paneer.

Paneer Noodles Recipe – Maggi Paneer Masala Noodles

Recently I tasted this Maggi paneer masala noodles in Bannerghatta Meenakshi mall food court. Its a popular street food. In the restaurant menu card, this dish was titled as Paneer noodles delight. I was expecting hakka noodles with paneer masala. But they served Instant Maggi noodles with onion, tomato masala and paneer. Sendhil and Raksha were kidding me that I spent 100rs to eat 10 rs Maggi 😉. Yes, even though it was a bit disappointing I really liked the way they dressed up a simple Maggi to a spicy, tasty paneer masala noodles. I tried to recreate the same at home for our Sunday breakfast. It came out very well and similar to the one I tasted. If you feel, Maggi noodles is unhealthy, you can try the same with any other instant noodles like Top Ramen, Yipee or use plain noodles too. Finally it is your choice. I used Maggi veg atta noodles. So I did not add carrot, green peas or capsicum. I made it in a simple way by adding onion, tomato masala and paneer soaked in water.  I did not even roast the paneer pieces in oil as it may make the paneer chewy and hard. So this version of Maggi paneer masala noodles is very easy and quick to prepare in busy mornings. Bachelors and working women who loves to eat Maggi can try this yummy version. Make your own variations by adding more vegetables or tofu instead of paneer. to make it vegan and healthy.  If you don’t want to use tastemaker, you can add garam masala powder and some chat masala powder. Instant Maggi paneer masala noodles recipe for breakfast / dinner and lunch box

INGREDIENTS


  • Maggi veg atta noodles packet - 3 small ( Use any instant noodles)
  • Paneer / cottage cheese - 100gms ( chop into small cubes)
  • Cooking oil  or butter - 2 tbsp
  • Cumin seeds - 1/2 tsp
  • Big onion - 1 (Finely chopped or thinly sliced)
  • Ripe tomato - 2 (Finely chopped)
  • Red chilli powder - 1/2 tsp
  • Maggi taste maker powder - 3 packets
  • Turmeric powder - 1/4 tsp
  • Sugar - a pinch
  • Salt - little for masala
  • Water - 3.5 cups ( 3 + 1/2 cup)
  • Coriander leaves – to garnish

HOW TO MAKE MAGGI PANEER MASALA NOODLES

  1. Chop paneer into small cubes. Soak in hot water till use.
  2. Heat oil and splutter cumin seeds. Add chopped onion, tomato and saute well.
  3. Add chilli powder, turmeric powder and little salt, sugar.
  4. Add water, noodles tastemaker powder and bring to boil.
  5. Break the noodles and to boiling water. Cook till soft.
  6. Lastly add paneer cubes and chopped coriander leaves. Mix well and switch off the flame.
  7. Remove and serve hot immediately.

MAGGI PANEER MASALA NOODLES - STEP BY STEP PICTURES

  • Boil 2 cups of water. Switch off the flame. Chop paneer into small cubes as shown in the cover picture. Soak the paneer pieces in hot water till use. It helps to keep the paneer soft. Alternately you can shallow fry paneer cubes in little oil and add to the noodles at the end. 

  • Take 3 packets of any instant noodles along with taste maker powder. Finely chop onion, tomato into small pieces.
  • Maggi paneer masala noodles
  • In a wide kadai, heat oil. Splutter cumin seeds. Add finely chopped onion and saute till it becomes transparent. Add tomato pieces, required salt, sugar, turmeric powder, red chilli powder and saute till tomato becomes mushy.

  • Now add water and tastemaker powder. Let it roll boil. Now break the noodles into two parts and add to the boiling water.

  • Keep the flame medium and let the noodles boil in open flame for 5 to 10 minutes till 80% of water is drained off. Toss in whenever needed to avoid burnt bottom. Now cover the noodles with a lid and cook in low flame for 2 minutes to cook till soft. But make sure it doesn’t become mushy.

  • Lastly add the soaked paneer pieces and finely chopped coriander leaves. Mix gently, switch off the flame and serve immediately.Enjoy !  ( I cut the paneer pieces into small cubes after adding to the noodles. Note

  • Adjust the quantity of chilli powder as per your taste.
  • You can also add 1/2 tsp garam masala powder for more masala flavor.
  • If you are using plain noodles instead of Maggi, you can replace tastemaker with more red chilli powder, coriander powder, garam masala powder and chat masala powder.

Dhaba Style Palak Paneer Recipe – How To Make Punjabi Dhaba Style Palak Paneer With Video

Dhaba style recipes were in my try list since I started to visit mini Punjabi dhaba with my school moms friends for kitty parties. All my friends rave about this dhaba and took me there. Yes, I completely agree with them. I too loved their hot, freshly prepared food with mild spiciness and homely taste. Reasonable rates as well. Though the gravies are bit oily, the taste of it makes us forget the calories. After eating there, I had bookmarked few dhaba style recipes to try at home. To begin with, I tried this yummy Palak paneer for the first time following the recipe from one of my favorite YouTube channels – Cooking shooking. I am not sure that this is the authentic Punjabi dhaba style Palak paneer. But this recipe won’t disappoint you. I tried this recipe confidently based on the readers feedback in the video. As I had already tried restaurant style Palak paneer, I could spot the difference in taste and the method of preparation of this dhaba style recipe. It came out really well and tasty. We all loved it. And now after trying this dhaba style recipe successfully, I am confident enough to try more. Soon I will try to get the recipe from mini Punjabi dhaba restaurant and share in my space. Ok, Lets see how to make Palak paneer in dhaba style with step by step pictures and video !

INGREDIENTS
1 cup - 250ml
  • Paneer / Cottage cheese – 1 cup (200 gms)
  • Spinach / Palak leaves – 1 big bunch
  • Green chilli – 1 to 2 nos
  • Ripe Tomato – 1 no
  • Big onion – 1 no
  • Curd – 1/4 cup
  • Red chilli powder- 1/2 tsp
  • Dhania powder / coriander seeds powder – 1 tsp
  • Nutmeg powder – 2 pinches
  • Cumin powder – 1/4 tsp
  • Garam masala powder - 1/2 tsp (optional)
  • Sugar – 1 tsp
  • Salt & water – as needed
To Saute
  • Cooking oil - 2 tbsp
  • Bay leaf - 1 no
  • Cumin seeds - 1/2 tsp
  • Garlic cloves - 5 nos ( Finely chopped)
  • Ginger - 1 tsp ( finely chopped)

  • Fresh cream – 2 tbsp ( to garnish)
  • Crushed Kasoori methi - 1/2 tsp (optional)
HOW TO MAKE DHABA STYLE PALAK PANEER
  1. Wash the palak leaves and set aside. Soak paneer cubes in hot water till use.
  2. Heat oil and splutter cumin. Saute bay leaf, onion, green chilli, garlic, ginger,tomato.
  3. Switch off the flame and let the mixture cool down.
  4. Add curd and mix well. Switch on the flame and keep it low.
  5. Add the spice powders, sugar and salt. Mix well and boil for sometime.
  6. Add palak leaves and saute till it becomes soft and cook completely. Cool down.
  7. Grind everything to smooth or coarse paste as you like.
  8. Again saute this paste in a kadai. Boil for few minutes.
  9. Lastly add the paneer, Fresh cream and crushed Kasoori methi. Mix well and serve hot !
DHABA STYLE PALAK PANEER - STEP BY STEP PICTURES
  • Clean Palak leaves, discard the root part. Take the leaves along with stem. Wash it well. Chop roughly. Keep aside. Chop paneer into small cubes. Boil 2 cups of water. Remove from the flame and keep the paneer immersed in hot water till use. It helps to keep the paneer soft.
  • Heat oil in a kadai. Splutter cumin seeds. Add bay leaf. Saute chopped onion, green chilli, ginger and garlic. Saute till onion becomes transparent. Now add chopped tomato and saute till mushy.

  • Switch off the flame. Let the mixture becomes warm. Add whisked curd and mix well. Switch on the flame again and keep it low. Add red chilli powder, dhania powder, garam masala powder (optional) , sugar, salt, nutmeg powder and mix well. Boil for few minutes.

  • Add washed palak leaves and saute till its cooked completely. Dhaba style palak paneer
  • Switch off the flame and grind everything to a smooth paste. Add this paste to the kadai. Add 1/2 cup of water and simmer the palak paste for few minutes. Lastly add the soaked paneer cubes, crushed kasoori methi and fresh cream. Mix well and switch off the flame. Serve hot with roti, naan or kulcha.

Note

  • Adjust the quantity of green chilli as per your spice level. Actual recipe uses 2 green chillies but I used one.
  • Kasoori methi is optional. Its not used in the original recipe but I added it for additional flavor.
  • For variations, you can blanch the Palak leaves and then add to tomato mixture while grinding.
  • Sugar is used to retain the color of Palak leaves. So do not skip it.
  • Do not add the curd when the mixture is hot. The mixture will become watery and gives a curdled look to the gravy.
  • You can skip tomato and use curd alone.

I tried this recipe from Nags Space. I made slight changes in the original recipe by simplifying its cooking procedure & the list of ingredients.It came out excellent in taste .Thanks a lot Nags. Its a quick and easy to make recipe.So I make it very often for Raksha’s lunch box. She loves the combination of soft chapathi with paneer butter masala more than other gravies.The addition of cashew paste, milk and fresh cream makes it so rich. You can make this gravy without onion and garlic too. I am sure it tastes great. Paneer Butter masala - Restaurant style How to make restaurant style paneer butter masala at home

INGREDIENTS
1 cup - 250ml
  • Paneer – 50 gms (cubed ) ( Soak in hot water till use)
  • Big onion – 1 no (chopped roughly)
  • Tomatoes – 2 nos (medium sized)
  • Cooking oil or butter - 1 + 1 tbsp
  • Ginger , Garlic paste – 1 tsp ( Or grind 1 inch ginger & 5 cloves of garlic)
  • Coriander powder/Dhania powder – 1.5 tsp
  • Red chilli powder – 1 tsp
  • Garam masala powder – 1/2 tsp
  • Tomato ketchup - 2 tsp
  • Salt- As required.
  • Boiled Milk – 1/2 cup to 1 cup ( use as required)
  • Fresh cream - 1 tbsp ( I dint have fresh cream .So I removed a tsp of skin from the boiled milk and added it.)(Paalaadai)
  • Cashew – 5 nos ( to grind to a smooth paste)
  • Crushed Kasoori methi - 1 tsp
METHOD

  • Peel and chop the big onion roughly. Chop the paneer into cubes. Boil 1 cup of water and add 2 tomato. Let it boil till the skin of tomato cracks. Switch off the flame and remove the tomatoes, set aside. ( You can peel the skin of tomatoes if you wish) Add the cubed paneer pieces to the remaining hot water. Let it be in hot water till use. It helps to keep the paneer soft.No need to fry the paneer pieces. ( For variations, you can skip blanching the tomato and grind with onion mixture as shown in the next step)

  • In a kadai, heat oil( use butter for rich taste) and saute the onion till transparent.Add Ginger&garlic paste,saute till its raw smell goes off.Now add the red chilli powder, dhania powder , garam masala powder. Saute in low flame. Make sure you don’t burn them. Let the mixture cool down completely.

  • To the mixture, add the blanched tomato and raw cashews. Grind everything to a smooth paste adding required water. Heat oil ( or butter) in a kadai and saute the ground paste till thick.

  • Add tomato ketchup, sugar and salt. Mix well and boil the gravy till oil starts to float on top. Add the boiled milk. Mix well and check the taste. Let the gravy boil for few minutes. Gravy gets a nice orange shade. Lastly add the crushed kasoori methi, paneer cubes.If the gravy is too thick, add more milk. Mix well. Add  fresh cream at the end and switch off the flame.Check for spice & salt. If its too spicy add some more milk and vice versa. Serve with roti !!

Note
  • Use butter instead of cooking oil for rich taste & flavor.
  • Instead of grinding cashews along with tomato, onion mixture, you can grind it separately and add it along with milk.
  • You can also use almonds/badam in place of cashews. But cashews are the best !
  • You can peel the skin of blanched tomato, grind it to a puree and add to the gravy. But I ground it with onion masala.
  • Adjust the quantity of chilli powder and dhania powder as per your taste.
  • Adding kasoori methi gives the perfect restaurant style taste.So please don’t skip it.

Here is a collection of 25 Paneer Recipes that includes some quick and easy Indian cottage cheese recipes like gravy for chapathi/roti, Paneer snacks for kids, starters and sweets. I have never thought that I would make a collection of 25 Paneer Recipes (Indian Cottage Cheese in English) in my food book. 


In my family, nobody is a big fan of paneer.Generally Kids love paneer based dishes whereas my daughter Raksha is just the opposite. She hated paneer recipes till she was 6. So paneer makes its appearance very rarely in my kitchen. Even if I make it, I used to try mostly restaurant style paneer gravy as a side dish for roti/Chapathi to make my family eat it without any complaints. 
Slowly Sendhil started to eat paneer recipes liking its taste & knowing its health benefits. Whereas Raksha began to ask me to prepare side dish recipes using paneer by seeing her class mates lunch boxes.
