Rava Payasam | Sooji Kheer - Easy Payasam Recipes

Rava payasam/Sooji kheer is one of the easiest rava recipes.Every friday, i have to make some payasam, sweet pongal or rava kesari for vilakku pooja neivedyam.So i keep thinking to do varieties of payasam recipes.I came to know about this payasam from Sendhil’s Chinna maami in Kumbakonam.Once she made this for lunch.I saw how she made and asked the recipe too.From that time, i started making this payasam for friday pooja whenever i run short of time.It can be made very quickly and tastes soooo good.After so many attempts, i started making on my own way with some improvemnets.The best thing of this payasam is its yield.Just 1/4 cup of rava is enough to make payasam for 4-5 persons.So u can try this for ur guests.Its an easy dessert recipe.I heard people give this sooji kheer for 6 months baby too.Its a very filling and yummy payasam recipe!!Do try this payasam.U’ll love it like meSmile.

INGREDIENTS
To roast in ghee
  • Ghee - 1 tbsp
  • Cashews & raisins - few
  • Clove - 1 no
  • Mace/Jathikai - a very small piece
  • White rava/Sooji/Semolina - 1/3 cup
To cook
  • Milk - 2.5 cups
  • Water - 1/2 cup
  • Sugar - 1/2 cup
  • Sweetened milk maid - 1 tbsp(optional)
  • Cardamom - 2 nos
METHOD

  • In a pan, heat ghee and roast the cashews,raisins,clove and mace.Remove in a plate.Crush cardamom and mace together and keep everything together.
  • In the remaining ghee,roast rava for 4-5 minutes in medium flame till u get a nice smell.

  • Boil milk and water together in a bowl till u roast the rava.When they roll boil,reduce the flame to low and slowly add the roasted rava by stirring the water+milk mixture.(Just do as u make for rava upma)
  • Mix everything well till there are no lumps using a whisk.Cover and cook for 8-10 minutes in low flame stirring in between.The payasam will thicken.Add milk or water to loosen it if necessary.

  • After the rava is well cooked and becomes a porridge,add sugar.Mix well and allow it to boil for few minutes.

  • Lastly add 1 tbsp of condensed milk,give a boil and switch off the flame.
  • Add the aromatic spices.Serve hot or refrigerate & serve chill.Tastes great in both the ways.

SOOJI KHEER/PUDDING FOR BABIES
  • Roast 1/4 cup of rava in 2 tbsp of ghee and set aside.
  • Take 2 tsp of roasted rava and cook in 1/4 cup of milk till done.Keep stirring and cook for 5-7 minutes in low flame.After it thickens and becomes soft,add required sugar.Mixwell till sugar melts.Cool it down and feed the babies.
NOTE
  • Condensed milk is optional.But it gives a rice taste to the payasam.
  • Please adjust the water+milk quantity according to the consistency u need.
  • This payasam thickens when it cools.So make it slightly watery before switching off the flame.
  • Adjust the quantity of sugar as per ur taste.We felt it tastes great only if sugar is on higher side.

Coconut Payasam | Arisi Thengai Payasam Recipe - Payasam Varieties

Every Friday, I used to do Thiru vilakku poojai at home. So I make payasam sweet pongal or kesari for neivedyam. For today's Friday pooja, I tried arisi thengai payasam ( Rice coconut kheer with jaggery) for the first time asking the recipe from my MIL. It came out very well. We loved it a lot. 

This coconut payasam is surely a keeper. I have decided to try this for my guests too. It was so nice with a great smell of coconut. I added ghee roasted coconut bits (Kerala style) which gave a nice crunchy taste in between while eating. Do try this thengai payasam / coconut payasam with jaggery for a change from our usual paruppu payasam. U’ll love it :)

Coconut payasam Thengai payasam/Coconut payasam recipe for festivals and pooja.Tastes great !

Prep Time: 30 Minutes Cook Time: 20 Minutes Total Time: 50 Minutes


INGREDIENTS
1 cup - 200ml
To soak n To grind
  • Raw rice - 1.5 tsp
  • Grated coconut - 1/2 cup (tightly packed)
For syrup
  • Grated jaggery - 1/2 cup
  • Elachi/Cardamom seeds - 3 nos (powdered)
  • Milk or coconut milk - 2 tbsp(optional)
To roast in ghee
  • Ghee - 2 tsp
  • Coconut pieces - 1/2 tbsp
  • Dry grapes - few (optional)
  • Cashews - Few nos (optional)
METHOD - HOW TO MAKE ARISI THENGAI PAYASAM

  • Wash and soak the raw rice in water for 30- 45 minutes. Grate the coconut. Grind the coconut and rice adding 1/2 cup of water to a smooth paste.

  • In a bowl, take the ground paste and add 1.5 cups of water. Allow it to cook well in simmer flame for 10-12 minutes. Stir in between to avoid getting burnt bottom. The mixture will turn slightly thick like a porridge.

  • In the meantime, grate jaggery. Add 1/4 cup of water, melt it, make a syrup, strain  to remove impurities and set aside.
  • When the coconut paste is cooked well, add this syrup. Mix well. Boil for 2-3 minutes.

  • Roast the coconut pieces & cashews in ghee and add to the payasam. Add cardamom powder.
  • Remove and add the boiled & cooled milk. Mix and Serve.

Note
  • Use paagu vellam to get a nice color.
  • Adding milk is optional. Add based on the consistency you need.
  • U can also add coconut milk instead of milk at the end before switching off the flame.
  • Addition of roasted coconut bits is optional. I followed Kerala style pradhaman for this step.

Onam Festival Food | Kerala Onam Sadya Lunch Menu

This is my second post on Onam sadya lunch menu with Onam sadya serving order. Basically I love to try other state recipes a lot apart from my usual Tamilnadu recipes .When it comes to regional cuisine , my first choice is for Kerala food. My dad’s mom (my aachi) is from Nagercoil. As it is in kerala border , my aachi’s cooking was very similar to Kerala style. She makes many coconut based recipes like sodhiAvial, theeyal etc. So right from my childhood, I grown up eating those foods. This may be the reason I have a love towards kerala food. But I have never thought I could make authentic kerala recipes in my kitchen.

I must thank my Ex-neighbor Mrs. Prema for sharing all her yummy recipes & inspired me to cook them. Last year I posted onam sadya recipes for the first time from vanitha magazine with the help of her. I should say that was one of the hit posts in my blog. This year I couldn’t try vanitha magazine recipes as she had changed her house. I really miss her and her recipes very badly :( . She was a caring and good friend of me. This time too, before cooking these recipes, I called her over phone to confirm the methods of making..

I must also thank all our Malayali blogger friends because all these recipes are tried from their blogs. I googled the recipes, chose some best recipes based on the comments and tried it. I have given the source of each recipe under the title. Everything came out very well. I felt so happy when I made this platter. I referred Roshni’s blog for serving order. Hope I have served them in correct order. Thank you Roshni :)

I wanted to try the recipes which I din’t post in my last year’s onam sadya platter. So this year I tried paruppu curry , puli inji , Kerala sambar with freshly ground spices  (without coconut), Kerala tomato rasam , Puliserry , Olan , Avial( my mom’s recipe) , Cucumber kichadi , Vendakka pachadi , Beans mezhukkuppuratti , Cabbage thoran , Channa dal payasam  , Sharkara payasam & Naranga achar ( my mil’s pickle)..

U may wonder by seeing the color of sharkara payasam ;). It has to get a brown shade. As my jaggery is colorless the syrup was very light in color. So I added a pinch of red color to it. I thought it will give a brown paagu effect to the payasam but unfortunately it became orange and also it became very thick like pudding. So friends please excuse. I’ll try to update the picture. But the taste was really great. :L)

I’ve given step by step pictures for all the recipes in a simplified manner.  Hope it will be understandable and helpful :)

KERALA SAMBAR(WITH FRESHLY GROUND SPICES)

INGREDIENTS
  • Toor dal – 1/2 cup
  • Pumpkin – 1/4 cup (cubed)
  • Drumstick – 1 no
  • Potato – 1 no
  • Turmeric powder – 1/4 tsp
To roast n grind
  • Oil – 1 tsp
  • Dhania / coriander seeds – 1.5 tbsp
  • Urad dal – 1.5 tbsp
  • Red chillies – 5-7 nos
  • Fenugreek seeds – 1/2 tsp
  • Hing – 1/4 tsp
Tamarind – Small lemon size
To temper & saute
  • Cooking oil – 2 tbsp
  • Mustard seeds – 1 tsp
  • Red chilli – 1 no
  • Big onion – 1 no
  • Curry leaves – few
  • Tomato – 1 no
  • Turmeric powder – 1/4 tsp
  • Salt n water – as needed
Coriander leaves – few to garnish

METHOD
  • Pressure cook dal adding turmeric powder and a drop of oil. Mash it well and set aside. Take extract from the tamarind and set aside.
  • In a pan , heat oil and roast all the ingredients given under “ to roast n grind”. Saute well without burning and switch off the flame. Make them to a paste and set aside.

  • In a kadai , heat oil, temper mustard seeds, red chilli , curry leaves and saute the onions , tomatoes & curry leaves. Saute till tomato turns mushy. Add tamarind extract ,salt  and curry leave. Allow it to boil well, add all the vegetable and boil the tamarind extract till the veggies cook well.

  • After the veggies are cooked , add the mashed dal and spice powder. Mix well and boil for 5 minutes.sambar will thicken, add water if necessary .
  • Garnish with coriander leaves.

Line a bowl with banana leaf and pour the sambar. Close it with a lid. Serve with rice !
  • Any vegetables like yam, carrot , pumpkin , drumstick , radish, lady’s finger and ashgourd can be used in this sambar..

KERALA TOMATO RASAM

INGREDIENTS
  • Tomato – 2 (chopped or crushed)
  • Tamarind  – Small gooseberry size
  • Cooked dal water – 1/4 cup (optional)
  • Black pepper corns –  1 tsp
  • Red chillies – 2 to 3
  • Garlic – 6 cloves
  • Jeera – 1/2 tsp
  • Dhania – 1 tsp
  • Asafoetida– a pinch
  • Salt & water – as needed
  • Coconut oil – 1 tbsp
  • Chopped coriander leaves – 1-2 tbsp
METHOD
  • Fry the dry red chilli for a minute. Grind together fried red chilli, pepper corns, garlic, jeera and coriander seeds slightly coarse in texture  OR U can make it to a coarse paste as per the original recipe.

  • Heat oil , fry ground masala for 2-3 mins. Add chopped tomatoes and mix well. Cook till tomatoes become soft.

  • Add tamarind extract and salt. Mix well. Add 2 cups of water and coriander leaves. Let it boil, reduce the flame and simmer for 5-7 mins. Add a pinch of hing.Serve hot !

PULISSERY OR MORU CURRY
Source – Pachakam

INGREDIENTS
  • Thick n sour Curd - 1 cup
  • Grated coconut - 1/3 cup
  • Green chillies – 4 nos
  • Garlic pod - 1 no
  • Cumin seeds -  1/2 tsp
  • Small onion – 2 no
  • Turmeric powder - 1/2 tsp
To temper
  • Coconut oil - 1 tbsp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Fenugreek seeds- 1/ tsp
  • Curry leaves –few
  • Roasted Fenugreek powder - 1/4 tsp
Sugar – 1/4 tsp
Salt - As reqd

INGREDIENTS
  • Grind together coconut, green chillies, garlic, 1/2 tsp cumin seeds, small onion and turmeric powder into a fine paste.Cook the ash gourd pieces separately. 
  • Beat the curd by adding this paste, salt and sugar. After beating , the mixture should be of medium thick consistency.

  • Heat oil in a pan. Temper mustard seeds. Add 1/2 tsp cumin seeds along with fenugreek seeds and curry leaves and mix it well.
  • Pour the curd mixture  and cooked ash gourd into the pan and keep it on a medium flame, stirring continuously, until it becomes warm.  NEVER ALLOW THE CURD MIXTURE TO BOIL. Remove it from fire and sprinkle roasted fenugreek powder over the Pulissery and mix it well.

  • Serve hot with rice.
U can also use cucumber , Mango & pumpkin


BEANS MUZHUKKUPURATTI
Source – Spicy chilli

INGREDIENTS
1 cup - 250ml
  • French Beans-1 cup ( cut into 1cm length)
To grind to coarse paste
  • Small onions- 6 numbers
  • Garlic – 3 cloves
  • Chilli powder- 1 tsp
  • Turmeric powder -1/4 tsp
To season
  • Coconut oil – 1.5 tbsp
  • Mustard seeds - 1/2 tsp
  • Curry leaves - 2 sprigs
METHOD
  • Chop the beans , add salt and pressure cook it in high flame for one whistle. ( This is for fast quicking & less oil consumption).Drain all the excess water.But make sure beans should be soft yet firm., It should not lose its shape.
  • Coarsely grind the items given under “to grind” without adding water.

  • In a pan , heat oil and temper mustard and curry leaves. Now add the beans and saute well in high flame for a minute to absorb all the moisture in them..
  • Now add the coarsely ground paste and saute them till the raw smell goes off. Do it in medium flame.Fry till the beans look dry and shiny..Remove n serve !

CABBAGE THORAN

INGREDIENTS
1 cup - 250ml
  • Cabbage - 1 cup
  • Big Onion –2 nos
  • Turmeric powder – 1/4 tsp (optional)
To grind to a coarse paste
  • Grated coconut – 1/4 cup
  • Green chillies – 2 nos
  • Jeera – 1/4 tsp
To temper
  • Coconut oil –2 tbsp
  • Mustard seeds –1 tsp
  • Red chillies – 1no
  • Curry leaves - A few
METHOD
  • Grind coconut , green chillies and jeera to a coarse paste without adding water. Set aside. Chop the cabbage and onions. Mix together the finely chopped cabbage, onions, and salt.
  • Heat oil in a kadai. Add mustard seeds and allow it to splutter. Then add pinched red chilli and curry leaves to it. Now add the ground coconut mixture, saute for few minutes. Remove and serve !

OLAN

INGREDIENTS
  • Black-eyed beans /vanpayar / kaaramani – 1/4 cup
  • Ash gourd -  2 cups, cut into cubes
  • Green chilli – 3-4, slit lengthwise
  • Water – as needed
  • Thick coconut milk – 1/2 - 3/4 cup (adjust)
  • Salt- as needed
  • Curry leaves – few
  • Coconut oil – 1 tbsp
METHOD
  • Heat a tsp of oil in a kadai and fry the beans till it starts to crackle.( This step is not in the original recipe. But I did it for additional flavor)
  • Pressure cook the beans with 1 cup of water in low flame for two , three whistles. Drain the excess water & keep aside the cooked beans. The beans should not be over cooked and it should retain its shape.
  • Cook together ash gourd, green chilli, salt and 1.5 cups of water, till ash gourd becomes tender. Ash gourd also should not be overcooked and it should retain its shape.
  • Add the cooked beans to the ash gourd and mix well. Add coconut milk and curry leaves. Cook on low flame for 5-7 mins. Remove from the fire and drizzle some coconut oil.The curry has a thick consistency.

No need to soak the beans if u fry in oil. In the actual recipe , maria mentioned that it is not necessary to soak the beans even without frying..


VENDAKKA PACHADI

INGREDIENTS
  • Thinly chopped Lady’s finger – 1 cup
  • Thick curd – 1 cup
  • Green chilli – 2 nos(finely chopped)
  • Salt – as needed
  • Sugar – a pinch
  • Coconut oil – 1.5 tbsp
  • Mustard seeds – 1 tsp
  • Curry leaves – few
METHOD
  • In a kadai , add oil , temper mustard seeds and curry leaves.Then add the finely chopped lady’s finger & green chillies and saute in high flame continuously .Add salt , sugar and saute till it is cooked well.
  • Remove & add curd to it. Mix well and serve !

CUCUMBER KICHADI
INGREDIENTS
  • Cucumber – 1 no
  • Thick curd – 1 cup
To grind
  • Green Chillies  - 2 nos
  • Grated coconut –1/4 cup
To temper (optional)
  • Mustard Seeds - ¼ teaspoon.
  • Coconut       - ¼ tbsp
  • Red Chillies- 1 pinched.
  • Curry leaves   - few  
METHOD
  • Cut cucumber into small pieces and set aside.
  • Grind coconut and green chillies to a smooth paste adding water.Mix this paste with cucumber.Temper mustard & other ingredients and add to the mixture.
  • Lastly add the thick curd , mix well & serve immediately.

CHANA DAL PAYASAM

INGREDIENTS
  • Chana dal – 1/4 cup
  • Grated jaggery – 1/2 cup
  • Grated coconut – 1 cup
  • Salt – a pinch
  • Cardamom – 2 nos powdered
  • Ghee – 1 tbsp
  • Roasted nuts – 2 tbsp
METHOD
  • In a mixie add  1/3 cup of water and take the first coconut milk.Set aside.Again add 3/4 cup of water and take the second milk.Keep aside.

  • Pressure cook channa dal adding enough water for two,three whistles in low flame.Open and mash them well. I pulsed it in mixie.
  • In a pan , melt jaggery , make syrup and strain the impurities.Add the mashed dal to the syrup . Add the second coconut milk and ghee & boil till it reduces to half..

  • Lastly add the first thick milk , cardamom powder and mix well. Boil in very low flame for 2 minutes and switch off the flame.

  • Add the roasted nuts n serve !


SHARKARA PAYASAM

INGREDIENTS
1 cup - 250ml
  • Grated coconut –1 cup
  • Raw rice – 1/4 cup
  • Grated jaggery – 1/3 cup
  • Ghee – 1 tbsp
  • Cashew Nuts & raisins – few

METHOD
  • In a mixie , grind coconut adding 1 cup of water and take the first milk. Again add 1/2  - 3/4 cup of water and take the second milk. Set aside.
  • In a pan , melt the jaggery , make syrup , strain impurities if any. Make jel like syrup..

  • Wash n soak raw rice for 20 minutes. Pressure cook it adding 1/2 - 3/4 cup of water. Rice should be cooked but it should not be mushy.
  • Add the syrup to the cooked rice and boil well. Add the second coconut milk an boil for 5-7 mins in low flame.

  • Lastly before switching off the flame, add the first coconut milk. Mix well. Add the roasted nuts. Serve !

  • This payasam tends to thicken soon. It will become spoonable. Add more milk to get a thin consistency. U can also add 2 tbsp of roasted coconut pieces if you wish.

SABUDANA KHEER RECIPE | NYLON JAVVARISI PAYASAM WITH SUGAR

SABUDANA KHEER WITH SUGAR
I love Nylon sabudana kheer with sugar a lot. But my husband hates it like anything. He can taste it only if the sabudana kheer is with jaggery. So this recipe appears very very rarely in my kitchen. Last week I made this for blogging purpose and enjoyed eating alone ;).

It was absolutely delicious and I was happy that I could make it perfect in my first attempt. I asked my mom & mil for making this payasam because they make this payasam instantly by roasting the nylon javvarisi ( small sized sago) we get in Tamil nadu. So this payasam can be prepared instantly without soaking sabudana. I followed their instructions and the result was ,  a perfect  & delicious payasam. I used nylon javvarisi in this recipe.

U can also use white big ones known as maavu javvirisi in Tamil. For making this payasam with jaggery using white big sago, please check this link..I used sprinklers for decoration as I dint have cashews in hand.  I have used milk and sugar in this recipe. For variations, you can replace them with condensed milk. For rich taste, you can also add coconut milk at the end.

INGREDIENTS
1 cup - 240ml
  • Sabudana / Sago/  javvarisi – 1/4 cup ( I used small sized, nylon javvarisi)
  • Water – 2 cups
  • Milk – 1 cup
  • Sugar – 1/4 cup (adjust)
  • Cardamom powder – 1/8 tsp
  • Cashews – few
  • Ghee – 1 tbsp
METHOD
  • In a kadai , add a tsp of ghee & roast the sago till it  puffs up & turns white..The size will become slightly bigger. Do it in low flame with continuous stirring otherwise sago may be over roasted & burnt.Alternatively you can skin roasting and make it by just washing the nylon javvarisi thrice and cook in required water. 
  • You can also use big, white sago if you don't have nylon javvarisi. But you should wash it twice, soak it overnight adding equal amount of water. ( ie. 1:1 ratio of big sabudana and water).

  • In a bowl, take 2 cups of water and cook this sago till it turns transparent. Keep stirring in regular intervals to avoid sticking to the bottom. Add little more water if needed. It took nearly 10-15 mins to cook.Time may vary..

  • After the sago is completely cooked and becomes almost transparent , add sugar. Mix well & boil for few seconds.
  • Finally add the milk , cardamom powder and boil for 3 minutes to thicken slightly. Roast the cashews in the remaining ghee & add to the kheer..Serve warm or cold..
This kheer tends to thicken when it cools down. So adjust the quantity of milk accordingly.

NOTE
  • For variations , you can add milk in the sago after its 90% cooked. Cook till done and then add sugar, cardamom powder and nuts. By doing this way, payasam tastes rich. 
  • U can also add 1/4 cup of coconut milk before switching off the flame and it make this dessert more tasty.
  • If you want to soak the sago instead of roasting, soak it for 2 hours if nylon variety & over night or around 12 hours for white big ones..

Semiya Payasam Without Condensed Milk- Vermicelli payasam Recipe

Semiya payasam must be the favourite payasam for most of the people in Tamilnadu. Its our family favorite too. People make it for all the special occasions like birthday, wedding anniversay and other occasions at home. Yesterday I made this semiya payasam without condensed milk (Milk maid) for my birthday and I enjoyed every mouth to the core. Its very easy and can be made in a jiffy. Many variations can be made to this payasam recipe by adding finely chopped nuts or badam powder or saffron milk , condensed milk/ milkmaid, khoya and make it taste more delicious. Its a simple but rich Indian dessert recipe. I have already shared Kerala style semiya payasam recipe in my Kerala Onam sadya post using milk.. Here I have shared the basic method in Tamilnadu style. Semiya javvarisi payasam / sago vermicelli kheer in Tamilnadu style.

INGREDIENTS

  • Semiya / Vermicelli – 1/2 cup (roasted)
  • Water – 2 cups
  • Boiled Milk at room temperature – 1 cup
  • Sugar – 1/2 cup
  • Cardamom - 2 (crushed)
  • Cashew nuts - 5 (whole)
  • Dry grapes - 10
  • Ghee - 1 tbsp
HOW TO MAKE SEMIYA JAVVARISI PAYASAM
  1. Heat 1 tbsp ghee in a kadai.
  2. Roast cashew nuts and dry grapes till golden. Remove in a plate.
  3. Roast semiya for 2 minutes. Remove in a plate.
  4. Roll Boil 2 cups of water in a vessel. Add the roasted semiya.
  5. Cook in medium flame for 10 to 15 minutes till its soft.
  6. Add sugar, cardamom powder. Mix well and boil till sugar melts.
  7. Switch off the flame once payasam becomes thick.
  8. Add boiled milk at room temperature to the hot payasam. Add half the quantity of milk for thick payasam.
  9. Lastly add the roasted nuts. Mix well and serve!
HOW TO MAKE SEMIYA PAYASAM - METHOD
  • Roast cashews till golden and dry grapes till bulgy in a tsp of ghee and set aside. Add the remaining 2 tsp ghee in a pan and roast the vermicelli till golden brown. ( I skipped this part as I used MTR Roasted vermicelli)
  • In a wide bowl , take the  water and roasted vermicelli and allow it to cook for 10-15 minutes till it becomes soft to touch and breakable. There should be very little water left with the semiya.

  • Now add the sugar and mix well till sugar dissolves completely. Let it boil in low flame for few seconds. When the payasam becomes thick, add the elachi powder or rose essence and milk. Stir well, give a boil in low flame and switch off the flame.

Serve hot or cold ( refrigerate it) !!

Kerala Paal Payasam Recipe In Pressure Cooker

I had noted down this Kerala style Paal payasam recipe using pressure cooker from Vanitha magazine with my neighbour’s help. When I posted Onam sadhya recipes , I couldn’t try this one. This is also one of the most important payasam recipe which Keralites prepare on Onam day. Its a very simple recipe but very rich & tasty. I loved it a lot. It tasted more like “sweetened condensed milk “.. Just a handful of rice is enough to make payasam for 4 – 5 people. In Kerala, they make this payasam in a wide opened uruli using unakkari (broken red rice).  But I tried in pressure cooker. Usually I make paal paysam for gokulashtami by roasting & grinding the rice. But this has a very simple procedure. I used good quality raw rice but I heard broken red rice would be the best. Do try this payasam for your guests. They will love it for sure.. It can be served warm or cold, it tastes the best either ways ! Lets see how to make Kerala style paal payasam recipe in a pressure cooker.

INGREDIENTS

1 cup - 250ml
  • Raw rice (good quality) – 1/2 cup  (Use Kerala broken rice / Unakkari)
  • Milk – 4 + 1.25 cups ( 1.25 litres)
  • Water – 2 cups ( 500 ml)
  • Sugar – 1/2  - 3/4 cup (Adjust as per your sweetness )
  • Cardamom – 2 nos (optional)
  • Ghee – 1 tsp
  • Cashews & dry grapes – few to roast & garnish

HOW TO MAKE KERALA PAAL PAYASAM - METHOD
  • In a pressure cooker base or big vessel / uruli , take 4 cups of milk and 2 cups of water ( totally 6 cups). Allow it to boil in high flame till it is reduced to 3 cups. Now wash and add the rice and pressure cook in low flame for 3-4 whistle.

  • After the rice is cooked well, open the cooker lid and mash the rice with a whisk or ladle.

  • Add sugar , half cup of milk (if necessary) and let it boil for another 4-5 minutes. Then switch off the flame. You can see the payasam looking light pink in color.

  • As time proceeds , this payasam will thicken. So add  the remaining 3/4 cup of milk according to your desired consistency. Add cardamom powder if you like. Garnish with roasted cashews & dry grapes , enjoy !

NOTE
  • Adjust the quantity of milk and sugar given here as per your taste..
  • I used low fat milk. U can use whole milk or full fat milk to make the dish more rich.
  • Saffron can be used instead of cardamom powder. But color of this payasam will be in yellow side. If you add more milk at the end, you’ll get the white color..
  • U can add sugar anytime if you feel the sweet is less..
