UGADI PACHADI,OBBATTU - UGADI RECIPES

I wish all my friends a very happy Ugadi. Though we don’t celebrate this festival at home , I love Ugadi pachadi and poli with coconut stuffing.. We tamilians celebrate Tamil new year which falls on 14th of this month. We prepare Mango pachadi and rice payasam along with other lunch recipes. My friends here and in Andhra celebrate this festival in a grand manner. I asked them about their lunch menu for ugadi and they gave me a big list.  But I thought of trying this famous ugadi pachadi and obbatu recipe among them. I got these recipes from my friend Megha. She said obattu and ugadi pachadi will be in their menu for sure.. Other than this they prepare Mango rice / puliohara , Vada, sambar , Sundal ,chitranna ( Variety rice) and it goes on.

I’ll start with Ugadi pachadi. Its the easiest pachadi I’ve ever made. We too make mango pachadi on Tamil new year day but its a bit time consuming process. But this recipe needs no cooking. Its a mixture of 6 tastes that signifies all kinds of emotions in life i.e sweet , salt , spice , sour, tangy and bitter.. I liked it very much. Adjust the quantity of ingredients based on your liking. I have also shared bobbatlu / obbattu recipe with step by step pictures. Do try these recipes and enjoy the Ugadi festival !

INGREDIENTS
1 cup -250ml
  • Raw mango – 1/4 cup
  • Grated jaggery – 3 tbsp
  • Tamarind – Big gooseberry size or 2 tsp extract
  • Red chilli powder – 1 tsp
  • Crushed Neem flower – 1 tbsp (I used dried one, fresh would be fine)
  • Coconut bits – 1 tbsp (optional)
  • Water – as needed
  • Salt – little

HOW TO MAKE UGADI PACHADI - METHOD
  • Wash and chop the raw mango pieces finely. Soak tamarind in water and take the extract ..
  • In a bowl , take the raw mango pieces  , tamarind extract , red chilli powder , grated jaggery , salt, neem flower and mix well.
  • Add little water to adjust the consistency based on your liking..
  • Some like it to have it thick and some likes to be thin. Please add water accordingly.

Usually I make poli using the left over channa dal puran. Yesterday when I went for shopping I saw a newly opened stall for selling obbattu and other snacks for Ugadi especially.. I bought some to taste. It was very nice. The thing is they make obbattu in front of us and they serve it really hot. So I was able to see how they rolled , the consistency of dough , puran etc. With that help, I tried it. It was very tasty ..We loved it a lot. It came out soft and thin.

Oil is the most important ingredient here. The more oil you add, the more tasty poli.. Use sesame oil / Gingely oil to get a nice taste. So no need to worry about adding more oil as it is is good for health. Also the consistency of dough should be loose.. It should not be sticky, adding more oil make it non sticky. I have tried to give the quantity of water and oil what I used. Try and adjust if more quantity is needed. Keep the dough covered for 1 hour minimum which also helps to get soft poli. I used obbattu sheet to roll them. In india, you can get in all stores. It costs just 2 rs.. If you don’t get it , you can use either banana leaf , ziplock cover or good quality polythene sheet. Grease it with oil and make the shape.

For dough
  • Maida / All purpose flour – 1 cup
  • Gingely oil/Cooking oil – 1/4 cup + 3 tbsp
  • Water – 1/2 cup (little less , may be 1 tbsp)
  • Salt – 1/4 tsp
  • Turmeric powder – 1/4 tsp
  • Cooking soda – a pinch (optional)
For stuffing / Puran
  • Grated coconut – 1 cup
  • Grated jaggery – 3/4 – 1 cup
  • Cardamom powder – 1/4 tsp
  • Water – Very little
Poli / Obattu sheet  - 1 no ( cut into round shape)
Ghee – 1 tbsp ( for greasing the poli , optional)

METHOD

  • In a wide bowl , take the flour , salt , turmeric powder , soda , oil and mix well.Add water and make a sticky dough. Then add 1 tbsp of oil over the dough and knead well for 5 minutes to make the dough non-sticky. Add one more tbsp of oil if necessary. Lastly add 3 tbsp of oil and cover the dough. Keep it covered for minimum of 2 hours to maximum 8 hours. The more time you keep the dough the more soft it would be. Click here to see my latest detailed post on Obbattu

  • Start making puran now. Grate coconut and jaggery. Grind the coconut in Mixie to make it a fine powder. In a non-stick pan, melt the jaggery adding little water just to cover it.. Strain the impurities using a metal strainer if necessary.

  • Again boil the syrup till it becomes frothy and raw smell of jaggery leaves it. It will take 5-8 mins in low flame.. Then add the grated coconut and mix well till it becomes thick.
  • Switch off the flame and add the cardamom powder. Mix well and allow it to cool..

  • Now take the dough, knead well for 10 minutes. The dough should be loose , elastic and pliable. Add more oil if it sticks..
  • Take a small lemon sized ball of dough and equal sized ball of puran. Pat the dough to make a thick small circle and keep the puran in the middle.

  • Bring all the corners to the middle and close the ball. Roll it well.

  • Cut the obbattu sheet into round shape and grease it with oil. Place the ball and press it with your hands to make it very thin. Press it to make it round as per the size of the sheet.

  • Heat dosa tawa , drizzle little oil and put the obbattu along with the sheet and remove the sheet alone in a second . Cook the poli for few seconds , flip it and again cook for another few seconds. Make sure you don’t over cook it. It will be roasted and becomes like an papad. Cooking has to be done very fastly.

  • After removing from the tawa , grease it with ghee for additional taste and flavour.. Enjoy !

Note : After it cools down , you can store them in a box for 2-3 days.

PULI MILGAI RECIPE | PULI MILAGAI PACHADI - TIRUNELVELI PULI PACHADI

Yesterday my parents visited me after so many months. I had a great time with them.I was craving to eat my mom’s food for long time. So I told my mom to prepare this puli pachadi which is the best accompaniment for dal rice/paruppu sadam. Some people call this as Puli milagai thokku. I also had this by mixing in plain rice adding sesame oil. It tasted like puliodharai. I have tried this as a side dish for ven pongal too. Lovely combination it is!!. 

When I was pregnant my mom had made this ‘n’ number of times for me as I wanted something tangy those days. Yesterday dal, pachadi , rasam & tindora fry was our lunch. It was yummy .Thank you amma. This pachadi can be stored for 3-4 days when refrigerated. Lets see Puli Milagai preparation below.

INGREDIENTS
For 2-3 people
  • Tamarind – Big gooseberry size
  • Green chillies – 3 –4 nos (increase if u want more spicy)
  • Sambar onion – 10 nos ( chop finely)
  • Hing/ asafetida – 2 generous pinches
  • Salt & water – as needed
To temper:
  • Mustard seeds – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Curry leaves – a few
METHOD
  • Soak tamarind in water for 15 mins. Take the extract and set aside.
  • Slit the green chillies and chop them into pieces. Chop the onions.
  • In a kadai , heat oil and temper with mustard , urad dal , curry leaves.
  • Now add the chopped onions and green chillies.
  • Saute well and then add the tamarind extract.
  • Add the required salt & hing. Let it boil for few mins.
  • When it gets thicken, switch off the flame and transfer to a serving bowl.
Enjoy with dal rice !!

NOTE
  • As the green chillies absorb all the tanginess, we usually eat it along with onions. So I chopped them finely and used here.
  • If you are making for kids, just slit the chillies, cook and remove while eating.
  • Please add more hing as it gives the flavour for this dish.

Tamilnadu Lunch Menu 1- South Indian Lunch Menu Ideas

Last week my in-laws were here .We spent 5 beautiful days together.I prepared these dishes for lunch.Generally we have thogayals for lunch.So i prepared Ridge Gourd thogayal , Gooseberry – curd pachadi , Puli keerai ,Broad Beans sambar , Carrot – beans poriyal,Urad dal Vada , Papad & milk kheer .I am sending this post to my SIL's  "Show wat u cook for Guests" event.

PULI KEERAI

Let me start from Puli keerai.Hope u can find out from the dishes.I normally prepare keerai kadaiyal.For a change , i tried puli keerai by asking my mom.It was very tasty when had with plain rice & ghee.So here comes the ingredients & method of preparation.

Ingredients
  • Arai Keerai / Mulai keerai –2 cups (chopped)
  • Tamarind – a small gooseberry size
  • Red chilly – 2-3 nos
  • Salt & water – As needed.
To season
  • Ghee – 2 tsp
  • Mustard seeds – 1/ 2 tsp
  • Urad dal – 1/2 tsp
Method:
  • Remove & Wash the leaves and cook it along with tamarind & red chilly.
  • Let it cool & then grind with salt to make a smooth paste.
  • Do the seasoning.Serve with plain rice & ghee !!

RIDGE GOURD THOGAYAL

Ingredients
  • Ridge gourd – 1 no (medium size)
  • Tamarind – Medium gooseberry size
  • Red chilly – 5 nos
  • Urad dal – 1 tbsp
  • Hing – 2 pinches
  • Salt & water – As needed.
  • Oil – As needed
Method :
  • Heat a kadai with a tsp of oil and roast urad dal , red chilly & hing.Set aside.
  • Soak tamarind in little warm water and keep aside.
  • Peel the skin of ridge gourd using a peeler and cut into small pieces.
  • Heat the kadai with a tbsp of oil and saute the ridge gourd pieces till its completely cooked.May take 10 mins in medium flame.
  • Let it cool . Finally grind everything to make a smooth paste.
  • Serve with plain rice and sesame oil.
CARROT– BEANS PORIYAL
Ingredients
  • Carrot – 2 nos
  • Beans – 10 nos
  • Moong dal – 2 tsp
  • Sambar powder – 1 tsp
  • Grated coconut – 2 tbsp
  • Salt & water – as needed.
To season :
  • Mustard seeds – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Jeera – 1/4 tsp
  • Curry leaves – A sprig
 Method
  • Wash & cut carrot , beans into small pieces.
  • In a vessel take the veggies along with moong dal , Sambar powder & Salt.
  • Add the required amount of water and cook it.Take care the moong dal should not become mushy.It should be just blossomed.
  • Once its cooked well , remove & cool.Drain the excess water if any ( I usually add that water to sambar )
  • Heat a kadai with a tsp of oil and do the seasoning.Finally add the cooked veggies and toss well.
  • Add the grated coconut and mix well. Saute for 5 mins & remove.
  • Serve as an accompaniment for Sambhar / Rasam & Curd rice.

BROAD BEANS SAMBAR / AVARAKKAI SAMBAR

Ingredients
  • Broad Beans / Avarakkai – 10 nos (cut into two)
  • Toor Dal – 1/3 cup
  • Tamarind – Big gooseberry size
  • Home made Sambar Powder –  2 tsp (Refer at the end of this post)
  • Sambar onions / Shallots – 10 nos
  • Green chilly – 3 nos (slit cut)
  • Tomato – 1 no ( finely cut)
  • Curry leaves – a sprig
  • Hing /asafetida – 3- 4 pinches
  • Salt & water – As needed.
To Season:
  • Mustard seeds – 1/2 tsp
  • Fenugreek Seeds – 1/4 tsp
  • Curry leaves – a  few.
  • Red chilly - 1 no
  • Coriander leaves – To garnish
Method:
  • In a Pressure cooker take toor dal with a pinch of turmeric powder and a drop of oil .Add the cut broad beans pieces to it with required water..Cook for 1 –2 whistle till the dal turns mushy.Mash it with a ladle.Set aside.
  • Soak Tamarind in warm water for 15 mins and extract the juice from it.
  • Peel the sambar onions and Slit cut the green chilly into two.
  • Heat a kadai with oil and splutter the mustard seeds &  fenugreek seeds & pinched red chilli.Then add the sambar onions, Green chillies & curry leaves and tomato pieces.Saute well.
  • Then add the tamarind extract , Sambar powder , a pinch of turmeric powder , 3 pinches of hing & few curry leaves.
  • Cover & let it boil till the onions get cooked.Nice aroma arises.
  • Finally add the cooked toor dal along with broad beans and let it boil for another 5 mins.
  • Remove & Garnish with coriander leaves.
Serve hot with plain rice & ghee !!
URAD DAL VADA

U can refer here for the recipe & preparation.I added a tsp of toor dal & a tsp of raw rice while soaking a cup of urad dal. Remaining the same as given there.

MILK KHEER

U can find the actual recipe in this blog .I just added 2 pinches of cardamom powder.Else the same procedure.It was very tasty & rich. Thanks a lot Jeyashri .Smile

SAMBAR POWDER RECIPE
  • Coriander seeds – 1/4 kg
  • Red chilly – 1/4 kg
  • Fenugreek seeds – 50 gms
  • Toor dal – 50 gms
  • Channa dal – 50 gms
  • Pepper corns – 50 gms
  • Jeera – 2 tbsp
  • Turmeric powder – 50 gms

Sodhi Recipe - Tirunelveli Sodhi Kuzhambu,Ginger Pachadi Recipe

Sodhi kuzhambu recipe
Sodhi recipe is the most popular kuzhambu recipe in Tirunelveli. As my mom is basically from Nellai district, she makes authentic Tirunelveli recipes very well. This Sodhi Kuzhambu is one of the signature dishes of her. Usually Sodhi is prepared only when we have special guests at home, especially for newly married couples. So it is called as “Maapillai sodhi”. Its completely made out of coconut milk and its a bit time consuming process too.

The best side dish for sodhi is ginger pachadi/ Inji pachadi which helps in easy digestion of coconut milk. So if you plan to make this , don’t forget to prepare ginger pachadi. Also we make raw banana chips to munch out. Potato fry and Chips are served as side dish. Some people make sodhi kulambu as side dish for appam and idiyappam just like Kerala vegetable stew. But we usually mix it with rice and enjoy. Lets see how to make Tirunelveli special Sodhi at home :)

Sodhi kuzhambu Sodhi kuzhambu / Tirunelveli Sodhi Recipe and Ginger pachadi recipe for rice

Total time: 30 Minutes


INGREDIENTS
     1 cup - 200ml
  • Coconut – 1 no (My mom says 1/2 coconut for 1 person.)
  • Drum stick – 1 no (cut into finger size)
  • Potato – 1 no (cube cut)
  • Carrot, Beans - 1/2 cup ( Chopped,Optional)
  • Green chillies – 3 nos (slit cut)
  • Garlic – 1 bulb or less
  • Small onions – 10 nos (peel the skin )
  • Ginger – 1 inch size (finely chopped )
  • Warm Water – 4 cups
  • Cooked Moong Dal – 1/3 cup
  • Lemon – 1/2 no
  • Salt – Less than the required amount
To grind
  • Green chillies – 3 nos
  • Salt – a little (just to retain the color of chilly)
METHOD

    • Pressure cook moong dal, mash well & set aside.
    • Grate the coconut or slice out pieces using the back of a ladle or knife. Add 1 cup of warm water..Grind it,squeeze and take the first milk. Keep it aside. Then add 1 cup of warm water and again repeat the same process to take the second milk.Set aside. Finally add the remaining 2 cup of water & take the third milk.

    • Grind green chillies adding salt using little water to a paste (salt is used to prevent blackening of chillies). Heat a kadai with 1 tbsp of oil and saute small onions,ginger, garlic and green chillies.

    • Take the third coconut milk in a wide bowl and add vegetables. Boil till vegetables are cooked well. It takes nearly 10 minutes.
    • Once the veggies are cooked , add the second milk along with the ground chilly & cooked moong dal & sauteed onion mixture. Let it boil well for 5-10 mins and becomes thick.
    • Lastly add the third milk and boil for another 5 mins. Switch off the flame & leave it for half an hour. Then add the lime juice and mix well.
    Mix with hot rice, enjoy with ginger pachadi & chips.

Ginger pachadi recipe Inji pachadi - Best side dish for sodhi

INGREDIENTS

  • Ginger – 2 big finger size
  • Coriander seeds – 2 tsp
  • Red chilly – 1 no (adjust)
  • Tamarind – small berry size
  • Jaggery – Small gooseberry size (i like it sweetish, so adjust acc. to ur taste)
  • Salt – a pinch
To temper n saute
  • Coconut Oil  or cooking oil – 1 tbsp
  • Mustard seeds – 1/4 tsp
  • Urad dal – 1/4 tsp
  • Small onions – 6 nos (finely chopped)
  • Red chilly - 1 no (pinch into two)
METHOD

  • Chop the ginger finely and set aside.
  • Heat a kadai with oil saute the ginger , coriander seeds and red chilly till nice aroma arises. Grind it with little salt to a smooth paste.

  • Heat the kadai with a tsp of oil and season with mustard seeds, urad dal .Then saute small onions & red chilly.. Soak the tamarind in warm water and extract the juice.

  • Add the ginger paste with tamarind water and boil for 5 mins.Then add the jaggery to it. Allow to boil until it reaches pachadi consistency.

RICE PAYASAM , MANGO PACHADI | TAMIL NEW YEAR RECIPES

Wish you all a very happy and prosperous Tamil new year:).

To celebrate Tamil new year, we usually make rice payasam / Arisi payasam and Mango pachadi along with other lunch recipes like rice,  sambar, Poriyal  and Vada for tamil new year as offerings to god. I learnt these recipes from my MIL. Rice payasam is a very tasty , rich dessert recipe with jaggery, coconut milk and milk. Mango pachadi has all the 6 tastes ie Sweet, salt, tangy, sour, spicy and saline which denotes our life with all the stages. . Try these recipes, offer to god and have a great new year. Color of payasam and pachadi may vary based on the color of jaggery.

RICE PAYASAM / RICE KHEER

Ingredients
  • Raw Rice – 1/4 cup
  • Moong dal – 1.5 tbsp
  • Powdered jaggery –  3/4 cup (adjust to ur taste)
  • Thick coconut milk – 1/4 cup
  • Milk – 3/4 – 1 cup
  • Cardamom powder – 1/4 tsp or 2 cardamoms powdered.
  • Water – 3 cups (depends on the quality of rice )
  • Fried Cashew nuts – to decorate
  • Fried cloves – 2-3 nos
  • Roasted and powdered jaathikkai /Mace – a pinch
Method
  • Roast rice and moong dal separately in a kadai with little ghee till the rice puffs and dal turns light golden brown.

  • Now transfer the roasted items into a cooker with adequate water. Pressure cook for 1- 2 whistles till it turns mushy.

  • Once it is done, mash the rice well and add the jaggery and let it melt. Boil till the raw smell leaves and becomes frothy. Add water if necessary so that it doesn’t get burnt. Stir constantly. Boil in low flame.( Or you can make jaggery syrup and add to it)

  • Mix well and then add the thick coconut milk, stir it well. Let it boil once and transfer it to the serving bowl.

  • Then add the cardamom powder, fried cashews, cloves and jathikaai powder along with 1/4 cup of milk.
  • As time proceeds, this payasam may get thicker, so add milk accordingly to make it watery and check for sweetness.
Decorate it with saffron if you wish:)

MANGO PACHADI

Ingredients
  • Raw mango – 1.25 cups ( 300 gms )
  • Green chilly – 1 no (Finely chopped)
  • Powdered jaggery – 1/2 cup
  • Grated coconut – 1/4 cup
  • Salt – very little
  • Water – as needed.
  • Neem flower – 1 tsp ( dry roast till nice aroma & crush it with hands)
To season
  • Oil – 1 tsp
  • Mustard seeds – 1/4 tsp
  • Urad dal – 1/4 tsp
  • Red chilly – 1 no (pinched)
  • Curry leaves – a sprig
Method
  • Cut the raw mango into slices and cook with finely chopped green chilly and little salt and water. Let it cook well.

  • Once it starts to turn mushy , add the powdered jaggery and let it melt and boil till the raw smell leaves. Boil in low flame. Meanwhile grind the coconut with little water. Add the ground coconut paste to the cooked mango mixture.

  • Mix it well and season with mustard, urad dal , red chilli and curry leaves.
  • Add the crushed neem flower at the end. ( This step is optional, we add for this occasion only) . mix well and serve..

Pachadi is ready !!


NOTE
  • If the mango is too sour , you may have to add more jaggery. To avoid this , add more water to cook the mango & drain the additional water while boiling. It helps to remove the sourness.
  • U can follow this recipe and make pachadi with Raw banana stem (Vazhaithandu ) and yellow pumpkin..
