Aloo Dum Biryani Recipe – Baby Potato Biryani – Small Potato Biryani Recipe

In my veg biryani series, I had already shared a Chettinad style baby potato biryani in pressure cooker. But this baby potato Dum biryani is a completely different version. I tried this recipe after watching this video. Usually aloo Dum biryani is prepared by shallow or deep frying sliced potatoes, marinated in curd+ spices mixture, made into a gravy and then layered with parboiled basmati rice.

 When I was browsing for various small potato biryani recipes, I was scared to see the tedious process because I had very less time in hand to prepare our Sunday lunch. But convincingly, I got this recipe. Feedback from readers made me try this recipe without any second thoughts. I loved the idea and simplicity of this recipe.

Yes, This baby potato biryani is a much simplified version when compared with the traditional ones. This recipe involves no marination, no frying and taste wise there is no compromise at all. It tasted great just like Hyderabadi Veg Dum biryani. We all loved it & relished with onion raita. 

You can try this biryani for any special occasions like birthdays, wedding anniversary to treat your family. Kids would love this biryani for sure as it has their most favorite vegetable – Potato. You can try this biryani in a pressure cooker using regular potato as well. Aloo Dum Biryani Recipe - Baby Potato Biryani Recipe How to make Aloo Dum Biryani using baby potato - An Easy version !

INGREDIENTS
1 cup - 250ml
  • Basmati rice - 1 cup ( I used India Gate Classic)
  • Water - 6 cups
  • Cooking oil - Few drops (optional)
  • Cinnamon - 1 inch piece
  • Cloves - 2 nos
  • Cardamom -1 no
  • Salt - As needed
To make gravy
  • Ghee + Cooking oil - 4 tbsp
  • Cinnamon - 1 inch piece
  • Cloves - 2 nos
  • Cardamom - 1 no
  • Bay leaf - 1 no
  • Black stone flower - 2 pieces (Kalpasi)
  • Turmeric powder – 1/4 tsp
  • Baby potato - 12 to 15 nos
  • Big onion - 1 no ( Thinly sliced)
  • Green chilli – 1 to 2 no ( Slit)
  • Ginger,Garlic Paste - 1 tsp
  • Fresh Curd/Yogurt - 1/2 cup (Do not use too sour curd)
  • Red chilli powder – 3/4 to 1 tsp
  • Garam masala powder – 1 tsp
  • Mint leaves - fistful
  • Salt - As needed
For layering
  • Potato gravy
  • Cooked basmati rice
  • Saffron soaked milk - 1/4 cup
  • Coriander leaves - 2 - 3 tbsp ( Finely chopped)
METHOD

  • Wash and soak basmati rice for 15 minutes. In the mean time,wash and peel the baby potato or normal potato, cut into big slices or cubes if using big potatoes. Keep them in a bowl of water to avoid discoloration.

  • Boil 6 cups of water in a bowl. Add the soaked basmati rice, whole garam masala and required salt for rice. Let it roll boil in high flame till its 80% cooked. While the rice is boiling, you can make the gravy part. Remove the rice to a plate using a colander and drain the excess water. Spread the rice in a plate. Add a tsp of oil and fluff with fork if needed. Set aside.
  • Heat oil + ghee in a wide kadai. Saute the whole garam masala ( Cinnamon, cloves, cardamom, bay leaf and black stone flower) for a minute. Add the turmeric powder, sliced onion, green chilli. Saute for a minute. Add baby potato, ginger-garlic paste and required salt. Saute till raw smell of gg paste goes off. Take care it splutters everywhere.

  • Cover the kadai with a lid tightly and cook for 10 minutes in very low flame.Stir it once or twice in the middle. In this 10 minutes, onions would be caramelized and potato will be cooked soft. Onion should not be burnt or charred. It will spoil the flavor of biryani. So please be careful till this step.

  • Now add curd/yogurt, red chilli powder and garam masala powder. Mix well. Mixture will become watery.So boil for 2 to 3 minutes in medium flame till it becomes semi gravy with little moisture in it. You can cover & cook if needed. By this time, potato would have cooked soft. You can check it by breaking the potato with a spoon.

  • Then spread the potato mixture in the kadai. If needed add 2 to 3 tbsp water to it. Layer the cooked basmati rice evenly over the potato gravy, chopped coriander leaves and sprinkle saffron soaked milk. Cover with a lid tightly and keep the flame very low. Put in DUM for 10 minutes. Make sure you don’t burn the gravy.

  • Open the lid after putting DUM and fluff the rice gently with a fork. I had mixed the rice very well as Sendhil doesn’t like to see white rice anywhere in Dum biryani. Serve hot with raita and chips !

Note
  • Adjust the quantity of chillies and chilli powder as per your taste.
  • Original recipe called for 3/4 cup basmati rice. But I used 1 cup. So I had increased the quantity of curd.Do not use sour curd.
  • If using too sour curd, add 1/4 cup and adjust the quantity of chilli powder accordingly.

Mavinakayi Chitranna Recipe – Raw Mango Rice Recipe Karnataka Style

Ugadi festival is around the corner. This year for Ugadi, I am sharing a Karnataka special delicacy Mavinakayi Chitranna recipe. Its nothing but raw mango rice recipe ( Mangai sadam) prepared in  Karnataka style. I learnt this recipe from my School moms friend Archana. 

When I was asking her about Ugadi special recipes of Karnataka other than holige/Obbattu, she told me that they make Mavinakayi chitranna , Mavinakayi chutney, kosambari, obbattu saaru and some palya for the festival. As I had already shared Holige recipe and easy obbattu saaru recipe,I wanted to try Kosambari and mango chitranna this year. 

Actually our friend Tara told me another recipe for Mavinakayi chitranna adding onion and roasted methi seeds powder. I will post that version later. I found many variations for this particular recipe on net. As I am sharing a festival recipe, I wanted to make a simple no onion, no garlic green mango rice and I followed my friend's recipe blindly :) So here you go, Ugadi special Karnataka style mango rice recipe – Mavinakayi chitranna with step by step photos and a video !

INGREDIENTS
1 cup - 250ml
  • Cooked rice – 2 cups ( Raw rice or steamed rice – 1/2 cup)
  • Grated raw mango – 1/2 to 3/4 cup ( Based on sourness of mango)
  • Grated coconut - 1 tbsp
  • Turmeric powder - 1/4 tsp
  • Salt - as needed
To temper
  • Cooking oil - 2 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1 tsp
  • Chana dal - 1.5 tsp
  • Raw Peanut - 1 tbsp
  • Green chillies - 3 nos ( Slit)
  • Curry leaves - Few
  • Coriander leaves - 1.5 tbsp
METHOD

  • Wash and pressure cook 1/2 cup of rice ( you can use raw rice or steamed rice) adding 1.25 cups of water and few drops of cooking oil. I used steamed rice/ Boiled rice. I used 1:3 ratio of rice and water. After the rice is cooked, spread it in a plate and add a tsp of oil around. Let it cool down. Measure 1.5 cups of cooked rice and keep aside.

  • Wash and grated a medium sized raw mango. Taste it to check its sourness. After grating measure 3/4th cup of it and set aside. Pls refer the pic above. Adjust the quantity of  raw mango based on its tanginess.

  • Heat oil in a kadai.Splutter mustard seeds.Add urad dal, chana dal and peanuts. Roast till peanuts are done and dal turns golden brown in color. Roast it in medium flame. Now add the slit green chillies, curry leaves and half of the chopped coriander leaves. Saute for a minute.

  • Now add the required salt and turmeric powder.Mix well. Some people add raw mango,saute for a minute and then add the rice. But I added the cooked rice first and tossed well for a minute then added the raw mango as the sourness of my mango was less. My friend also told me to do the same. You can saute the raw mango before adding the rice if its too sour. It can be done in either ways.

  • Lastly add the grated mango and mix well for a minute. Check for taste. If the taste is too sour, add some more cooked rice, some red chilli powder or slit green chillies to balance the sour taste. You can add more rice or grated mango based on your taste. Mix well and cook for a minute.Switch off the flame and garnish with coriander leaves and grated coconut. Serve hot or warm as u wish.

Note
  • For variations, you can make the raw mango paste without coconut seperately, refrigerate it for a week and then mix with cooked rice whenever needed.For this, add the grated raw mango after the tempering is done. Allow it to cook for a minute and switch off the flame. Let it cool down and then store in a box. Use clean spoon to handle.
  • Adjust the quantity of green chillies based on the sourness of mango.
  • I have used steamed rice ( Puzhungal arisi). Generally raw rice is used. You can add basmati rice as well.
  • The quantity of rice may vary based on the sourness of raw mango. My mango was not too sour.
  • It is optional to peel the skin of mango. As we are grating the mango, it is not necessary to peel the skin.
  • Some recipes call for grinding mango, coconut, green chillies and add to cooked rice. You can try this method for variation.
  • Do not avoid coriander leaves. It lends a nice flavor to the rice. Add half of the coriander leave while tempering and the remaining to garnish.

Vegetable Palav Recipe – Karnataka Style Veg Pulao - Rice Bath Recipe

Here is a fool proof, Karnataka special Vegetable pulao recipe (vegetable palav) with step by step pictures and video. This mixed vegetable pulao is a must and should recipe in all the weddings, lunch buffet and parties in Bangalore, Karnataka. In hotels, its called as rice bath or veg palav in the menu. In our school moms group, we used to conduct kitty party once in a month in one of our houses. Mostly it would be a lunch party. I still remember Tara’s kitty party lunch menu. I had this pulao for the first time in her house and after that in few hotels, marriage functions and birthday parties. My friends call this as “Palav” in Kannada. I am a big fan of this Karnataka style pulao especially for its wonderful flavor. I don’t mind eating one full plate of it. 

I got this recipe from Tara and made it for our Sunday Lunch last week. It came out very well with the awesome masala flavor which is the highlight of this pulao. Tara makes it super spicy and very tasty. The whole pot gets emptied in few minutes. Thanks a lot Tara for teaching me this wonderful, authentic Karnataka veg pulao recipe to me. Now I am confident enough to try this rice variety for my guest and parties. This pulao looks mild green in color. 

In some hotels here, they serve a red colored pulao adding red chilli powder. INGREDIENTS
1 cup - 250ml
  • Sona masoori / Raw rice - 1 cup ( Use good quality ones)
  • Water - 2 cups ( to soak rice)
  • Mixed vegetables - 1/2 cup ( 1 Carrot, 5 beans, 1 potato, fistful peas)
  • Cooking oil - 3 tbsp
  • Bay leaf - 1 no
  • Black stone flower - 2 nos
  • Marathi moggu - 1 no
  • Star anise - 1 no
  • Cinnamon - 1 inch piece
  • Cloves - 2 nos
  • Big onion -1 no ( sliced)
  • Tomato - 1 small ( chopped finely)
  • Dhania powder - 1 tsp
  • Crushed kasoori methi - 1 tsp (optional)
  • Salt - as needed
To grind
  • Grated coconut - 1/4 cup
  • Green chillies - 6 nos ( use 8 for more spicy taste, 4 for less spice)
  • Mint leaves - a handful
  • Big onion - 1/2 no
  • Cinnamon - 2 inch piece
  • Cloves - 3 nos
  • Cardamom - 2 nos
  • Ginger - 1.5 inch piece
  • Garlic cloves - 8 nos
  • Water - as needed ( to grind to paste)
HOW TO MAKE KARNATAKA VEG PULAO - METHOD

  • Wash and soak 1 cup of rice in 2 cups of water for 15 to 30 minutes. Wash and chop the vegetables into small cubes.

  • Grind the ingredients given under “ To grind” to a smooth paste by adding required water. Set aside.

  • Heat oil in a pressure cooker base and add the whole garam masala. Saute until aromatic and then add sliced onions. Saute till transparent. Now add the tomato pieces and saute till mushy.

  • Add the ground masala paste. Mix well for a minute. Now add chopped vegetables, mix well for a minute. Then add the soaked rice along with water. Add dhania powder, crushed kasoori methi(optional) and required salt in the water. Mix well. Take some water and check for taste. Add more salt if required and slit green chilli for spicy taste.

  • Pressure cook in very low flame for two whistles. Open the lid after the steam is released completely. Fluff the rice gently with a fork. Remove in a plate and serve hot with onion raita ! This rice looks slightly mushy when hot. But rice grains become fluffy and separate as it cools down.

  • If you are making it for parties or functions, make this pulao one hour in advance and let it be in the cooker to stay warm. If it cools down, sprinkle very little water and reheat it for few minutes before serving. Tastes and smells yum !

Note
  • My friend Tara adds 8 to 10 chillies for the mentioned quantity. But I used 6 as my chillies were spicy. Adjust the quantity based on your taste. You can even add slit chillies in the water if you feel spiciness is less.
  • If you want, you can use red chilli powder or red chillies instead of green chillies while grinding the masala.
  • Addition of dhania powder and kasoori methi gives a nice flavor to pulao. Kasooi methi is not added usually in Karnataka style pulao, but I followed my friend's suggestion :)
  • Good quality raw rice is used for Karnataka style pulao. You can replace with basmati rice of you wish. In that case, use 1:1.5 cups of rice and water ratio based on the rice you have.
  • For variations, you can use coriander leaves instead of mint leaves but flavor may vary.

I am a big big fan of  South Indian tomato rice (Thakkali sadam in Tamil). So I keep trying varieties of tomato rice recipes. Earlier I had posted my version of thakkali sadam in which the spicy tomato paste is mixed with cooked rice. Then I shared my friend Shalini’s tomato rice recipe using electric rice cooker

Today I have shared about how to make tomato rice directly in a pressure cooker. I learnt this recipe from my Thangam Athai ( My dad’s sister). Its a very simple, quick and easy to make rice variety that is ideal for lunch box preparation. 

Bachelors and working women would love this recipe. This tomato rice recipe is prepared with very less whole garam masala ingredients and had a slight spicy taste.So it has become our family favorite.I loved it very much and had the same for my lunch & dinner as well. Simple onion raita and a papad or vadagam would be the best side dish for this tomato rice.

INGREDIENTS
1 cup - 250ml
  • Steamed rice / Boiled rice - 1 cup
  • Ripe tomato - 4 nos ( Big)
  • Big onion - 2 nos
  • Green chilli - 1 no ( Long one, Finely chopped, use 3 slit chillies for spicy rice)
  • Turmeric powder – 1/8 tsp
  • Red chilli powder - 1 tsp ( add 1.5 tsp for spicy rice)
  • Cooking oil - 3 tbsp
  • Cinnamon - 2 inch piece
  • Cloves - 2 nos
  • Garlic cloves - 5 nos
  • Curry leaves - few
  • Coriander leaves - a fistful ( finely chopped)
  • Salt – as needed
  • Water – 2 cups
HOW TO MAKE TOMATO RICE IN COOKER - METHOD

  • Wash and chop the onion, tomato, green chilli, garlic cloves, curry leaves and coriander leaves very finely. Wash and soak the rice adding 2 cups of water for 30 minutes. ( If using basmati rice, add 1.75 cups of water)

  • Heat oil in a pressure cooker base, add cinnamon and cloves. Add finely chopped garlic cloves and saute for a second. Then add the chopped onion and sauté till transparent. Add finely chopped green chilli and curry leaves. Saute for few seconds.

  • Add finely chopped tomato pieces and the required salt for rice. Saute until tomato turns pulpy and mushy. Add turmeric powder, red chilli powder and mix well for few seconds. Lastly add the soaked rice along with water. Mix well and check for taste. Add more salt & red chilli powder based on it. Pressure cook in very low flame for one whistle. It takes 8 to 10 minutes. Remove the lid after the steam is released.

  • Mix the cooked rice with a fork. Garnish with finely chopped coriander leaves, mix well and serve hot with raita & papad.

Note
  • Add more chilli powder if you want spicy tomato rice.
  • Adding coriander leaves gives a nice flavor to this rice. So do not skip it
  • You can also add mint leaves along with curry leaves if you like the flavor of mint leaves.
  • I have used steamed rice/ puzhungal arisi. You can use basmati rice or raw rice. But soak the rice in water for minimum 30 minutes to get fluffy, soft and grainy rice.

Andhra Pulihora Recipe – How To Make Chintapandu Pulihora Pulusu

Andhra Pulihora also known as Chintapandu Pulihora in Telugu is a must try recipe during festival time. As Varalakshmi Vratham is fast approaching, I thought of sharing some Andhra style neivedyam recipes for this festival. This morning, I was asking my friend Megha about Varalakshmi Vratham special recipes as her MIL belongs to Andhra. She suggested recipes like Boorelu, appalu, Garelu and Pulihora. As our family is a big fan of tamarind rice, I started with this recipe. The ingredients and preparation of Andhra Pulihora is completely different from our Tamil nadu style Puliodharai. Its a very simple recipe without any grinding job. In the traditional temple style pulihora recipe, they add sesame seeds powder or mustard powder. But I made the basic version as told by Megha and watched Attammaa TV YouTube video recipe too for more reference. This Puliogare paste i.e. Pulihora Pulusu can be quickly made in minutes if you have readymade tamarind paste in hand. Its an ideal choice for quick lunch box recipe. Raksha loved it a lot and asked me for second serving as well. But this pulihora needs a standing time of minimum 2 hours for all its flavors to blend well. So friends do prepare this rice at least two hours before serving to relish its actual taste and flavor. Muslim Khichdi Recipe – Dal Khichdi

I got this recipe from Captain TV cookery show. It was demonstrated by a Muslim lady, Mrs. Humayun ( Sorry I don’t remember her name exactly) and she told its one of the traditional breakfast recipes of Tamil Muslims. This is an entirely different version from our usual dal kichdi recipes served in hotels. Its cooking procedure and ingredients are more like biryani. So I got impressed with the recipe and thought of trying out this authentic version. I made it for our Sunday lunch along with curd rice and fruit custard. It was mildly spiced and tasted yummy with nice flavor of moong dal and masala .I served this khichdi with Mint leaves chutney/Pudina chutney as suggested by her. Sendhil & Raksha loved it and told me prepare this for their lunch box too . Its a very easy, quick, one pot meal ideal for breakfast and lunch box. Try this once. INGREDIENTS
1 cup - 240ml
  • Basmati rice - 1 cup
  • Moong dal - 1/4 cup
  • Mixed vegetables - 1/2 cup (1 carrot, 1 potato, a handful of green peas)
  • Water - 1.5 cups
  • Salt - as needed
To saute
  • Cooking oil - 3 tbsp
  • Cinnamon, cloves, cardamom - 2 each
  • Big onion - 1 no
  • G&G paste - 2 tsp
  • Green chillies - 2 nos ( use 4 nos for more spicy)
  • Tomato - 2 nos ( small)
  • Mint + coriander leaves - a handful
  • Turmeric powder - 1/4 tsp
  • Ghee - 2 tsp
METHOD

  • Wash and soak basmati rice for 30 minutes. Wash and soak the dal in another bowl separately. In the mean time, chop the onion, tomato, mixed vegetables.

  • Heat oil in a pressure cooker base and saute cinnamon, cloves and cardamom. Now add the sliced big onion,g&g paste slitted green chilli and saute until onion turns transparent and raw smell goes off.

  • Now add the chopped tomato pieces, mint + coriander leaves, turmeric powder, salt. Saute till tomato turns pulpy. Drain the excess water from the soaked dal and add the dal to the cooker. Saute for a minute. Add the chopped vegetables and mix well.

  • Add 1.5 cups of water and check for taste after the water starts to boil Add more salt or put some slit green chillies if you want to add more salt or make it more spicy.Mix well and add the soaked, drained rice. Mix well and pressure cook in low flame for one whistle. Remove the lid after the steam is released. Fluff the rice with a fork.

  • Serve hot with Mint chutney and onion raita .Enjoy !
For Mint chutney
Take a handful of mint leaves + coriander leaves in a mixie jar. Add 3 tbsp of grated coconut, 2 green chillies, 1/2 tsp of cumin seeds, salt , a pinch of turmeric powder and a small piece of tamarind. Grind everything to a smooth paste. Serve it with khichdi.

Note

  • Add 3-4 green chillies for spicy taste.
  • Do not forget to use mint+coriander leaves as it gives a nice flavor. Add Mint leaves at least.
