Killu Vadam Recipe – How To Make Killu Vathal–2 Versions

I have never thought I would make koozh Vadam/Vathal in Bangalore. This year Bangalore’s weather is equally hot to Salem. So I told my MIL to make Vengaya Vadagam and killu vadam for me. Last year when I posted Arisi Koozh Vathal recipe, I had mentioned about my mom’s Killu vadam recipe using leftover rice. Before marriage, I have helped my aachi & mom to make this killu vadam. She makes in lots and store for months together. Its a very simple recipe that is made with pazhaya sadam. After marriage, I learnt another version of killu vadam from my MIL. In this version, boiled rice is soaked in water for two hours, ground smooth adding spices and cooked to make it thick like a koozh. Then it is pinched into small pieces and spread on a paper or cloth. This one tastes so crunchy with melt in mouth texture. But this is a time consuming job when compared with leftover rice killu vathal. Leftover rice vathal tastes hard when compared with rice vathal. Both the versions has its own advantages and disadvantages. So I have shared both the version of making killu vadam. Choose any as per your liking and try it. But however you make, it would be loved by all. The flavor of onion reminds you onion pakoda while eating. You can enjoy this vadam with sambar sadam, tamarind rice and lemon rice. Ideal for travel. Killu Vadam Recipe


Killu Vadam Recipe How to make killu vadam recipe - 2 versions

INGREDIENTS
1 cup - 250ml
Version - 1
  • Leftover Rice - 2 cups (Its cooked parboiled rice/ Saapatu Puzhungal arisi)
  • Green chilli - 3 nos
  • Cumin seeds/Jeera - 2 tsp
  • Small onion - 15 nos
  • Lemon juice – 1/2 lemon (small size)
  • Salt - as needed
  • Water - very little
Version - 2
  • Steamed rice/ Boiled rice - 1 cup ( Lunch rice, saapadu arisi)
  • Green chilli - 3 nos
  • Cumin seeds/Jeera - 2 tsp
  • Small onion - 15 nos
  • Lemon juice – 1/2 no ( small size)
  • Salt - as needed'
  • Water - 5 cups ( as needed)
METHOD

    METHOD –1
  • Add water to the leftover rice till it immerses and leave it overnight. The next day morning, take the rice and drain the excess water. Take the rice in a big mixie jar. Add green chillies, hing and salt. Grind to a smooth paste adding very little water if necessary. Add water in a tbsp only if needed. It should come like a thick paste. So do not make it watery. Its the most important point to keep in mind. 
  • After grinding the paste,transfer it to a vessel. Chop the onions into small cubes and add to the rice paste. Add cumin seeds.Sprinkle few drops of lemon juice. Mix well and check for salt. Take a cotton cloth or plastic sheet/Polythene sheet. Pinch the rice dough and arrange it in the cloth as shown below. Let it dry under the sun for 3-4 days till it shrinks and change in color. Keep it under the fan during night.
  • Heat oil to deep fry and fry the vadam till it becomes crispy. Deep fry one or two to check whether its dried up completely. If its not chewy and soft inside, vadam is dried. Else sun dry it for another day or two.Fry the vadam till onions turn slightly golden brown. This vadam browns faster as we use cooked rice and onion. This vadam tastes slightly hard that method - 2. So fry in medium flame carefully. Do not burn them. Remove and serve with rice varieties !!
  • Remove and serve as an accompaniment for rice.
METHOD –2
  • Wash and soak the rice for 2 hours. Grind it to a smooth paste adding green chillies, hing , salt & enough water. I added 2 cups of water to grind it.
  • ( Actually this batter has to be fermented over night.But I skipped this step and made the batter instantly by adding lemon juice for sourness).

  • Add 3 cups of water in a kadai. Let it roll boil.Add the rice paste and mix well.

  • Add cumin seeds & required salt. Mix well and boil the mixture till it becomes a thick paste. After it becomes a thick paste and leave the sides of pan, add water around the paste and cover the kadai with a lid. Adding water in the sides help to prevent the burnt bottom. Keep the flame low and cover cook the mixture till it changes its color to pale white.

  • After the mixture is cooled down, add lemon juice and chopped onions.Check for taste.Pinch into small pieces by dipping your hands in water.Spread them on a white cloth or polythene sheet.

  • Let it dry for 3-4 days till it shrinks and changes in color. Keep it under the fan during night.

  • Heat oil and deep fry one or two to check whether its dried up completely. If its not chewy and soft inside, vadam is dried. Else sun dry it for another day or two.Remove after the vadam is fried well. Onions should turn slightly golden brown. Do not burn them.Remove and serve with rice varieties !!

Note

  • As I told, method 1 is easy compared with method 2. Its ideal for beginners and leftover rice can be used effectively in this summer. 
  • In method 2, you can add more water while grinding & cooking the batter. If the batter is too thick, vadam may taste hard. So make the batter slightly thin.

Masala Coke (Pepsi) – Masala Soda Recipe

Masala coke is a very popular Indian Cold drink in Juice shops of Bangalore and Mumbai. I have tasted masala coke in a small juice shop in Gandhi bazaar. You can find varieties like masala Pepsi, masala Sprite, masala Thumbs up, lemon soda, Lemon cola, lemon ginger soda, paneer soda etc in the menu.

 The recipe of masala coke is very simple & that is made with easily available ingredients. It can be quickly prepared in minutes by adding a lavish sprinkle of masala powders to Coke or Pepsi. When I saw the juice shop guy making it, I got tempted to try it at home. So I bought a can of diet coke & coco cola and tried it for myself and Sendhil. We enjoyed it thoroughly. It tastes more like jal jeera with the fizz of coke. 

If you are concerned about drinking Coke or Pepsi, you can make the same with soda water and enjoy it as masala soda. Make and Serve during parties and get together during this vacation. I am sure everyone will enjoy this drink. Lets see how to make masala coke at home.

Masala coke recipe Masala coke/pepsi recipe at home - Masala soda drink for summer

INGREDIENTS

  • Coke/Pepsi/Coco cola/Thumbs up - 300ml can
( Adjust all these powders based on taste)
  • Chat masala powder - 1/2 tsp
  • Black salt - 1/4 tsp
  • Roasted Cumin powder - 1/4 tsp
  • Ajwain powder – A  small pinch, Optional
  • Pepper powder - 1/4 tsp
  • Lemon juice - few drops
  • Mint leaves - to garnish
  • Ice cubes - to add while serving
HOW TO MAKE MASALA COKE - METHOD

  • In a serving glass, add all the spice powders, lemon juice given above.

  • Add the coke little by little till 1/3 rd of the glass and wait till the bubbles/froth subside. Mix with a spoon.Add another 1/3 rd  of glass and mix well.

  • Repeat until the entire glass is full.Check for taste and add more chat masala, black salt & pepper powder, lemon juice as per your taste.Serve immediately adding some ice cubes.Garnish with mint leaves if you wish and enjoy !!

  • Adjust the quantity of masala powders based on taste.
  • For variations, you can replace coke with diet coke, Pepsi, Thumbs up, Sprite or even Club Soda.
  • If you have jal jeera powder, you can add that instead of chat masala powder & cumin powder.

Orange mocktail / Orange lemon juice recipe is a simple and yummy summer drinks recipe. I make juices & milk shakes with fruits very rarely as we love to eat whole fruits. Recently I had this Orange mocktail in a juice corner. Raksha & myself loved it a lot. She told me to pack it for her school morning break time. So I browsed for mocktail recipes without alcohol and found it from Sharmi’s blog. The combination of Orange juice and lemon juice was perfect. Raksha gave a big thumbs up after drinking it and she told me to make it very often too. I usually make Eggless Orange cake during this fruit season.I am happy that I got yet another interesting recipe using orange fruit. Cold Coffee Recipe – How To Make Cold Coffee Without Icecream

Basically I love to experiment different types of coffee at home. Long back I had tried and shared homemade Espresso coffee without machine. After that I tried to make Cappuccino at home but it was not upto the mark. My recent crush is to try Cold Coffee at home. I have not tasted cold coffee in Cafe Coffee Day(CCD). But I have heard a lot from my friends. So I got tempted to give a try on my own & thought Valentine’s day would be a good choice because Sendhil likes to have cold coffee more than our South Indian filter coffee

This morning I made it for the first time following this recipe. I have never thought its so easy to make at home. Its just a mix and blend of instant coffee powder,cocoa powder, milk and ice cubes. With a mild bitterness, it was awesome. Being a coffee lover,i enjoyed every sip thoroughly. I tried to decorate the glass with hershey choco syrup. But it wasn't perfect :( Cold coffee can be made with & without ice cream. Today I made it without icecream and used Bru instant coffee powder. But I read using Nescafe and ice cream makes it tastier, creamy and rich like Cafe Coffee Day. 

So try to use them if you have in hand. Soon I must try Frappe, mocha and other variants of coffee. Ok, now lets see how to make cold coffee recipe at home. Try it for your loved ones on this Valentine’s day. Enjoy one coffee with two straw.

INGREDIENTS
1 cup = 250ml
  • Instant coffee powder - 2 tbsp ( I used Bru, Nescafe would be better)
  • Unsweetened cocoa powder - 1/2 tbsp
  • Water – 3 tbsp
  • Sugar - 3-4 tbsp
  • Boiled milk - 2 cups ( use full fat milk for best taste)
  • Ice cream - 1 scoop ( optional, Vanilla or chocolate)
  • Ice cubes - few ( I used 3 nos)
HOW TO MAKE COLD COFFEE WITHOUT ICE CREAM - METHOD

  • Heat 3 tbsp of water in a pan and mix coffee powder, cocoa powder along with sugar. Boil the mixture in slow flame till sugar dissolves completely. Keep stirring. Mixture will becomes a thick solution. Switch off the flame and let it cool.

  • Take a big mixie jar and add 2 cups of milk ( Preferrably boiled milk at room temperature or chilled), 3 tbsp of coffee solution, ice cubes and blend well for few seconds till the coffee becomes frothy. ( Store the remaining coffee solution in a refrigerator and use it the next day itself). Check for taste and add more coffee solution, sugar as per your taste.

  • Transfer it to a glass along with froth and serve it with a scoop of icecream on top. If you are not using ice cream, just decorate it with a sprinkle of coffee powder or cocoa powder. You can also add colorful sprinklers or even choco chips.

  • Adjust the quantity of sugar as per your taste.
  • Add more cocoa powder if you like chocolate flavor in your coffee.
  • Full fat milk gives more creamy,frothy coffee. But I used low fat milk here.
  • Store the remaining coffee solution in refrigerator and use it the next day. Do not keep it for long.

Pina Colada is a sweet cocktail made with rum,coconut cream/coconut milk and pineapple juice.It is a spanish term and is considered as the national drink of Puerto Rico.Pina colada can be prepared with alcohol and without alcohol.Today i have shared a non-alcoholic Pina Colada recipe with coconut milk which is popularly known as “Virgin Pina Colada”.I have heard about this drink but was waiting for a chance to taste in a restaurant.Recently I had this drink in cable car,Jayanagar.It was so rich,creamy and lip smacking !!   • Take the washed, cleaned pineapple and chop into pieces.Take them in a blender/mixer.Add sugar and thick coconut milk( I mixed 5-6 tbsp of readymade coconut milk powder in 1 cup of warm water to make thick coconut milk).

Parfait Recipe – When my friend Shalini told me about this recipe,I had no clue of What is parfait,how it is made, how it tastes. Immediately I browsed for the recipe & images.I found in Wikipedia that Parfait is a type of food that is eaten as a dessert or breakfast in United States. It is a French word that means perfect.

In the United States, parfait refers to either the traditional French-style dessert or to a popular variant, the American parfait, made by layering parfait cream, ice cream, and/or flavored gelatins in a tall, clear parfait glass, and topping the creation with whipped cream, fresh or canned fruit. In Canada and the United States, parfaits may also be made by using greek yogurt layered with granola, nuts or fresh fruits, such as peaches, strawberries or blueberries. 

I loved the simplicity of this recipe and tried it for our Sunday breakfast using strawberry flavored yoghurt layered with muesli & fresh fruits. It came out very colorful and we loved its taste too. So I thought of sharing this easy dessert and breakfast recipe for you to try if you are bored with our usual Cereals with milk combo. Its so healthy &a tummy filling recipe. After tasting this strawberry yogurt parfait, I wish to try all the variants of parfait recipe and taste it. Ok, Lets see how to make this easy and healthy fruit yogurt parfait recipe.

Vegans, please replace yogurt with non-dairy yogurt. Actual recipe calls for granola, but I used muesli here. It was super crunchy to taste !

INGREDIENTS

  • Granola Or Muesli - 4 tbsp
  • Flavored yoghurt - 2 cups ( I used DANONE Strawberry yogurt – 80gms)
  • Fresh fruits ( Blueberry , Strawberry,Apple and Cherries) - as needed
HOW TO MAKE FRUIT AND YOGURT PARFAIT - METHOD
  • Refrigerate or freeze the yoghurt for an hour and let it be cold and thick. I bought Danone & Nestle yogurt. But used Danone. Take all the required ingredients and keep it ready.
 

  • In a clear glass/Parfait glass, put 2 tbsp of muesli as the first layer. Then add half of the yogurt from 80gms cup. Again layer it with muesli and then add the remaining yoghurt. Lastly layer it with chopped fresh fruits. Garnish with a fresh mint leaf and serve immediately. Healthy and tasty fruit yogurt parfait is ready. Enjoy ! Doesn't it sound easy ?? ;)
( If you use greek yogurt, you can mix sugar with fresh fruits and then layer it to give a sweet taste. I used sweetened Strawberry flavored yoghurt. So I din’t use any extra sugar. For variations, you can use chopped banana pieces, cranberry, raspberry etc)
If you don't have flavored yogurt in hand, just blend the strawberry adding some sugar, Mix with homemade thick curd & hang it for an hour by tieing them in a cloth or freexe it for an hour to make it thick. Excess water content would be removed. Then you can use this thick curd for making parfait !

Jigarthanda Recipe | Madurai Jil Jil Jigarthanda Cool Drink

Jil Jil Jigarthanda recipe – I still couldn’t believe I made this world famous Madurai special cool drink at home and that too from scratch. Jigarthanda is an yummy super cool drink packed with all the benefits of badam pisin, Nannari sarbath and milk.

The term Jigarthanda refers to “a drink that cools the heart”. It is very popular among Muslim settlers in South India.  I tasted this drink very recently once in Tirunelveli and twice in Salem at Madurai Vilakuthoon Hanifa’s Jigarthanda outlets. I made an instaclick and shared a picture of it in Instagram too. 

Last year when my fellow bloggers shared Jigarthanda recipe, I got tempted to try it at home. But I was not sure about the actual ingredients used in it. After tasting it once, I was able to guess the recipe and started browsing for the same. Few weeks back I got a request from a reader to try n share this recipe in my blog. So I decided to give this a shot and found this recipe from sharmi’s blog & this video very helpful to make the authentic Madurai Jigarthanda. So I followed them & made Jigarthanda from scratch except Nannari sarbath/Sarsaparilla syrup and Kadal paasi. 

Original Jigarthanda recipe may use Kadal paasi or badam pisin. But I used badam pisin as suggested in the recipe. First I bought badam pisin/almond gum(Almond resin in English) and Nannari sarbath from Salem Nattu Marundhu kadai. Then I collected all the other ingredients and made it in my own pace. It took nearly 1.5 days for me to make Bhai ice cream, for soaking Badam pisin and to make reduced milk. So I have suggested an easy method of making Bhai ice cream using store bought vanilla ice cream. Hope it would work. 

One thing I should admit here. I was not able to bring the orange color in ice cream and reduced milk following the original recipe. But somehow I wanted to recreate the shop ones. According to me, the color of milk turns orange only when we add caramelized sugar. So I added little caramelized sugar in reduced milk and a pinch of orange food color in ice cream. I am not sure whether food color is added in the authentic recipe, but I became very happy & satisfied when my Jigarthanda looked and tasted very similar to the ones I had. What do you say friends, Isn’t it looking similar to the Madurai ones ??

Even though jigarthanda’s base ingredients takes more time to prepare, its worthy because once you keep all of them ready in hand, you can make this drink in minutes for your family members and guests. Its after all a mixing job. I am giving a glass of this coolant almost everyday for Sendhil along with his breakfast to reduce his body heat. 

Kadal paasi & nannari sarbath used in Jigarthanda is a very healthy body coolant just like sabja seeds/falooda seeds. So its a must try coolant drink in this summer season to beat the scorching heat. INGREDIENTS
1 cup – 250 ml 

  • Milk - 1/2 litre
  • Almond resin/Badam pisin - 1 tbsp ( you can get in Nattu marundhu kadai/Native stores)
  • Bhai ice cream or vanilla ice cream - as needed ( procedure shared below)
  • Nannari sarbath / Sarsaparilla root extract- as needed
  • Sugar - 2 tbsp + 1/2 tbsp ( Use more if you like sweet sambar)
  • Plain boiled milk - as needed
To make ice cream
  • Milk - 1/2 ltr ( 500 ml, I used low fat milk)
  • Fresh cream - 1/3 cup ( I used Amul )
  • Unsweetened khoya - 2 tbsp ( I used milky mist khova)
  • Sugar - 1/4 cup 
  • Vanilla essence - few drops
  • Orange food color-a pinch(optional)
HOW TO MAKE JIGARTHANDA - METHOD

  • Soak badam pisin/Almond resin in large volume of water overnight. I used 4 cups of water for just a tbsp of badam pisin. It will increase in volume hugely.

  • Boil 1/2 liter of milk in a wide kadai till it reduces into 1/2 the volume. Keep stirring every now & then.Collect the skin that falls on sides and mix with the milk. Milk will thicken. Add 2 tbsp of sugar and let it boil.In the mean time,caramalize 1/2 tbsp of sugar in a mini kadai and add it to the boiling milk.
  • Please click this post to know how to caramalize sugar. Mix well and switch off the flame. This is called as reduced milk which is one of the most important ingredients for making jigarthanda. Refrigerate till use.

  • For making ice cream,boil milk in a pan and reduce it slightly. Add sugar and mix well.Let the milk come to room temperature. Add fresh cream, unsweetened khoya, food color and vanilla essence to it. Mix well without lumps and transfer it to a bowl. Freeze it for 45 minutes and remove it. Grind it smoothly in a mixie and again freeze the mixture for another 45 minutes to 1 hour. 
  • Again remove the half set ice cream and beat it well.Repeat this procedure for 5-6 times. The more you do, the more creamy your ice cream would be. But this is really a tiresome job. I felt very bored of doing this and sometimes forgot to beat the ice cream for 4-5 hours too ;P. So develop some patience and do this activity. Don’t forget to lick the left overs in the mixie jar. It tastes yumm and you will get the interest of beating the ice cream again and again ;P.

  • If you don’t want to go for the above process, I will suggest u an easy way. Just go and get a box of vanilla ice cream and allow it to melt completely. Add food color and khoya to it. Beat in the mixie and mix well without lumps. Freeze it for 4-5 hours. Easy Bhai ice cream is ready. Though I have not tried this method, I am confident this would work. Please let me know if you try this way.
  • Boil some milk and let it cool. Take this milk in a bowl. Take some nannari sarbath, soaked badam pisin, reduced milk in small bowls separately. Take out the ice cream and keep aside.
  • In a glass tumbler, take 1-2 tbsp of soaked badam pisin or kadal paasi. Add 1.5 tbsp of Nannari sarbath. Add 2 tbsp of plain milk. Above this add 2 tbsp of reduced milk. Beat them well using a spoon. Lastly add a scoop of ice cream and mix well. Now the glass would be 3/4 th filled. Top with another scoop of ice cream if desired and serve chilled.

Note

  • Never replace badam pisin with china grass/Agar agar. Taste would vary. Also never skip ice cream because you won’t get the original jigarthanda taste. 
  • Adding food color to the ice cream and caramelized sugar to the reduced milk is purely my idea. Authentic recipe may not use this.
  • You can adjust the quantity of nannari sarbath and badam pisin as per your liking. If you want to make this drink even more cool and healthy, add some soaked sabja seeds.
